What have you eaten today? (Low carb forum)

@Antje77 thanks for the Sinterklaas update, sounds a hoot but sorry about the other less funny events. I’ve never heard of dipping mussels either - are they hot or cold? Branson and mayo is exactly the sort of thing my granddaughter would like, I must tell her ( if she hasn’t already tried it)
Haven’t finished eating today but posting early in case I forget.
2x black coffee this morning
Aqua class then lunch of a small steak with a fried egg. Warm KC raspberry crumble and clotted cream.
Round no 1 daughter’s this evening for t/a pizza ( it’s her bd). I’ll take a KC base and toppings. Hopefully a glass of something cold and fizzy will be on offer.
 
Breakfast small kefir and then bacon and egg
Lunchtime a few berries and yoghurt then a few squares of 90% chocolate
Dinner hm chilli con carne with LC garlic bread and glass of red wine followed by LC brownie and decaffeinated coffee.
@DJC3 hope your no1 daughters pizza celebration evening goes well.
@ianpspurs no kebabs yesterday evening had two small red wines and wonderful company and catch up. Limited food options on offer in our very small town - fish and chips and Indian - but also I now never feel hungry after my dinner thankfully. Six years of not eating after about 6pm means I just don't want food until morning - thankfully even if had a drink.
 
Happy birthday @DJC3's daughter. No dipping of mussels @Antje77 but do dip the (LC) bread in the cooking liquor/ marinières?
Water (bloods at 9.10 - actually back home by then) and tea until 10.00 then CWC and a babybel to take tablets
Lunch was Red Fox cheese in a KC MS roll with salad leaves then 3 squares of Nero Absolute choc
Evening meal was 4 sausages (gluten free, Old Winchester), sauteed kale then KC Kristmas pudding with cream and water. I’m not sure there’s much nutritional value there (defo not enough cals) - without Cronometer I'd be none the wiser. Slightly conflicted about eating sausages they are easy as they are the same for me as everyone else but too high sodium in all types imho

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: cheese and mushroom omelette.

Breakfast was my 'current' normal breakfast, 2 back bacon rashers, 2 xl fried eggs, and a slice of sourdough toast loaded with butter.

Had a G&T mid afternoon.

Ate a handful of walnuts and pecans while preparing dinner of Spaghetti Bolognese, no spaghetti for me though. When it was time to eat, I just didn't feel like it, so I skipped dinner.

2 squares of 90% Lindt chocolate.

Still trying experiments with sourdough bread to reduce the carbs, the last one was made with 450g strong white flour, using 150g wholemeal rye starter - this is my 'control'. So far my BG has risen within the high end of a 'safe' BG reading after eating a slice, but I don't want to push my luck. The sourdough I've started today, will be proved overnight in the fridge, and baked first thing in the morning, is made using the same recipe but with 130g of linseed, sunflower and pumpkin seeds added. The seeds have previously soaked up 170g of water. I'll do the carb maths later, but first this loaf has to be seen as successful. One way or another I'm determined to get the carbs down for a slice of sourdough toast. ;)
 
No reason not to dip mussels in a sauce although I've never heard of it being done. If you enjoy them that way, why not?

So no dipping sauces for mussels in the UK and Germany, yes dipping sauces in the Netherlands and Flanders.
It's funny, my German friend and I were equally surprised about our respective mussel habits, neither of us had ever thought of doing it the other way. :)

@DJC3 , hot mussels. I cooked/steamed them in a little white wine with some veggies and stuff for some 5 minutes, transferred the mussels to a different pot after cooking and we ate right away.
Thanks for your kind words about the other events. I now have some stronger painkillers and a phone appointment with the rheumatologist tomorrow.
Car is still very much confused, but at least I found a trick to make the dashboard and the turn indicators (is that even a word?) work again: Just turn on the ceiling light, it makes everything work as normal! :hilarious: I'll have to tape a piece of cardboard over the ceiling light tomorrow for driving in the dark.

Today was runner beans with butter and salt, and a beef sausage. Dutch sausages are different from yours, there are hardly any higher carb sausages available, fillers are just not a thing. This one has 1.6 grams per 100.
I still had those leftover dipping sauces from sunday, and my meal could use some extra calories after my cold swim in the dark. So why not use them with the sausage, after all, you use sauces on burgers or at a barbecue as well.

Of course I plated way too much sauce, so now I have 5 dogs (3 of them sleepover dogs) with very strong garlic breath! :hilarious:

Evening @Antje77. Good to see you haven't lost your sense of humour. Your Sinterklass traditions look enormous fun. Thank goodness your beautifully made surprise survived the journey in one piece.

Can confirm it isn't customary here in London to dip mussels although their accompaniments are sometimes served with a sauce for dipping. I like to steam ours briefly for a seafood salad and we often add a dollop of home-made aioli to the salad.

In some parts of England, it's traditional to poach mussels in cider or perry with minced leeks or spring onions using both the white and some of the green leaf. In restaurants these days, mussels are often served as an appetiser either with butter and garlic or in a white wine cream sauce, but I suspect that owes more to French cuisine than an English tradition.

Today:

B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Salmon fillets baked with broccoli, cauliflower, mushrooms, double cream and lemon verbena.
Steamed French beans and mangetout smothered with butter.
Water to drink.
Skipped pud.

D: Seafood salad made with crab and brown shrimps, Romano peppers, celery, baby plum tomatoes, Kalamata olives, mint and salad onions, with a dollop of home-made aioli for dipping, topped with toasted almonds.
Water to swallow tablets.
 
Sorry you're suffering, @Antje77, hope the PKs help & that you get some much needed sleep. Great you enjoyed a wonderful evening with your friend & that her humour matches yours a treat. As for mussels, for me, it's the bread that's dipped, not the mussels. Mind you, I make gorgonzola mussels & they often come out with a nice blob on them. Branston mayo sounds good, will try it, as I have a jar of small cut in the fridge.

My meal today was a bacony chaffle with some cold leftover roast beef on the side.

Just be careful with portion size, Branston is very high carb. But it also has a very strong flavour so you only need very little to get the effect. :)

I cook the mussels as marinière then add & stir through chopped up gorgonzola & some cream. For less lumpy, heat the cheese & cream up separately. It is delish! Actually, you could do it that way for your dipping sauce.

Thanks for that, @Antje77, I'm a fan of Branston & do have it as a treat once in a while, just a teaspoon, that's why I have the small cut. I'm going to try your sauce tonight on a planned hm lc cheeseburger. :)
 
Breakfast - tofu fry, coconut chutney, chia seeds soaked in water with salt and lime, 2 egg whtie omelet with spinach leaves.
Lunch - brocoli-spinach soup, cauli fry, greens fry, tofu fry, chutney.
Snack - 30grams mixed nuts. Almond milk cofee.
Dinner - Greens fry, tofu, chutney, chia seeds, salad, 40grams peanuts&cashews.

Late today. Been a bit busy and tiring. It was leg bandaging day and I had a difficult day yesterday so was in a fairly bad way during the night and when I got up, so was thinking I wouldn't manage. Found it quite difficult to wake up properly as well, but decided that I'd better go. That gave me a late start and I just about got myself ready with no time to spare so for breakfast I grabbed a couple of RyVita with some soft cheese spread on them (I forgot to get butter out of the back porch fridge and if I'd done it then it would have been too hard to spread). I actually managed fairly well while I was out and even managed to hobble into the butcher's shop to pick up some low carb sausages. Suffered for that for the rest of the day.

2nd meal is more tagine with the last of the roast lamb from Monday - it's on the hob right now so there's not much chance for a slip up now.
 
Kefir with my supplements before heading out
Lunch cheese omelette with kimchi and sauerkraut followed by a spoon of berries and yoghurt
Mid pm two squares of 90% chocolate
Dinner hm chicken casserole with low carb pasta and glass of dry white wine followed by LC crumble

CWC with s/f caramel with Ceylon cinnamon and Fattbar cookie - almond and vanilla
KC MS roll, 2 hard boiled XL f/r eggs, Adonis 3C bar, tea
Sashimi tuna which had been frozen so defrosted overnight and cooked in tomato polpa, then NLCK orzo added and plopped on a bed of salad leaves. KC mincemeatesque traybake and cream, water and a double whisky for my cold.

D: Seafood salad made with king prawns and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, Halkidiki olives, lemon verbena and salad onions, with a dollop of home-made aioli for dipping, topped with roasted macadamia nuts..
Water to swallow tablet.

Mid morning glass of goat milk kefir then brunch out: Eggs Benedict with the toasted muffin on the side. I did cut a small bit to mop up the plate at the end.
Mid aft couple of squares Montezuma’s.
D- chicken salad with h/m aioli . It was supposed to be roast pheasant, another gift from gundog owning neighbour. He usually gives them to us fresh, Paul then plucks and joints them. These however were plucked and had been hung. Goodness knows how long for - they ponged to high heaven and I didn’t fancy it at all. Paul was in macho mood so I roasted one covered in streaky bacon for him. It didn’t smell horrible cooked and I tried a forkful of his, it was nice. There’s another in the freezer, maybe I’ll be brave enough next time. IMG_1702580726.863282.jpg
