What have you eaten today? (Low carb forum)

I've had prettier meals but this one was tasty and easy, and it meant postponing getting groceries for another day so I'm not complaining. :)

Leftover runner beans and peas from yesterday with just a hint of blue cheese after adding the rest of the peas from the can, reheated in the microwave.
Pork belly strip cut into pieces and fried in the oven. Somehow I never get it right in the frying pan but oven always works.

Breakfast kefir then fried some garden tomatoes in olive oil and served on low carb toast with an egg
Lunch smoked trout salad with spinach, one garden tomato, a few olives and walnuts plus a sprinkle of seeds and dressing of Apple cider vinegar with olive oil

Dinner home made chicken curry served with fresh coriander also a gin and soda water. Pudding yoghurt and a few garden berries

I had a beef madras this evening. It was from Iceland; I didn't make it, and if I did I wouldn't have put a four chilli rating on it! Covid has visited me this week, so I haven't felt much like cooking. However I did add my own mushrooms, and had it with fried cauliflower rice.

No wonder you didn't feel like cooking this week. I don't suppose you felt much like eating either, but you've managed to improve the nutritional value of your ready meal with vitamins and minerals which will support your immune system plus some vegetable fibre.

I hope you start to feel better soon.

I'm feeling better tonight, thanks @LivingLightly. It's just a cold, really - I had one last Covid test, so I took it, and that's how I know.

I really wouldn't recommend my frozen curry. I admit I was swayed a bit by the packaging, only to be let down by the stuff inside.

Never mind, onwards and upwards. I'll be cooking tomorrow. Hopefully it'll be better than today's effort.

Regardless, it looks like a gastronomic winner.

Never tire of scallops. Often enjoy them with my breakfast eggs on Saturdays when I there's a little more time for preparation.

Quite possibly avocado, that’s a good guess and would definitely have steered me towards this dish. I love scallops too and these were perfectly cooked.
 
Breakfast was h/m yoghurt with raspberries and seeds. I prefer ‘Greek style’ strained yoghurt and this batch was strained overnight in the fridge so it was almost the texture of cream cheese, gorgeous.
L- l/c egg mayo and lettuce roll followed by choc chia pud with raspberries.
D- chicken wings and a beef skinny rib strip air fried with h/m coleslaw. 1 glass red wine. IMG_1724532811.505140.jpg
 
Cashews.

Free tip: Decant your cashews into a bowl so eating more is at least a conscious decision.
Don't eat them directly from the bag while watching youtube videos or most of your expensive pack of cashews will be gone before catching yourself if you're anything like me.

Still, they tasted amazing!
 
Brunch - scrambled cheesey eggs with 2 slices slc bread toasted and lathered with butter. Mug of earl grey tea

Dinner - (saturday night take-away) donner kebab meat and side salad. Kefir with chia seeds & flaxseeds mixed through topped with mixed berries. Large glass of pepsi max :happy:

Yes @DJC3. We're nutty about pistachios too. I often add pecan halves or macadamia nuts to salads for extra crunch and count out our ration one at a time to ensure we don't overdo it, otherwise the entire contents of a bag would literally disappear overnight!
 
're nuts I find that walnuts are the easiest for me not to over eat - they are not as sweet as other nuts I feel - so they are one nut that I tend to not over eat and able to control my portion. Salted nuts of any variety are definitely the ones I struggle with most once the packet is open!

Lunch like yesterday's - smoked trout salad plus a local Apple - just the peel.
Dinner slow cooked beef with a few organic carrots and glass of red wine followed by low carb brownie and decaffeinated coffee.
 
I don’t normally post my food on a Sunday as we regularly eat at my ILs for Sunday tea. We always have a cold meat, cheese and salad buffet, I have just one Jaffa cake! (8g carbs) while everyone else tucked into cake and ice cream. This week I took a pic of said Jaffa cake! :joyful:

Not a fan of Jaffa cakes I'm afraid @Rachox, but that cold buffet sounds tasty, not to mention diabetic friendly.
