What have you eaten today? (Low carb forum)

Breakfast kefir then three eggs scrambled in butter kept me full for day as out and about.
Dinner when back - slow cooked venison meat balls in hm pasata with some LC pasta ( soaked all day then drained and added to slow cooker for last hour) and served with grated cheese.

Whole meal can be done in the same load, and the consistency of the eggs is just about right.

Ooh the air fryer cheesy egg soufflé thing sounds, and looks good. Could you share the recipe please?
 
Today I had croque monsieur using 90 mug bread recipe for breakfast.
Lunch was a tuna muffin with various salady things including my favourite fermented red cabbage and a dollop of new sauerkraut ( I added apple peel and fennel seeds to the ferment which worked really well)
Dinner was braised shin of beef with roast veg followed by a ginger DGF cookie.

Quite a lot of tea with lactofree milk drunk over the day.
 
Sorry @IanBish I love to see pics of people’s food and give them a ‘like’, but I just can’t bring myself to like your latest pic, I can’t stand olives! :depressed:


Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: bacon melts with broccoli, cauliflower and carrots.

I've never had soya beans, but they look nice. I'll look out for a tin of them. Do they come in tins?
I got these from Tesco - they're frozen and take about 6 minutes to cook straight from the freezer.

I like green olives, but I prefer black. I'll be making a prawn and Basa Madras tomorrow, and I'll have it later on in the week. If I can present it a bit differently I'll post a picture.

Today for dinner I'll be stripping the meat from the carcus of the chicken that I cooked yesterday, to go into a bought chicken Madras (because there's never enough in them). I won't bore you with yet another picture of a curry, but here's a picture of part of my lunch: sardines in extra virgin olive oil, with rosemary and chilli olives. The other part was Greek yoghurt.

Are those whopping green olives Sicilian Nocellara cultivars? @IanBish
 
I like green olives, but I prefer black. I'll be making a prawn and Basa Madras tomorrow, and I'll have it later on in the week. If I can present it a bit differently I'll post a picture.
I slightly prefer black olives @IanBish, especially the Kalamata varieties, but it depends what they're served with. All are diabetic friendly and it's fun to ring the changes!
 
B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Blue cheese stir-fry using pointed cabbage, Blue Stilton, chestnut mushrooms, leeks, thyme, double cream, white wine vinegar, sprinkled with chopped, flat-leaf parsley.
Steamed French beans and carrot batons.
Water to drink.

D: Seafood salad made with crab, brown shrimps, lettuce, apple peel, celery, baby plum tomatoes and mustard cress with a dollop of home-made aioli for dipping, topped with parsley and toasted almonds.
Water to wash down tablets.
 
Well, what a surprise - I found myself in the local hospital restaurant today while doing my carer role. I hadn't had time to pack a proper lunch, so I had to rummage through the carb-fest that was on offer and finally plumped for a cheddar cheese 'n pickle on white bread as it was the lowest carb food available at 31g.

Needless to say my level shot to the highest I'd seen it since I'd started my new diet: it was an interesting experiment to definitely not one i'd repeat!

Hospital food is shocking, I think you did really well to get away with a spike that was still less than double figures.
