What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: creamy garlic prawns with sliced sautéed courgettes.

As I now buy Panda Pantry low carb flour, I'm a regular subscriber but for clarity have no affiliation to them, and use their recipes and mixes as they work for me ( sometimes make small changes like additional spices but generally stick to panda recipes or mixes). So I use their same sweetener blend of erythritol and stevia if not using their cake mix.
You can also buy this mix of sweeteners from other places. I've always found low carb baking a challenge as it's a bit like chemistry getting it all right in right amounts. Re carbs and sweeteners the carbs in sugar alcohols are not digestible so shouldn't affect your blood sugars - they don't mine.
Panda Pantry also do some small sample cake mixes where you could try how the flour and sweeteners worked for you - like this one which I add extra coffee and cinnamon to:

Thank you for your reply and explanation. It was very helpful. As I follow a vegan (lower carb) diet it is even more challenging. I have both these sugars but not combined. I made a wee recipe today for 4 brownies which turned out fine and not overly sweet. I mainly use almond flour and coconut flour. My egg sub is apple cider vinegar whisked into almond milk. Thanks
 
Hi when you bake your cakes what type of low carb sugars do you use and is it like for like. Most of the low carb sugars I have look quite high when reading the back of pack. Thanks.

I usually uses recipes that use almond flour and then an erythritol monkfruit blend for the sweetener
 
Coffee and unsweetened almond milk x 2
Cheese and mushroom Omelette
Smoked salmon x2

An unplanned 21hr fast meant that I didn’t eat until 3pm by which time I was ravenous, very grumpy and had a headache. Quickest thing I could think of was L/c roll filled with cheese and marmite. This was followed at a more leisurely pace by Greek yoghurt and blueberries.
Dinner was an airfried pork chop topped with a piece of Stilton, a mushroom and tenderstem broccoli. DGF blondie to follow.

How did you cook the mushroom?

Not so lucky here. Apparently Aldi has altered their recipe for fish fillet á la Bordelaise. Not only did it taste horrible, it also did this to my BG, even though I injected what I thought was too much. :(

Oh what a horrible shock about your Aldi fish dish. It’s one of your regular dinners isn’t it?
Re the mushroom - dotted with butter and put in the airfryer for the last few minutes with the chop.

It was. Diabetes friendly ready meal for no cooking days.
Not anymore.
Thankfully I know about Welsh rarebit now, which will likely take its place. Made that yesterday, but neighbour needed the food more so I spontaneously handed my meal over. :hilarious:

You can take Welsh rarebit up a notch by adding a poached or fried egg on top. This turns it into a ‘buck rarebit’ which is lso very good.
 
Breakfast kefir then a few spoons of natural yoghurt with mixed seeds.
Lunch two egg cheese crusted omelette with beetroot kimchi

Followed by slice of hm LC Christmas cake
Dinner chicken breast stuffed with cheese and wrapped with bacon served with mushrooms and green beans. Followed by portion of hm LC coffee, cinnamon and walnut cake.
 
Today for lunch I had a white tuna crunch baguette, with a pint of Thieving Rogue ale. I haven't had a baguette in quite a while, and not while wearing a CGM, but I was surprised how high it sent my blood sugar today, although it came back down to baseline within about two hours.

And for tea I had a few nests of egg tagliatelle, with a home made bolognese sauce.

Breakfast today was fried eggs topped with cheese just before the end so it melted. Turmeric and ginger sauerkraut.
Lunch- my favourite deli frittata with salad.
Dinner chuck steak cooked in bone broth in slow cooker with a few veg and herbs. Steamed cauliflower. DGF blondie.

I'll have one again, but not often. My Libre expires in a few days, and I've ordered a couple of Lingos to try out.
