What have you eaten today? (Low carb forum)

Fruit for breakfast, homemade butternut squash for lunch with mixed seeds added and roast chicken and veg for tea. The veg include one potato and two small parsnips as I am just starting to shop for low carb. Still 7.3 before breakfast but 5.2 before dinner. I'm going to test 1.5 and 2 hours after dinner to see what level I get. Is there a page or website with low carb recopies anyone can recoomend?
I'd be wary of the fruit for breakfast. Fruit usually has quite a lot of carbs and sugar, and many of us find the mornings worst for dealing with carbs. Do you test before and after breakfast?
Greek yoghurt, with added nuts or some berries if you like, or bacon and eggs are a good alternative for breakfast if you find the fruits spike you.

Forgot to take a picture but dinner was thick slices of celeriac baked in the oven with cheese on top for the last ten minutes, and air fried pork belly strips, eaten with my new tenant who seems to like my meals. :)
 
For lunch today I had a ham and boiled egg wholemeal sandwich. And for dinner I had a battered haddock fillet with mushy peas. I put on 2 lbs over Christmas, so no chocolate again, just a few Brazil nuts.

I've put on 7 ..mind u the Christmas period for me has last over 3 weeks :bag:
 
Breakfast kefir then bacon and poached egg
Lunch cheese, celery and LC seeded crackers followed by a piece of my LC chocolate brownie tray bake made with Panda Flour this morning. Most now cut into portions and stashed safely in the freezer!

Followed by a few pieces of Montezuma chocolate 100% with Almonds.
 
Usual brunch. Extra helping of nuts following vigorous physio session that left me hungry. Dinner was preceded by half an inch of single malt, just being tidy and finishing the bottle, then lamb chop with sprouts, cauliflower and broccoli spears. Followed by 4 squares of Montezuma's.

Still away. Dinner tonight was at an Indian restaurant. I had lamb bhuna, mushroom bhaji with a quarter of a peshwari naan. My meals this week are based on having holidayed here before and I know what I can tolerate :) Blood sugar 5.1 at start of meal, 5.3 two hours after.

That looks gorgeous, @Rachox. I'm glad to see that your beta cells coped. I love a peshwari naan (well, I normally have half).

I agree with @shelley262 DietDoctor is a great resource, 8 years in and I still look at it most weeks for recipe ideas. I’ve also used their weekly meal plans when I feel I’m going off track at times.
I have the Freshwell app too - it’s free and has a lot of useful info and food ideas.
 
Breakfast was a couple of spoonfuls of cold leftover cottage pie!
Lunch was Welsh rarebit on L/c toast with a l/c brownie to follow.
Dinner was gammon, egg and celeriac chips. 4 sq Montezuma’s with almond afterwards.

Lunch leftover frittata picnic taken on a walk to see some local snowdrops. A few squares of 100% cocoa chocolate with slivers of almonds.

Dinner mixed game and Mediterranean vegetables slow cooked casserole served with cauliflower cheese. The slow cooker is such a great cooking method especially when heading out and about on a cold day.
Followed by hm LC chocolate brownie.
 
Black coffee x3 this morning.
Lunch was avocado, prawns, lettuce and lime mayo followed by a L/c brownie
Dinner- pheasant and mushroom pie with pie crust made from Panda suet pastry which tasted great ( but looked a tad untidy). The 2 non low carbers who ate it said they really liked it too. Sauteed sprouts with it and a DGF Crimbo crumble to follow

Still away! Bella Italia tonight, a lesson in how to eat low carb(ish) in a pizza and pasta restaurant! I ordered three starters, gave away some bread and a couple of the crispy halloumi sticks.
So my choices were, halloumi sticks, mushrooms al forno and prawns baked in garlic and chilli.

Looks great, it’s good to see it’s still possible to eat well in a pizza/pasta place. I often think the starters are the nicest bit.

Lunch cheese, celery and slice of buttered hm LC bread followed by a few pieces of 100% chocolate with Almonds
Dinner chicken breast with mushrooms in a cream sauce served with cauliflower croquettes. Experimented today with making cauliflower croquettes, and they were tastier, I thought, compared to the potato ones that my blood sugars can't cope with. I cooked about a quarter of a cauliflower until soft enough to mash. Mashed with butter, seasonings and a dash of mustard, sprinkle of strong grated cheese, a glug of cream and two teaspoons of the new panda golden low carb flour. Left to cool then shaped into four croquettes.
1768496755476.jpg Just cooked in some olive oil - I used my ninja fudi for 20 mins on roast setting turning at 10 mins. Delicious I thought and my blood sugars approved too. I'm sure they would fry if you prefer to cook on hob

Followed by hm LC lemon drizzle cake.
 
The cauli croquettes sound great @shelley262 will definitely need to try them.
Today I had egg on L/c toast for breakfast.
Lunch was inspired by @Antje77 ‘s post in here a few days ago - thick slices of celeriac baked ( in airfryer on bake setting) topped with cheese for the last few mins. It was just as delicious as I hoped it might be. Thanks Antje77! Choc chia pud to follow.
Dinner was a mixed grill: bacon, lambs liver, Waitrose 1 chipolatas and sprouts. Maybe some Montezuma with my cuppa now.
