What have you eaten today? (Low carb forum)

L was an antipasti plate of salami, parma ham and other cold meats (with olives in brine) in local indie cafe. Very nice ineed.

D will be homemade chicken thigh korma.

An utterly miserable wet, cold, blustery day, scattered with sneaky lttle bursts of sun and blue sky - just enough to lure you out for a quick dog scamper, only for the black clouds to roll over and the heavens open again.

Ive done that a couple of times today - just when I’ve gone past the 10 min dash home point the heavens opened.
 
Hi all - loved my Pilates today but generally needed to spend too long at PC working! Mind you weather vile so no temptation to go out there for a walk!
No breakfast as Pilates day - prefer not to eat before - just coffee and cream
Lunch omlette with ham and mushrooms
Mid pm - when bored! Handful of walnuts and Brazil nuts
Dinner lamb steak, swede parmentier ( swede chunks par boiled and fried in ghee, delicious would recommend - and swede only about 35p from Aldi and loads now in freezer for future meals!) and mushroom sauce with glass of claret followed by scoop of oppo vanilla and chocolate ice cream with extra cream.
 
Breakfast - protein peanut & chocolate bar and a cuppa
Lunch - just a handful of walnuts to snack at my desk was the plan. Then my darling husband sat at his desk with soup and a crusty baguette that was still warm and the smell was amazing so I had one small slice (it weighed 22g - I checked on the post scales :)) of baguette with butter on. I know a mouthful seems hardly worth the bother but I actually really enjoyed it and went back happily to the nuts
Dinner - it’s late and I can’t be bothered with much effort so a salad of lettuce, spinach, red pepper, tiny amount of beetroot with chicken, a large chunk of cheese and some mayo
 
Breakfast - soya milk cappuccino
Mid morning - homemade low carb berry cake
Lunch - homemade leek, celeriac & swede soup, 2 x Quorn ‘bacon’ slices, 1 slice Hi lo toast
Dinner - 1/2 avocado, 1 can sardines in olive oil, 5 sugar snap peas, 1 dsp garlic mayo, 1 tbsp toasted sesame seeds, 1/2 bag baby salad leaves. Followed by unsweetened soya yogurt with 1 tbsp chia seeds & 15g toasted flaked almonds
1220 cals, 46g carbs, 22g fibre

Hello all

Rotten day here weather wise. Had to venture out three times and it was super windy and poured it down on all occasions!!

Breakfast - Hi-lo toast and butter
Lunch - Bresaola, applewood cheese, cherry tomatoes, cucumber, slingsby gin olives (!). Strawberries and thick cream.
Dinner - Celeriac soup, slice of hi lo with butter.
Snacks - 70% Lindt

Thinking of making the yummy Nigella chocolate cake tomorrow:greedy:
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.

Lunch: two fried eggs on salmon with hollandaise sauce followed by orange chia pudding and raspberries.

Mid afternoon: LC carrot cake and black coffee.

Dinner: mushroom and cheddar omelette with cauliflower and broccoli salad followed by SF jelly, cream and LC chocolate granola.
 
today, in the land of the @maglil55 , I think the weather was like everywhere else. This morning, on my way to my conference, I turned on my heel at the front door to go back to my room for my hat. Thankfully, by the time I went for a stroll at lunchtime, the rainmaker had largely stoppe, leaving just a bracing wind.

Today's menu was largely focused on fish.

Breakers was coffee with cream. Lunch was a couple of portions of poached salmon, beautifully cooked, as the remainder of the menu was neither LC nor GF. Dinner was a mahoooosive portion of GF Bouillabaisse. It was lovely.

The conference content was very good, and I learned a lot. The following drinks reception and viewing of some current research work in progress was superb. I had a go at a couple of pieces of interactive "stuff". I made a model of myself, I watched my tongue on ultrasound, during speech, and learned how to make stuff from recycledantics.

More workshops tomorrow .

Tomorrow evening, I will go on the big tall thing with twirly chairs,...... probably!

Today, lazy day at home. Finished reading Origin by Dan Brown. Book was okay, definitely captivating, but can't help feeling it followed the same pattern as his other books.

@ianpspurs -- Hope I'm not too nosy, but was wrong with the lemon drizzle cake with double cream? Sounds delicious, actually.
@shelley262 -- The swede parmentier sounds wonderful, definitely have to remember this.

Breakfast: Two double decaffeinated espresso with cream and erythritol.

Lunch: Low-carb flatbread with philly cheese steak and creme fraiche. Chocolate ganache with 95% chocolate, whipping cream and erythritol (tbh not enamored with it, but will finish it anyway, glad I only prepared a small portion.)

Dinner: (Husband occupied the kitchen, so had to deviate from my originial plan), so had some leftover soup, 100g of Northsea shrimp directly from the carton, a chunk of gouda cheese, a spoonful of chocolate ganache and a glass of red wine.

Blood sugars hardly moved at all today -- stayed between 4.8 and 5.1 the whole day.

Just stodge and fat - worked for bg but not pleasant.
 
Ooh I love gin in most forms. Pink gin has a couple if drops of angostura bitters in hasn’t it? I’ve made it when I worked in a bar as a student, but never tasted it.
I’ve discovered Elemental Raspberry gin recently though -it’s a small Cornish distillery ( Elemental gin) and they made the raspberry version for one of the founder’s dad who is a diabetic and missed sloe gin ( but couldn’t drink it because of the sugar) it is wonderful! I bought a bottle for me and a bottle for a friend for a Christmas present, but I fear both bottles will be gone by mid December!

No mention of angostura on the bottle. Raspberries, strawberries so a bit fruity. And pink Love it!
Hubby is not keen, and I have no plans to convert him

Ah yours sounds similar to mine then, the resurgence of gin is good news for the likes of us.
I think a traditional Pink Gin is made with dry gin plus a drop of angostura. It’s a very old fashioned drink - don’t think anybody drinks it now.
Prefer our new ones.
 
Evening all, just a quick post tonight as granddaughters are staying tonight while their mum and dad drive to Wales to collect their new rescue Great Dane puppy! All very excited to meet him ( except maybe Melody the Dane they already own - no idea how they are all going to fit in their cosy little cottage but they will be happy.
B: DD breakfast sandwich
L: Wasn’t going to bother but came accross Jalapeno pork crunch in a garage I stopped at, so succumbed to a pack.
D: leftover pork stroganoff and celeriac mash. SF jelly & cream.

@Goonergal I got the individual almond butter today, thanks for the tip off. I also bought a new jumper(Think I need help!) but it was from a charity shop: £3 - so I actually spent more on the almond butter!
 
Evening

Breakfast - Hi-lo toast and butter

Dinner - Roast chicken in lemon, garlic and thyme, sprouts, green beans, carrots, cauliflower cheese and home made gravy (the latter a practice run for Christmas), Nigella's chocolate cake and more cream!!
Snacks - Two small pieces of Montezuma's lime and sea salt chocolate (very, very nice)

How did you make the gravy? Ive been thinking about how to do this for Christmas too. I was wondering whether just whisking a bit of xanthan gum into the turkey juices would work.
