What have you eaten today? (Low carb forum)

Yes I think that’s a great idea - I’d decided to do similar myself with the next batch - it was so messy trying to dip them.
Thanks for the flatbread recipe it sounds delicious- I’m going to have to hunt down that lupin flour, I’ve seen you use it quite often. I’ve never seen chia seed flour though, but I expect a quick Amazon search will reveal it.

As to the flatbread -- you can also use almond flour exclusively. The reason, I also use lupin bean flour is because of the carbs (lupin bean flour has only 2.5g of usuable carbs compared to 7g for almond flour) and because of the price (it is about a third of the price of almond flour).

I have silicon molds I picked up in Lakeland in one of the many sales. Must admit I was thinking the same thing to coat in 2 or 3 moves. I loved bounty bars.
The other thing I thought might work was to use a long wooden skewer and freeze them a bit with the skewer in then dip them. You can always wire rack them too and pour the chocolate over with a tray underneath to catch the excess - that's another 2 step method.
I still don't feel up to baking but hopefully I'll get over this soon. Hubby has now gone down with the sickness bug which has afflicted No 2 - I am trying to disinfect the house with a chesty cold! I feel surrounded by lurgy.

After much debate with Hubby going mad wanting to know what to get me for Christmas , I told him to get me the grinding mill for the Kenwood so I can grind my own seeds, nuts etc to make flour. I'd considered using a coffee grinder but the Kenwood is loads quicker especially the beast I have.
He insisted on getting me another addition so I went for the food processor. I have a Magimix I've had for donkeys years but the Kenwood attachment has more blades and options.
Think I need to reorganise though and get a Kenwood cupboard. Like the IP , the Kenwood lives on the worktop but I need an accessible home for the attachments.
 
Breakfast. Bacon Eggs Sausage

Dinner: Fried Chicken (tallow) topped w melted butter - garlic.
Broccoli & Carrots steamed.

I had 70% dark chocolate square which I tolerate. But this time I had 2 squares to compare the 60% one to the 70%

Blood Sugar next morning was 84 rather than previous 74.
 
A happily less fraught start to the day than usual for you.
I really like the Truro HC branch, it’s quite small but the staff are so friendly. One of the staff made me laugh saying her mum comes in every day and scoffs the free samples ‘every day! It’s so embarrassing!’
Hope your dad enjoys the gin, the chap in there recommended serving with a twist of orange, which I think sounds good.

Went to a branch in Covent Garden that has a cafe attached this morning - only way to get the tea. Asked for 20 sachets and they discounted from 75p each to 50p making them the same price as the discontinued boxes. Then she threw in an extra one for free.

The free samples are never the lower carb stuff otherwise I’d probably be the same!

Good tip on the gin.

Lidl sell ground chia seeds. Maybe that would work in the same way that ground almonds do the same as almond flour?

I think you will probably need an extension soon to house all the gadgets!
I do hope you’ve all recovered by Christmas, have you got much more to do or can you stay in and cosset yourself for a couple of days?

I didn’t realise lupin flour was so good carb- wise. I must admit I use ground almonds in place of almond flour - its much cheaper and the only difference seems to be that its slightly coarser ground

I have some at home - thought it might help to thicken hot chocolate made with almond milk but haven’t got round to trying it yet.

The extension is already there!
Fortunately I ended up with a bigger than intended kitchen due to my architect favouring open plan but it still needs a re-jig.
I've done an online shop for Saturday but there are still odds and sods I'll need on Christmas Eve but I'll nip up to Markies either very early or very late.

Found it on Amazon. It wasn't there the first time I checked when I spotted it in ziggy_w posts. Not cheap , but there again what is for our low carb cupboard. I see they have the lupin beans as well so I may compare against grinding them myself.
 
Hi all hope good day had by all. mum has been a bit low and under the weather so a bit challenging for me today. Pilates though this morning was lovely and the instructor gave us a bit of a Christmas pressie with a longer relaxation session at end - much needed.
Been trying to sort out freezer to make space ready for tomorrow’s next planned baking fest. I also tried home made cauliflower rice today chopping fresh cauli and have open frozen quantities of it - will be interested to see how it deals with freezing - it certainly works from fresh. I’ve bought it frozen in pouches from ocado to date!
No breakfast as Pilates mid morning
Lunch one lc cheese scone and veggie soup
Dinner HM cauliflower rice with chilli and glass of red wine later will have coffee and advent calendar Chocky.
 
Evening all. Ive had a full on day looking after granddaughters so haven’t done any more food prep for Christmas.

B: Buck rarebit ( cheese on toast with a poached egg on top) made with 90 sec bread. Coffee and cream

No lunch but I did have a coconut bite and a HC advent choc at some point.

D: DD bacon wrapped loin of pork with roast garlic cauliflower mash. I didn’t really like this - too rich I think and too white. The cauli mash and the creamy garlicky sauce were too similar. The girls liked it though, I did extra roast new spuds for them and Mr C.

Have a glass of red waiting but I promised the girls we’d go for a walk in the dark to see all the lights on people’s houses, also so the 6yo could lead the way in her jumper with a light up snowman nose.
 
@Rachox @shelley262 I’m thinking of trying the herby crackers - there is always cheese and biscuits on offer on Christmas Day so would be nice to have some crackers rather than just eating cheese.

Don’t have psyllium husk, which I note you used in place of some of the ground almonds @shelley262 would you just go with the full amount of ground almonds or would using some ground flaxseed instead of psyllium husk work?
I used just ground almonds and they were really nice
 
After yesterday’s Cheese Fest, i didn’t need breakfast. :D

Lunch was chicken liver pate. With a spoon. A teaspoon.
D: another oomi noodle and baked salmon, with wasabi and cream.

Feel that I am now well over Maltesergate. So now anticipating the next ...gate. Whatever Xmassy gate it will be. :D
