What have you eaten today? (Low carb forum)

Very quick note as off up to York’s in a bit with mum
Smoked salmon and scrambled eggs
Smoked salmon nibbles and cheese
Sliver of hotel Chocolat Yule log
Steak, mushroom sauce, roast veg - asparagus,onion, pepper and tomato a small taste of The dauphinois potatoes followed by lc lemon and lime mousse.
Will be very hectic next few days so may be off grid a bit will catch up when I can. I’m doing the catering for mums 88th party tomorrow in her local club plus family gathering at hers earlier in the day.

Nothing so far, but early days ;)

What I can remember from yesterday:
Homemade boozy carrot cake with double cream. Before you ask, yes. I started with desert!

Tiny pastry cases with tomatoes / courgette / mozzarella for the first starter
Ribs for 2nd starter
Ribeye steak in a rich creamy sauce. Roasted cauliflower, broccoli + flaked almonds.
Salmon, veggies, plus rice of course! And more pastry thingys
Too much gin and tonic. Then tea.

Well, it was hubby’s birthday and we had 15 guests...
I’ll be good henceforth:D

Hope the roads are kind to you and the party goes well. MIL is 89 on 12th night and from the conversation around the dining table yesterday plans are being made for celebrating her 90th by hiring a house in Scotland. :banghead::banghead:

@Brunneria I’m glad you and Mr B are feeling a bit better, and well done on the weight loss.

Christmas day went ok foodwise - traditional fare without the parmesan coated parsnips and roasties but plenty of everything else. Lc trifle to follow.

Yesterday had smoked salmon and scrambled egg mid morning
Evening buffet with a few more people was cold meat, salad, nuts and olives to nibble on then cheese and a few of the herby crackers. I had some low carb trifle too at one point and far too much booze.
Good fun.
 
@DCUKMod oh yes. My mom is 91, and hubby’s mom lived to 93, so now hubby knows just what he’ll be looking at in 20+ yrs. Elegant bones R Not Me...some women keep their hair. Some not at all. Sigh.
@shelley262 you are one busy bee! Happy Birthday to mum!
@ianpspurs from here the view of Scotland is very attractive! One of hubby’s huge family left her home in Scotland to celebrate her 90th birthday with about 75+ of her closest family members onCape Cod (Massachusetts)! To be fair, that’s where we all go of a summer :D She chose to have a barn dance, and danced a whole set!
 
My appetite must be returning!
Just seen a cheffy tv recipe for bay oil and smoked paprika on belly pork. Looked stunning!
- just take a few fresh bayleaves, take out the veins, and mash the leaf flesh up in a pestle and mortar with smoked paprika and olive oil. Then rub all over belly pork slab, including the scored skin, and roast fast, then slow.

Of course Jamie Oliver then added optional carbs. He has really bought into the sweet potato fad, hasn’t he?

And now he is doing whole roast celeriac on a bed of mushrooms.

Definitely time to switch channels. Haha!
 
Breakfast and Dockey : Tea
Lunch: Dog walk then Goose skin; 2 cold piglets in hand towels from Christmas day; slice and crumbs pieces of turkey; just nibbled cold meats and drank tea
Afternoon: Tea some slices of cooked chicken
Evening meal: Kind of Christmas biryani; Goose, mushroom, sprout and chestnut balti with celeriac rice which had been lurking in a freezer since liberating from reduced to clear on a trip to W … and partners

Back after the Christmas festivities, hope that you are all well (or getting there @Brunneria )

Breakfast: Hi lo toast and butter
Lunch: Avocado, bacon, poached egg, oven roasted tomatoes and sourdough with lots more butter. Regular Mocha.
Dinner : Turkey (!), chorizo slices, cucumber, tomatoes, olives, sour cream dip. Lc chocolate brownie with strawberries and double cream.
Snacks: Two squares of 70% Lindt - now tastes so creamy it's ridiculous! Lc plum gin.

Not stuck to the low carbing religiously over past two days, but certainly no big blow outs. Had a Baileys in pub after long walk yesterday, plus some roast potatoes and a couple of honey, whisky parsnips on Christmas day. A few crisps have slipped through and ten oven chips yesterday. It doesn't look too bad written down. No-one knows my diagnosis apart from husband and sister and as desserts were low carb too entire meal passed without comment! Just shows you if you provide tasty alternatives no one notices, or feels deprived ;)
 
Late breakfast as I wasn't hungry. Ginger tea, low carb muffin toasted, black coffee.
Snoozed through lunchtime.
Afternoon: creamy coffee with low carb lemon almond shortbread.

I could get to like these, and maybe adapt with ginger flavour for a change.

Dinner: ham and egg salad, creamy mayo, mineral water. Was going to hit the cheeseboard, but had enough for today.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: cold left over roast lamb, cauliflower, brocolli and coleslaw followed by LC chocolate peanut square with cream.
Mid afternoon: CCB and black coffee.
Dinner: extra strong cheddar with LC herb crackers, cucumber, 2 x cherry tomatoes, celery and pork scratchings followed by Oppo Sicilian lemon cheesecake with cream.
 
Hi all what a day!
Crazy journey so so busy and consequently a very long journey and then when arrived here eventually mid afternoon found that mums boiler was bust!! Not much of a welcome back! Hoping that someone comes out in am - meanwhile had to procure extra electric heaters for her to keep her warm. She suffers from feeling cold anyway so a real nightmare. I was pleased I treated her at Xmas to a heat pad snuggly cushion and a new electric blanket - vital bits of equipment today!
No breakfast - too busy sorting out way too many things with family before left mid morning.
No lunch as a wildly busy service station break - hard to get parked and massive queue for loo so just stuck with small coffee - wanted to get back in M1 queues / carpark!
Mid pm grabbed some smoked salmon I’d brought up with me to finish
Dinner planned cold turkey salad which we had but mum desperately needed something hot so got some hot chips to go with and I got tempted for first time in about 18months and ate a couple of them with two glasses of much needed wine. Followed by lc lemon mousse and lots of hot coffee.
Early night planned to stay warm - plus very early online delivery due in am with all the party food and stocking up her freezer and cupboards. Plus hoping we get an early morning engineer visit if lucky and then hoping they will be able to fix the problem! Eldest son not brill just now and really need to get back sat am which is the plan but would be difficult if boiler not sorted unless my brother can help out!
Bgs highish May be the chips or may be the stress!

Celeriac rice? Now there’s a thought. I suppose just grating it or blitzing in a food processor would give the desired rice like grains- then what? Stir fry or microwave - how did your packet suggest?
