What have you eaten today? (Low carb forum)

@ianpspurs in general I don’t mind LC but the chaos of the last couple of days and running round have made me realise some it’s restrictions long term. It’s not convenient unless I’m happy to eat chunks of cheese or slices of meat. Didn’t eat yesterday other than a slice of cake :angelic: and today I’ve only had time for a handful of nuts and 2 babybel. For the first time I wish I could grab a sandwich or stick some toast in. Quick on the go food. I love food, always have and am ok with recipes and cooking in general. But feeling fed up after just the last couple of days of going without because it’s easier than trying to work out what I can eat. You seem to have not enjoyed this WOE for a long while now and whilst I have no answers I hope really you find one!
I totally empathise with you. I find the same and maybe for similar reasons. Not sure.

Somebody asked me how I managed to drop my HbA1c so quickly after 6 weeks on lower carb higher fat and the answer is that I slugged it out by cutting out the major offending stuff which isn’t easy in itself and through hard work. I must emphasise that I did not find it easy, even though some seem to advise as if it is a walk in the park.

Having said that it is getting easier.
 
B: sunday morning out with friend. Spotted new item on menu - breakfast omelette, bacon, black pud, mushroom, sausage, and optional cheese. I opted out of the gluten, and had the rest. Best omelette ever. Ate at 10am, full til 6pm.

L: not needed.

D: 7pm, chicken feta olive pesto, a la DD.
 
@ianpspurs I feel for you. I know your last HBA1c disappointed you are you testing before/after meals cos it sometimes seems to me that you are not eating very much. The other thing that puzzles me is you are a “real food, good quality food” type of guy which should help, you are not trying to get away from junk. This way of life is not a walk in the park but all we can do is try. I really hope you start enjoying your food again. Hope Julie is getting on ok, thats not easy for you either. Best wishes as always.
Thanks for the thoughts. This thread can't be derailed by me but rude not to reply. I tend to weigh most days and if I saw weight drop I would feel I wasn't eating enough. Biggest issues seem to arise with meals we could both eat - making them low carb just detracts hugely from the taste - painting with the best colours missing.
Anyhow, you have enough to occupy you with your son. Hope the hopeful news earlier means good news long term. Take care.
 
A day slightly off piste or feral as @ianpspurs (sending hugs and positive vibes your way) would put it, as I met up with an old friend for Sunday lunch. Mr B didn't join us, so I did indulge in dessert, which is very rare these days. My choice did get my cogs whirring though, as it occurred to me it would be very easy to make a LC version. Poached Yorkshire rhubarb, buckwheat crumble, bee pollen, vanilla cream. You could easily make an almond / flax version of the crumble and use an alternative sweetener for the rest.

Anyway, today looked like this food wise:

Breakfast: Vanilla chia pudding with LC Nutella
Lunch: For me delicious Derbyshire roast beef, a couple of small roasties, Yorkshire pud, greens, swede and carrot and a tiny amount of bone marrow gravy. Pudding was the rhubarb concoction. Mr B had brie, salami, olives, avocado, salad. He also had a cheeky Nutella and cream cheese mousse that I whipped up for him.
Dinner: Babybel and a square of choc for me. Bolognese with courgetti and Parmesan, followed by a square of Green & Blacks Roasted Almond choc. Decaf coffee for both of us.

I might not check in tomorrow, as it's the Eye Hospital with Mr B again. It's always a long and stressful day. Injections in both eyes again.....4 weeks comes around too fast! :(

Lunch yesterday: Ham and egg salad, dollop of sauerkraut mixed in the salad.
Dinner: Seafood marinara, and a portion of reheated pasta spirals mixed in.
Breakfast: Cheese and mushroom omelette, bacon and tomato.

I see you mention drinks also, here's what I have.

Two mugs heartstarter black coffee, no sugar / sweeteners, before breakfast.
Two mugs normal strength black coffee, no sugar / sweeteners during and after breakfast.
4 or 5 x 600 ml bottles of water spread through the day.
One cold Goldie sitting in the fridge by itself so I put it out of it's misery.
 
Nasty looking cold grey day, didn't want to get up
XBX16 this morning.
breakfast: mixed granola, with milk, and 2 strawberries, tea.
Seems Mum felt the same about the day, she was still asleep when I got there.
Had coffee and chat with Dad for twenty mins, then went and helped her get up. Although she seems to be recovering well, its obvious she is still in a lot of pain and rehabilitation is going to be slow. Physio later this week.
lunch: ham, avocado,mozzerella and tomato salad, coleslaw, few radish. Berries and evaporated milk

Cleaned a few more windows, this time it decided to snow! So moved on to kitchen cupboards and drawers. Plan is to have all done before Mr Slim arrives back. He will be having company after today, one of our sons has gone out to join him. The oldest son is still laid up in bed very slowly recovering from pneumonia.
Dinner made LC cauliflower cheese, didn't quite work, sauce separated a little, but tasty. Served with leeks amd peas.
Then 3 pieces of chocolate, calculated as 14g and have enough left in daily allowance. ( 100g)
Trouble is, didn't stop there. No Mr Slim to share with so ate far too much chocolate. :greedy: Stupid of me and after first few squares wasn't even enjoying it.
Suddenly worried about BG levels, tested 7.5 this is after dinner and chocolate
hour later 8.3
just now, another hour later 5.6
so its safe to have a cup of tea.

@zauberflote have discovered why the tapestry was abandoned, somewhere along the way got two very similar shades of green mixed up. Would be impossible to unpick and redo, in fact have been working on it for about eight weeks now and only just noticed. Going to rely on other people not spotting it.

Yes, it's not pleasant at all for him, but when the alternative is losing your sight, it becomes more bearable than you might think. This will be the 9th lot of injections since July last year. Ironically it is the diagnostic tests and consultation beforehand that he finds most difficult due to his anxiety. He's always fearful he will be given bad news. Generally our experience of his treatment has been good, but he had a shockingly bad run in with an awful Doctor last year which was traumatic to say the least.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: gammon slow cooked in Diet orange Fanta, one small roast potato, mixed veg and gravy thickened with flax, followed by SF jelly, cream and LC chocolate granola.
Mid afternoon: mint Carb Killa bar and black coffee.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake :)
 
@ianpspurs @Emma_369 I get that too at times, being so young into the LCHF journey it gets frustrating sometimes and I worry about what I'll eat when I head to work or when I plan to see friends but gotta soldier on don't we? I really hope things work out and that you find some peace you two.

Today though...

Breakfast: Coffee with cream
Lunch: Bacon and eggs with some tomatoes
Dinner: Roast chicken thigh with salad and full fat mayo

Now I realise just how boring my diet is but meh! Enjoying it!
 
Breakfast : Generous helping of omelet and bacon with a mug of tea (sweetner not sugar)

Lunch : Large jacket potato with tuna mayonnaise and small green side salad. Generous bowl of Greek yoghurt, fresh double cream and forest fruit berries. Cup of tea.

Dinner : No dinner. Snacked on a clementine, home made keto ice cream and some (50grams) of peanuts . Mug of tea.

I will probably snack on some cheese and an apple later on.

Sounds amazing. Have you worked out how many carbs are in that jacket spud, clementine and apple? Sadly they are completely out of my low-carb range.

Thanks. No. I don’t count strictly. But have a rough idea. I strive for lower carbs as opposed to keto. If it came to it I would drop down the carbs though as necessary. Daft not to.

No apple btw just cheese.

The problem is that this thread is in the low carb forum and people are often recommended or directed to look here for low carb or even keto meals. Newbies might get confused when they see jacket potatoes or clementines (or apples) being listed as low carb.

Ah I see. Mine is low carb, just not as low as some.

Low carb is a bit of an ambiguous term.

I suppose I need to be posting in the Lower Carb Forum.

I imagine if my carbs are totted up for the day they would be around 100...

When my GP asked me how I reduced my HbA1c figures I told him lower carb higher fat. He seemed to understand that being a LCHF protagonist.
 
@maglil55 what frustrations!! I hope tomorrow will be calmer for you. We don’t get the bike packs here, and any driver who behaved like Mrs Angry was behind you would get the snail treatment. You were already going snail’s pace, so you were admirable, and she sort of got what was coming to her...
Hi @TIM MARSTON ! Man, that dessert sounds scrumptious! It would send my personal BGs to the moon and beyond, though. I will dream of the smell only omitting the cardamom and doubling the cinnamon ;) Possibly triple it lol!
@ianpspurs I have not been at this lc thing long enough to get where you are. I enjoy my food period, but it actually seems that when I make the mire complicated dishes they are not as satisfying as the simple “single ingredient at a time” foods that taste so good. I think we have wildly different tastes in food, which may or may not work to one if us’s advantage over the long term. I am voting with you - it’s definitely the pollen. Allergist says so. Allergies make you logey and slow. I’d happily “cheese and nut” my life away as @Emma_369 found unsatisfying. I love easy food! I am learning to skip lunch but every day I am waiting for the other shoe to drop on that issue. And good heavens don’t feel GUILTY!! If I (didn’t) ate as much as you (don’t) eat, I’d be chewing on my nice leather shoes for sustenance!
@BibaBee ugh I knew that hospital trip had to come around really soon. I am sorry it has to happen at all, but continue to hope that healing for the eyes will happen! Your rhubarb pic looks like an Easter basket! I loooooove rhubarb and hardly ever fix it because you have to grow it yourself around here; never in a store.
@SlimLizzy we’ll bring my mom to see the tapestry. She is blue/green colorblind all her life, didn’t find out til she was 85! So she’ll appreciate the heck out of it at any color. She used to do crewel before she was a weaver/spinner.
@Caeseji rake a look at my foods if you think yours are boring. I don’t even need a sandwich or a salad - just give me the pieces and I will enjoy them one at a time! I admit, weird, but my (adopted....) sensory-issue kid certainly inherited it straight from me lol.
Meals post later. It’s embarrassing...
 
Sounds amazing. Have you worked out how many carbs are in a portion? Just the oats and raisins put that well out of my carb range.
Snap. It would put my BGs through the roof. Oatmeal (much as I love oats) is one of my definite no-no.
