What have you eaten today? (Low carb forum)

So are you actually diabetic? I ask because most of us can't eat those kinds of carbs without ramifications and because you have 'other' under your user name where other members have their type of diabetes.

I am just very concerned that newly diagnosed people might look at this thread seeking low carb or keto meal ideas, see your posts and assume that your food choices - jacket potatoes, milk, fruit and your Christmas treats - are suitable for their condition which, of course, they aren't.
I did have myself down as “Parent” but was asked to change it. I was also asked to change “Prediabetic” so that leaves me very little in the way of meaningful options. “Other” or “don’t have diabetes” isn’t really the right solution either.
 
So, returning to the topic of the thread, which is the low carb foods we eat, I will pre-emptively post what I am going to eat today. May not have time later.

B: Was hoping for some crackling after Mr B's Morrison's run, but apparently it was too early for the cooked stuff (hey, I don't mind crackling for brekkie, but other people have some odd ideas). So he brought back a slab of raw pigskin for 60p. It must be about 12 inches square. :D So I had some goatsmilk yog instead.

L: will be prawns in spiced mayo. Spice choice to be decided as I stand in front of the spice rack.

D: DietDoc feta, olive, pesto, cream chicken. I wish it had an easier name to type.

My very first pork scratching were made from Morrisons pig skin. My only comment would be some of it didn't have my fat to render, but it worked fine. It didn't last long though. Hot crackling is sublime.
 
Today I had my currently regular breakfast of a cheese and hard boiled egg salad. At lunchtime I was a bit hungry, so had some deep fried pork rinds. Erm,... quite a lot of pork rinds.

This evening, we have just eaten. My choice tonight was a stir fried veg dish with chicken. It included so delicious basil, whichever I'm rather hooked on at the moment.

I doubt I've eaten enough today, but it has been incredibly hot, and my hunger tends to fade when it's warm like this. We're forecast a cooler 33c for tomorrow.

Breakfast:

How about 3 rashers of bacon (not streaky) , 2 slices of Edam cheese and one fresh tomato and a tad of French mustard, washed down with 200ml of full fat milk?
Lunch if you can call it that: Handful of walnuts, Greek yoghourt and fruits of the forest and six squares of 80% chocolate and a cup of tea.

Dinner will be: Breast of chicken oven baked with lemon and pepper on a bed of broccoli rice. Followed by keto pancakes and a squirt of lemon juice for me.

You have virtually summed up one of my wife’s favourite foods. Chicheron and also crackling from a whole roast pig.
 
Walk n water is good for pretty much everything I reckon!
Just out of interest what did your roast dinner consist of? Just wondering about hidden carbs in gravy, cheese sauce, root veg etc. Sometimes it can take a while for bg to rise in response to a meal.

It was One Meal A Day - so thought I’d get away with it.

Chicken Leg, bistro gravy, swede/carrot mash, peas, Iceland mash potatoe, sweet corn.

Guess the last two

(And I wud have gotten away with it - if it weren’t for you meddling kids (Scooby doo))

@BibaBee hope eye hospital went well today for your OH.
No breakfast just coffee and cream - early start and out much day
Lunch gammon and egg (at beefeater) and later two squares 95% chocolate
Dinner chicken, cheese and mushroom omelette with green salad and four lc seeded crispbreads followed by sf lemon jelly with yoghurt.
Even earlier start tomorrow heading to York’s for a few days - will post if can. Expecting to need to battle with consequences of storm Gareth on public transport!
 
Breakfast; Mid morning and lunch; Tea and cocoa; Afternoon - 2.30 to 3.00 ish grazed on smoked cheddar; cold lamb shoulder, cold veggies from yesterday 1/8th fennel. 3 cherry toms 1.5 portobello mushrooms (Julie’s leftovers) then 5 walnut 1/2s -; lots of tea Evening meal 17.35: Large mackerel, h/b egg and avocado salad with lots of chia seeds - obvious this meal always fills and pleases me so rinse and repeat as often as possible.

Hi could also be the carrot and the gravy! I’m okay with swede but not carrot and def not with potatoe and corn or peas. It’s individual though re pulses etc best to try one veg at a time and work out what causes your rise! Potatoes though are a no no for most of us especially mash. Think a few can get away with one roastie cooked in fat! I just replace with cauliflower or celeriac mash and or roast celeriac etc. Good luck
 
Hi all. Insatiably hungry again today. Running with it for now as just a couple of days, but will need to keep an eye on it.

Lunch was smoked salmon and M&S whipped creamy cheese followed by a bag of their pork crackling.

Dinner - a triumph. Have been having slow cooker sagas. First one I bought was a bit big: only 3.5L but cooked my short ribs way too fast. Ordered a smaller one - 1.5L - which had to go straight back as it was tiny. This weekend found a 2.5L one. Perfect. Set timer before leaving for work and arrived home to the most deliciously tender lamb shoulder shank which had nicely absorbed the flavours of rosemary and garlic and produced a thick jus.

Still hungry so have since consumed an assortment of goodies in various combinations - chocolate almond butter squares, cream, almond butter and left over cheese scones from yesterday.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: Chinese style pork with cauliflower and broccoli salad followed by Greek yoghurt and raspberries.
Mid afternoon: raspberry phd bar and black coffee.
Dinner: ginger, coriander and lime chicken with roasted Mediterranean veggies followed by SF jelly, cream and LC chocolate granola.
 
Back home after a long and stressful day. We left at 12.30 for the Eye Hospital and didn't get back home until after 6pm. They ended up running behind after the air conditioning broke in the treatment rooms, which meant suspending all injections until it was fixed. The whole process usually takes between 2-3 hours, but this time it took over 3 and a half hours! Mr B was so anxious with all the waiting around. Anyway, the good news is that his right eye is still stable and there has been some more improvement in his left eye (the good one). The bad news is that this means we have to back again in four weeks! Food today has been a tad topsy turvy.

Breakfast: Coffee and cream
Brunch: Bacon, sausage, black pudding, eggs, tomato and mushrooms. Coffee.
Dinner: Couldn't be bothered to cook, so we had chia pudding with raspberries and almonds. Followed by a luxury hot choc with Willie's Cacao Peruvian Black, almond milk and cream. We always have this on treatment day....it lifts the spirits. :hungry:

I struggle to remember which thread I’ve said what to so apologies if this makes no sense but daughter had cheerleading tryouts yesterday - sad to report she didn’t make a competitive squad but she’s got into a pre-comp squad where they train and learn a routine to showcase later in the year so get the practice and ‘feel’ of a team but don’t compete yet. She’s still so happy - a team is a team to a 6yr old!

Breakfast - usual peanut & chocolate protein bar with coffee
No lunch
Dinner - courgettes, mushrooms, cherry tomatoes, jalapeños, streaky bacon & chorizo all roasted in the oven with a sprinkling of fajita seasoning and then mature cheddar grated and melted on top at the end. Followed by 2 squares green & blacks raspberry & hazelnut dark chocolate and more coffee
 
You’re right it is a shock to the system at first, it took me ages to feel comfortable choosing fattier cuts of meat, having butter, adding loads of oil to saladsetc. It’s quite the opposite of how we have looked at a ‘healthy diet’ but the results speak for themselves. Are you testing your blood glucose before meals and 2 hrs afterwards? You’re looking for less than a 2mmol rise so you will soon figure out which foods are ok.
Also do you have a book or app to look up carb values of food? ( before you eat them) I use the Carbs and Cals app to track what I’m eating but there are loads to choose from.
Stick around here, there are loads of good ideas popping up all the time, but what suits one person may not be right for you - just enjoy the ride and I’m sure you’ll find, like many of us that this is a joyous way of eating.

Ah. You have a 6 yo girl. Same here. I tried her on Keto pancakes today and she spat them out. LOL.
 
Evening all. A nice narrow 4 hr eating window today for me
Brunch: bacon ( streaky) 2 fried eggs and a leftover DD naan bread which went very well with the fry up.

Late lunch: smoked trout and M&S Orkney crab& prawn cocktail. A microwave flaxseed cracker ( added a pinch of cayenne this time, last one had a pinch of fennel seeds, both good). A lc Bounty bar for pud.

@BibaBee what a long and stressful day but good news about the improvement in Mr B’s eyes.
