Hi All
Another one here struggling with FBG and BH despite careful eating and tried and tested meals. Maybe the new “normal world” is having an effect. Its certainly affected my sleep and dreams.
Yesterday I had my usual breakfast og slice HiLo toast, butter, tea.
Lunch was mixed salad with mature cheddar.
Supper was tomato & basil omelette.
Today was same breakfast.
Lunch mixed salad with two slices ham, coleslaw.
Supper will be chicken, chorizo, red pepper & tomato stew with green veg.

FBG 5.4 - wonderful!
40 units insulin, 2 RyVita with cheese and 1 cup of tea later - 8.7. That's about 14 g of carbohydrate in the RyVita, not sure how much in the cheese.
I took a small portion of butternut squash soup out of the freezer last night and a small carton of what is labelled cassoulet (don't remember what that was but it probably has beans in it). Will probably have to give the cassoulet a bye to try to keep the BG down. Might have to add some veg to the soup to bulk it out a bit.

Although, last time I spoke to my diabetic nurse, she said I shouldn't be aiming to keep it between 4 and 7 and she would be happy with it around 8 to 10. Can't understand that, so I keep trying to get it down. Insulin helps a bit, but isn't the answer - hence the low carbs, but that doesn't often work either. Still, I have established that anything starchy is a total disaster in terms of BG, so that's something.

Nice fasting level.

I'm not going to comment on how much insulin you might or might not need to inject for any given circumstance, but why not have the cheese without the Ryvita and see what happens to your bloods? Of course, it might go up a bit, but might, I'd imagine be a kinder uptick.

For me, in that combination the cheese is what helps me feel fuller, not the Ryvita. These days, as all Ryvita products contain gluten, they'd not be in the house.

Today, I made a dangerous discovery.

Ages ago - certainly not in 2020 (!), I put a little 40ml pot of homemade clotted cream into the fast freeze drawer of the freezer, and of course, it found its way into a dark corner. I found it today.

I had tried freezing it to see what it would be like and if, like "runny" cream, it becomes extremely grainy and only really fit for cooking with (in my experience).

Anyway, it was excellent. It was a bit grainier than before it went into its frozen state, but very much edible and enjoyable.

Could be a useful portion control mechanism, although it only took about 30-45 minutes to defrost.

Actually, the RyVita in this week's shopping was different to the normal - it is still only Rye flour and salt, but it is smaller than the last pack and a different taste. I think I will find it easier to do without it in future. I don't often eat cheese these days - gone off the taste of most cheeses that I can get. Cottage cheese or soft cream cheese are OK, but matured cheese is not something I could eat with nothing else. The RyVita option is the lazy one. I feel pretty lazy in the mornings.

They’re great. Met them at Real Food Rocks with @Debandez and @rhubarb73 last year. Must have been their best customer with repeat visits to their stall and the stall selling clotted cream next door (Dan remembered that bit so don’t think I’m exaggerating!).

Their podcasts are well worth a listen.

Thanks for the tag @Goonergal. I can't rate them highly enough. Absolutely delicious. Had a piece of chocolate fudge cake only last night after dinner (with Oppo ice-cream and cream).

Brunch - usual full fat greek yoghurt with berries and double cream. Early grey tea with double cream.

Dinner - Chicken Tandoori with broccoli and a little carrots. Also had 1 slice of hovis low carb bread toasted and buttered thick with brussels pate whilst waiting for dinner cooking and also I confess to having 1 square of Lindtt dark chocolate 90% with a little peanut butter on top.

Rain has just started here but hoping to go out for a walk shortly.

Oddly, I don't seem to have a problem with gluten - my immune system has obviously missed that one!

For my second meal today, I used the small pot of squash soup but first toasted off some "lardons" of the cold belly pork left in the fridge, added the soup and chucked in a whole bag of spinach. Had 2 small bowls of it - very good. Shan't need anything else today.

BG behaving itself today - FBG 5.4, after RyVita and cheese 8.2, after soup 5.8! Should find some more of that soup, if there is any, in the freezer.

Google wasn't very helpful, with answers varying from 'simply mix mascarpone and creme fraiche and you have clotted cream' (can't be true), to something very complicated involving an oven for 12 hours and scooping the resulting stuff off, with the warning it usually doesn't work.
Should I try making it, an additional complication is me not having a clue what it should taste like so I won't even know if it turned out right :hilarious:

My friend had a bit of an anxiety or panic attack for the first time in her life this morning and called me when I was still asleep. She has been feeling a bit off and not like herself lately, and had started googling. Being only semi literate because of heavy dyslexia, a rough time at home as a child, and both her and her mother having a learning disability, googling her symptoms wasn't the best thing to do.

So I went over after feeding the animals, we did some talking, which helped a bit, and I decided to take her and her 8 month old daughter to the zoo for the first time!
While not being a solution, it's still a fine way of ensuring you have a good day :happy:

On our way we found a cheese vendor so I bought way to many good cheeses to get me through the day, didn't want to have zoo fastfood to give diabetes a reason to behave even worse than it already did.

Need to get myself to the kitchen now to make cauliflower cheese for my evening meal.

Clotted cream is cream cooked, long and low, creating a very thick crust on top, with some (variable amounts of) liquid underneath. It's delicious.

Taste? It just tastes like very thick cream, with a crusted cream cheese consistency. If you liked it, would it matter how it should taste? A slow cooker or low oven would do it,

Hi all
Lunch scrambled eggs with smoked salmon followed by four squares of Godiva 90% choc, couldn’t stick at two as intended - probably good that I’ve not seen it available locally as it’s way too moreish! Think need to stick to the 100% stuff I can buy as I’m never tempted to have more than two squares because of the relative bitterness - this one is smooth and sweet in comparison.
Dinner pesto coated chicken with salads and celeriac chips with glass of dry white wine followed by a few berries from garden with spoon of sf jelly and Greek yoghurt.

my first Godiva choc bar 90% 14g carb per 100g very smooth and as someone who normally eats 100% almost sweet
I’m an 85% girl, unless I can get this stuff. The absolute best dark choc I’ve found so far. Sooo smooth.

Back looking after Mum for a week today, much better prepared with food and shopping for this stay!

Breakfast at home: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch at a friends en route: I took my own and she provided socially distanced coffee! A small packet of Cheesies followed by Greek yoghurt, coffee chia pudding and LC chocolate granola.
Dinner: Chicken chasseur with mixed veggies followed by SF jelly, cream and strawberries.

I’m an 85% girl, unless I can get this stuff. The absolute best dark choc I’ve found so far. Sooo smooth.
I've just done a google search on it, pretty certain it wouldn't be available around here.
Turns out my local supermarket sells it! :)

B. Scrambled eggs with cream, cheese and mustard
L chicken and Greek salad. Keto shortbread and keto birthday cake leftovers
D burger with feta and rocket with guacamole Washed down with unfinished bubbles from yesterday and left over keto cheesecake.
I’m loving the treats but if they aren’t finished soon they are going to set off cravings for such treats regularly. Have to set the teenagers loose on the leftovers!

Evening all.

Also struggling with BG levels. A few days off work starting tomorrow may help. Let’s hope so.

Lunch was carnivore pizza - morning meeting went on waaaay too long, so needed some proper sustenance.
Dinner was 2 large lamb chops, air fried. Delicious.

B: chicken soup and collagen powder
L: Lidl protein noodles with cheese, cream and garlic pickle
D: lamb shoulder (instant potted with onion, garlic and brinjal pickle. Yum!

lovely walk with dogs at lunchtime. My scooter is incredibly liberating.
Pup 1 has a chiro appt tomorrow at 1.30, which is a good thing, since he is now refusing to walk more than 100m at a time.
He is also rather enjoying lording it over 2 and 3 and any other dogs we meet from my lap. He was also relaxed enough that he nearly fell asleep on the way home!
