What have you eaten today? (Low carb forum)

Yesterday was a bit of a mess, foodwise, because I was too tired to work out if I wanted something to go along with day 3 of my celeriac/root parsley/blue cheese soup, and if so, what. Once my brain decides it's had enough it seems to end up going around in circles so I ended the pattern by making a lc wrap cheese toastie first, and a slice of lc bread with a generous amount of delicious stinky Muenster cheese a couple of hours later and foregoing the soup altogether.

This means today was soup again, this time with cubed bacon, walnuts and fresh parsley. :hungry:

I also made a nice marinade for tomorrow's pork belly strip pieces, as I'll be away in the afternoon and I'm pretty sure I won't feel like cooking when I get home.
I had a lot more marinade than I needed and I also had some leftover mushrooms looking like they wouldn't last much longer, so I chopped two onions and the mushrooms and marinated them in the rest of the marinade to bake in the oven tomorrow.

And then I realised my oven is too small for both the mushrooms and onion casserole and the pork belly strips at the same time :banghead:
I also found out there's still a generous portion of soup left...

I'll let you know how I've solved all those dilemma's after I've done so tomorrow night!
 
Disrupted day but we did what was needed - looking after 18 month old granddaughter who is now sleeping over. Food: B= 2+Ls TWAM (inulin and sweetener); Dockey: Flatulence Bar (Caramel and sea salt) and SF caramel CWC; L= Tea @ 16.07: EM : Very late -19.15 Mackerel and avocado salad. Flatulence bar was ok although it wasn’t caramel by any stretch of the imagination BUT -..7 on a strangely higher reading day until then will do.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee
Late morning: black coffee and raspberry phd bar.
Skipped lunch.
Mid afternoon: black coffee and a few pecans.
Dinner: deconstructed beef burger, in other words a cheeseburger with leafy salad (no bun) followed by SF jelly, cream and LC chocolate granola.
 
Stocked up again with shopping delivered! Honestly I don't think I'll ever go back to 'normal' shopping in supermarkets. Only go to see my lovely greengrocer. I didn't buy any farty bars. :hilarious::hilarious::hilarious:

Lunch: protein meal shake + 2 x keto-friendly coffees
Dinner: chili garlic mussels on the shell with a touch of tomato paste and cream, green leaf salad, 3 pieces SF orange dark chocolate

Cals <800, Net carbs 19g

Actually I felt a bit weird about the mussels. they were live and I killed them in my pan :wideyed: and I think that I would definitely be vegan if I had to kill all my own protein. But I ate them. They were delicious.

@zauberflote - will look out for oat fibre, that could work!
 
Still sticking with three small meals for a while
Breakfast one slice of bacon,one fried egg and lc toast
Lunch one slice of lc bread toasted and served with pate and afterwards coffee and two home made truffles
Dinner - while cooking and stressing too many almonds nibbled! Cajun chicken with salads including my first plain cooked small beetroot test ( after three years of avoiding them they used to be a regular fave) I’m happy so far as one and a half hours after eating still barely a rise in bg so maybe a few may be allowed for me but not as I used to eat them - one of my my fave pre low carb meals was a very large jacket potato served with lots of beetroot pickled in sweet vinegar and a blob of low fat cottage cheese (no butter!) as I was under the impression that that low fat meal was healthy - wonder what my bg was like after that! I probably drank several glasses of cold orange juice with that too as I was always thirsty -wonder why I was diagnosed with a hbaca1 of 97!
Just had DGF peanut butter brownie with cream for pudding
My favourite lunch used to be a baked potato too with coronation chicken and cheese on top, chilli chicken etc. when I used to work next door to a lovely take-away. I thought baked potatoes were healthy - better than chips or pies or toasties for lunch - obviously before the big D - gosh I can't remember the last time I had a baked potato - I must have been slowly killing myself without even realising it :hungry:
 
Breakfast - 2 boiled eggs mashed up in a cup with butter. Mug of earl grey tea

Starting work at 4pm - so at 3pm I had prawn cocktail, chicken breast with piri piri sauce and 2 squares of lindtt 90% dark. A bit early for my dinner so just had bits and bobs to keep me full until ...

finished work at 9pm so at 9.30pm - handful of nuts and glass of pepsi max
 
s your kitchen warm? Did you cool it quickly after it was cooked? It sounds like the soup is fermenting. Many yeast and bacterial species grow well at room temperature but I’d expect them to take a little longer than a few hours. What a shame.
Thanks for that info. The kitchen wasnt hot and I really dont know why I took it out of the fridge a few hours before my meal. I think the “method in my madness” was I intended to decant some into a smaller pan for yesterday’s lunch and got distracted then went out to rake leaves for two hours. Its taught me a lesson though!
 
BG, when I finally checked, just after 5 am, was 14.7.

Breakfast at 9.45 am was a small serving (about 1 heaped tablespoon) of yesterday's stew. It was the easiest thing I could find because I was feeling pretty poorly and it was just a case of shoving it into the microwave and eating from the pot. 64 units of Fiasp but BG at 11.45 - 17.4. Waiting for a call from diabetes nurse to see if I can go back to previous insulin which I was taking before the Fiasp and the Toujeo. Stomach still sore and I have had 2 glasses of milk to try, unsuccessfully, to quieten it down. I daresay that affected my BG.

Scrambled eggs some time later today maybe with some bacon - that usually doesn't have too bad an impact on BG or on my stomach.

Black coffee as usual this morning then a lunch of bits and bobs from the fridge. Camembert, walnuts, pate and SLC toast. DGF raspberry bakewell.
Dinner was chicken with garlic and mushroom sauce, crispy kale, sprouts and spinach. Not as nice as it should have been as I misjudged the IP timings for the chicken and it was overdone. I also burned the garlic when making the sauce and the cream scrambled a bit. Should pay more attention. I’m having a glass of wine now to even things out a bit.
 
Eeeewww @PenguinMum sorry about that soup! I think @DJC3 nailed it but that's bizarre.
@Annb hugs for sore tum. Hope your nurse gets back to you very soon.

Did not sleep as long as would have been ideal. I'm getting really good at lying absolutely still pretending I'm asleep but my sleeper does not get the message. So when the alarm woke me after about 30 min sleep post-playing possum-for-2-hrs, I knew it was going to be an AYCE day. (all you can eat). Bfast avocado, pecans, boiled egg, 1 sq Lindt 90% while cooking a HelloFresh for the freezer.
Second bfast about noon, flax crisps/dilute soymilk, about 12 macadamias, 1/2 sq Lindt 90%
Will have to cancel barre class, wayyyyy to exhausted to try, much less enjoy.
Supper HOPEFULLY I can finish off the slimy spinach. It was awful last night but I paid $5 for 3-4 meals' worth. Flax crisps/soy. And who knows what else.

I’ve admitted defeat on a bit of spinach left in a bag - I found it in the fridge today and decided it was well and truly past it. It smells like compost.
So sorry about the lack of sleep, it really does have a huge knock on effect on the following day, but what a shame you had to cancel your barre class.
Yes - you’ve got it! the wine is to even out my mental equilibrium, and my rubbish cooking versus the vintner’s skill
 
Evening all.

A bit behind but will try and catch up later.

TMAD today. Lunch was fried mince (a proper sized portion, @DJC3 :D) with 2 eggs and a sprinkling of grated cheese. Kept me going for ages, including a 7.3 mile post work walk. Got drenched on the way back.
Dinner was a small, quick meal post Waitrose delivery. Too late to cook any of the meat delivered, so went with some salami and chorizo. Still peckish but probably a bit late fir anything else.

Everything's solved with everyone in my household happy! (That would be two dogs, three cats and myself.)

I put the onion/mushroom casserole in the oven late afternoon while parboiling Brussels sprouts so it would only need to be reheated.
By the time I got hungry I put the meat in the oven and stir-fried the sprouts, onions and mushrooms when the meat was almost done.
The resulting meal looks far from appetising, especially on the yucky red plate (my house is cold and food doesn't cool so quick on a plastic plate, very cool trick but I need prettier plastic plates!) but it tasted delicious all the same :)

The soup didn't go to waste either, turned out my pets love celeriac, parsley root and blue cheese soup :)

Out much of day helping with sons plumbing problem no I didn’t do the plumbing but had to be there to deal with the plumber!
Breakfast one each of slice bacon,egg and LC toast
Lunch flask of coffee with an Aldi nut bar
Dinner beef casserole I’d put in slow cooker this morning with roast celeriac and cauliflower cheese and relaxing glass of red wine pudding DGF lemon and blueberry cake with cream

@Antje77 well I think your dinner looks yummy - regardless of red plate. And hoping the lucky gourmet pets had no interesting digestive after-effects!

A fully 'real food' day.
Lunch: cream of mushroom soup + psyllium, green leaf salad, 2 x keto-friendly coffees
Dinner: other half of the chili garlic mussels, green salad, stevia hot chocolate

Cal < 800, net carbs 23g.
Find it quite challenging to keep the calories AND the net carbs to target, keep protein reasonable, AND do a full 'real food day'. Ah well, this phase only goes for so long!
