What have you eaten today? (Low carb forum)

Today’s food: B= 2+Ls TWAM (inulin and sweetener); Dockey: SF caramel CWC; L= Tea: EM : Mackerel and avocado salad. This time last year I had spent a day in the gym, spa and sunbathing in Cyprus. Fatt Bars came but too late for me to try and test on their own.

I couldn't eat it at all! I don't know what it is with me but doing anything to nuts seems to change the taste to something that makes me physically sick. I first noticed it when someone put salted peanuts in front of me. Just the smell turns my stomach. It's crazy because I do like most nuts. I only want them though shell on and give me a nutcracker. I cannot stomach roasted nuts, butters, milk, salted anything.
I thought the vertigo had gone but I'm still having odd instances. It's still only when I go to bed if I lie down to quickly or turn to quickly. It's better than it was though.

Same here, except I am quite happy with roasted, salted nuts - it's the salt that allows me to eat them. Nut butters are just not for me. Favourite nut is pistachio, still in their shells, but salted. Bit of a task getting them open and sore on the fingers (stops me eating too many) but preferable to the ones sold in supermarkets, ready shelled and going soft.
 
Love nuts, however presented. Have given up the crunchy, chewy caremelised versions though. Even the Orange and cinnamon flavoured mixed nuts a friend gave me each Christmas.
Breakfast this morning was whole earth crunchy peanut butter spooned straight from the jar.
 
B ff greek with seeds and blueberries
L h/m broccoli soup with some blue cheese melted in. 3 sqs 70%. Wondering if its this has been sparking my mid afternoon migraine attacks. Usually only eat it in evening
D: cold gammon and 2 eggs fried in duck fat. A 'yes' bar

A good haul from a pop in to Morrisons while car being mot's. Bones for my first ever bone broth, 2 celeriac, ready done Mr Porky pork strips and a piece of pork skin to make own crackling.
Any ideas on how to do the latter so its doesn't break my teeth?
 
Lunch: Smoked salmon and an omelette
Dinner: Pan fried chicken thighs with plenty of garlic, some fried eggs, and some fried mushrooms (lots of butter of course)

And also a chia seed pudding with almond milk and some blueberries

I may never be able to move again!

After an afternoon outside gardening, it was my turn to cook this evening. We have a variation on this: https://www.bbc.co.uk/food/recipes/beef_and_chorizo_with_86545

I swapped out the veggies, adding more swede, French beans and a few mushrooms. There were also a few potatoes in it for MrB. Given the option of mash with it, he chose. Less faff at the end, although he did have a solitary dumpling in there. Being gluten-free, that was a risk for me, but so far, so good. My reactions to gluten re pretty immediate.

I didn't thicken the stew, as we're quite happy having it in a bowl, with a spoon for the deliciousness at the end.

After browning the meat and sweating the chorizo and onion, I just lobbed it all in the IP with a mixture of beef and red wine stocks, and hit the "Stew" button. 35 minutes, plus a bit of an ignoring as it dropped pressure naturally resulted in a delicious dinner.

Plenty left for another day. (We're pretty good for using up leftovers.)
 
@DJC3 and @Goonergal I am ready to go on the almond butter. Thread is over in Off Topic General Chat. Yes, I am imagining all sorts of dog vs food shenanigans on the kitchen counter!

@maglil55 how awful about the nut nausea. I wonder if all the processed nut products you've ever had have been rancid (a definite possibility). Be that as it may, it's a real problem for you, and I'm sorry! Glad the vertigo is improving.
Bfast avocado, fewer pecans, 1 boiled egg, 1/2 sq Lindt 90% while washing many dishes. Had to leave for telehealth appt.
rest of bfast at lunchtime while feeding cats and doing the rest of the dishes. 1 boiled egg, flax crisps/dilute soy, 1/4 sq Lindt. Piece of blue cheese, 1/4 Lindt.
Supper will have spinach/hm dressing, flax crisps/dilute soy, some nuts probably, cherry tomatoes/cucumber, and a protein.

What a difference a year makes eh. Please do post and let us know how you get on with the fatt bars as they were something that I might be interested in trying also if they are ok.:hungry:

I am nuts about nuts too! and a wee bonus they are good for us:)

My starting point was largely based on this article, but now I just wing it in the AF.

The Morrisons rind can sometimes be a bit thin. If it is, give it a bit of an oily/fatty coating to get it going, or it can dry out. In my view, the very best crackling is from gammon rinds.

These days, I much prefer Moo Grob.

Thank heavens a new grocery order will arrive in the morning!

Lunch: protein meal shake with added cashew milk, 2 x keto-friendly coffees,
Dinner: Japanese vegetable fritters from what was left in crisper, 3 pieces SF dark choc and stevia hot chocolate

I tried to thicken up my vegetable and egg mix with psyllium husk as a binder. Hmmm, won't do that again, sort of worked but gloopy. Looked at the coconut flour in the pantry, but previous experience has led me to a 'coconut flavoured sawdust' conclusion when it was used on its own and it didn't seem a good idea with Japanese flavours. Might try a little buckwheat flour next time, only need 2-3 tablespoons full.

Net carbs for the day 22g
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee
Late morning: black coffee and salted caramel phd bar.
Skipped lunch.
Mid afternoon: black coffee and a few pecans.
Dinner: chicken in creamy mushroom sauce with roasted Mediterranean veggies followed by SF jelly, cream and LC chocolate granola.
 
@Mrs T 123 and @ Ianpspurs I tried the fatt bars a couple of years ago -I liked them, they are like nutty fudge but they are small and expensive I’m trying ( not too successfully) to wean myself off snacks and these aren’t big enough to replace a meal.

Today after lots of morning black coffee and a very muddy dog walk I had a lunch of https://www.dietdoctor.com/recipes/low-carb-baked-eggs which is basically a longer version of @Goonergal ‘s mince and fried eggs. I used a couple of slices of Camembert as the topping instead of cheddar ( it’s stinking the fridge out and needs using up) DGF ginger cake.
Dinner was leftover keto lasagna with green veg. Pudding of mixed up chocolate ( 100%) cream and almond butter
@zauberflote thanks for the almond butter challenge heads up ( I need another jar now)
