What have you eaten today? (Low carb forum)


Looks very good smoked salmon, not the pale insipid stuff normally seen. Where’s it from?
Edit to add - I like the idea of using the pancetta crisps in a salad.
 
My food post yesterday was one that disappeared in the forum glitch today, I’ll not repost it all except for my salmon dinner pic!
Today:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a Phd bar.
Skipped lunch.
Mid afternoon: black coffee and a food dr bar.
Dinner: mushrooms on scrambled egg n Marmite on LC toast followed by SF cherry jelly and cream.
 
Ah yes, that sparked a discussion on how to make pepper sauce. If I recall correctly.
Son in law , the foodie makes one with cream, beef stock, peppercorns and garlic. He always follows recipes carefully. When I make it I just use approximate amounts of each. Delicious.
In the spirit of the theme of the thread, I can’t for the life of me remember what I ate yesterday apart from chicken thighs with cauli rice fried with other veg.
Today was Full Fat Greek yogurt with seeds and blueberries, and black coffee for breakfast.
Some left over chicken and coleslaw at late lunchtime with a decaff coffee.
Dinner was haddock, baked with a bit of stilton and tenderstem broccoli, low sugar tonic water, and a slice of lemon. (Faux gin)
Throughout day about 2 litres of water.
 
B: ff greek with seeds and 2 strawberries
Long, hilly walk (legs really feeling it now)
L: 2 hard boiled eggs,cheese, Cole slaw. Strawberries and clotted cream. Too many cherries
Out stately home visiting, but came over" all funny" so came home early. Think the lights sparked a migraine.
D: bbq cooked burgers with salad and mushrooms. 2 very small glasses wine and water. Ice cream

1500hrs L monkfish goujons using almost flour with salad
2100hrs late dinner again . 2 x small chicken and salad on low carb wraps
 
Morning all. Wasn't well yesterday so didn't bother with anything, just lay on the bed and felt sorry for myself! Today, it's scrambled egg with smoked salmon at about 1ish and tonight a chicken leg with green veg. My lovely bit of news, I'm going to USA to see my son in September. Haven't seen him for nearly 4 years and I can't wait to give him a hug.
 

Was going to give you a hug for not feeling well but getting to see your son after 4 years must be a winner! So happy for you. Is that to be soon, or something you can have pleasure looking forward to? Keep well meantime.

I didn't post here yesterday either. Felt too bad to eat anything and slept much of the day after not sleeping at night due to some horrible pains and having run out of pain killers. Turns out Neil had some codeine from a long time ago and gave some to me in the morning along with some paracetemol. That helped and at least let me sleep. New day now. Have my own pain killers and will try to keep on top of the pain today until it goes away by itself (or doesn't, as the case may be).

I intend to eat today, and drink more than yesterday to try to get back into kilter, starting with tea, then scrambled eggs. I have a casserole made with sausages from 2 days ago. Not sure if that will be the right 2nd meal but at least it is ready to go.

It's Sainsbury's. M&S have some nice packs too. Just enough for 2 in this one though and, it's something I prefer being finished once it is open.
The crisps, there's the 3 options from M&S - pancetta, chorizo or serrano ham. Of course, they can also be made in the microwave! Gives me a thought, pancetta should work in the microwave too.

From your other posts I take it that you're struggling with your diabetes. Would you be interested in choosing some lower carb foods to try to get your blood glucose a bit more stable?
Cereal doesn't work well for most of us.
 
14 July bed 8.2 FBG 7 1. No idea what is going on. Usually when I've had high BGs it's the morning that's the issue and takes longer to drop

B. TAG and 2 slices of SLC toast with pate.

L. Nothing

D. A SLC pizza with tomato, cheese and salami. Strawberries and Skyr yoghurt. I was out of mozzarella so had to use cheddar on the pizza.

I make a LC mix to "crumb" fish (and meats such as chicken/pork/veal escalopes). I just vary the flavourings according to what I'm doing.
The base is equal amounts of almond flour, golden milled flax and grated parmesan. To get a crispy coat when frying, you then add sesame seeds.
Flavourings? Ground salt and pepper but, with fish, I'll add things like lemon zest and chopped parsley. Chicken, I'll add a shake of hot sauce or smoked paprika for example.

It works well and gives you a really good crisp "crumb". I dip in egg first, then the crumb. Refrigerate for 15 minutes or so then dip/crumb and Refrigerate again.
 
Sorry you felt unwell but that was a lovely, cheering piece of news.
 
Em came for a visit to tell me all about her trip to Alton Towers - she had a great time! I shudder to think of the rides she went on. Anyway, she was peckish so I offered her some crackers and ham and/or cheese. She took the crackers and cheese but I thought I would just have a cracker and ham sandwich (2 crackers, butter and a slice of ham) for my 2nd meal today. Now feeling very full and will have to have some more tea to get it to go down (still stuck in my gullet - not unusual for me). It might be enough for the day, but we'll see.

Em is currently on her dessert of a Kit Kat biscuit.
 

Thanks, It makes sense now that you’ve posted the photo - wild sockeye salmon. I’ve had it before and I do think it is far superior to the farmed salmon.
I often buy the M&S crisps but tend to just eat them as a snack. Adding them to a salad is a good idea.
Let us know if you’re successful crisping pancetta in the microwave
 
I was going to have yogurt for breakfast. I am far too lazy to prepare anything too elaborate. Hmm, when she got there the cupboard was bare. So instead I improvised using rasberries, with a big spoonful of cream cheese, and a small spoonful of cream, with a few walnuts ans some sunflower seed hearts. I think I preferred it to yogurt. Black coffee to go with it.
Lunch on the run was a slice of roast ham, and some olives, iced coffee.
Dinner scrambled egg with chives, smoked salmon, low cal / sugar free tonic water.
 
I was sure it was going to be a sandwich day, really didn't fancy cooking.
But tomorrow will be a long day on a ship, leaving early enough to ask neighbour to feed the guinea pigs and returning late, and I'm very sure I don't want to cook after that.

So I'm very proud to inform you I did find the courage somewhere to cook for three days!

It's one of my go to dishes in the past couple of years: spicy green beans with some other things (onion and bell pepper this time) with a black bean sauce, lots of garlic and a chilli pepper, a very spicy peanut and onion sauce, a fried egg, and marinated pork belly strips I had in the freezer.

Very odd, this has been one of my favourite dishes for years but I had gone off it after starting metformin last november. I didn't like very spicy food anymore, and I didn't like the fatty part of pork belly anymore except when crispy like in bacon.
I've stopped the metformin about a month ago and now I suddenly like spicy food and pork belly again!
Looks like an odd side effect, as it didn't have anything to do with gastric discomfort, no issues with that on my 1000 mg.

Whatever the cause, I'm happy I like this dish again!



And in case you're wondering, I started the metformin with the agreement of my endo as an experiment to see if it would make a change in the fluctuating amounts of insulin I need.
I think it did reduce my insulin by a little (hard to tell because I've been ill for two weeks with a likely covid infection in december, which changed everything for a while), and it looked like the amount of insulin I needed from day to day fluctuated a little less than before, but not very conclusive.

Still, I took the tablet religeously every day with my meal.
Until I started sailing again, off and on, which means rather unpredictable eating times so I didn't take the tablets when sailing, not wanting to risk the side effects while in a small cabin with only a bucket for a toilet at night...
After the first trips I restarted them, but then I didn't. And now I don't see a difference at all so I don't think I'll start them again.
