What have you eaten today? (Low carb forum)

Morning all. Beautiful and sunny cold day yesterday but hard frost, dark and gloomy today. No bf today but have a lovely beef stew for dinner with carrot, onion, celery and mushrooms and cauli mash. But I do miss my real dumplings! For tea I'll have a couple of boiled eggs. Won't be going anywhere today, too cold so I will ice the mini fruit cakes I've made for friends for Christmas. I make them in small baked bean or tomatoes tins and they are an ideal size for one person. It's a solution to the puzzle 'what do I buy them for Christmas?'.

Yesterday breakfast scrambled eggs and bacon
Mid morning 2 biscuits with my coffee. Cold seems to up my desire for carbs
13:30 a mulled wine (probably sugar in) and 2 bites of a proper millionaires slice.
18:30 olives and nuts
20:00 pate, chicken with mushroom sauce, veg which included 2 roast potatoes, cheese. 1 white wine, 1 spiced rum

Today
Breakfast, 1 poached egg, bacon 1 sausage. 1 small Danish

Mid afternoon 2 stollen bites (where has my resolve gone?

Dinner will be roast chicken and veg..
Glad to be back home where I can control what goes into my food/mouth better. Long drives, hotel stay and theatre didn't help me with keeping hydrated and low carb. It was too cold to fast much!
 
Saturday 10 December bed 6.8 FBG 6.5 What a treat! I had a day to myself. No going out, nothing. Just as well as it was snowing. What did I do? Clean! I had Hubby under instruction, too, for the heavy stuff.

B. TAG with streaky bacon, 2 GF chipolatas, and a fried egg (that was a double yolker). Slice of SLC toast.

L. Vegetable bouillon.

D. Chicken crown basted in lemon, butter, and garlic. The breast of the crown was just a nice portion. 2 balls of GF sage and onion stuffing, 3 GF pigs in blankets. 2 small boiled potatoes. CC little chocolate pot.
Antibiotic finished, so I had a Peroni 0.0!
 
Sunday 11 December bed 7.2 FBG 7. Back to swimming lessons and the snow has gone. It was positively balmy here today at 3°C.

B. TAG and 2 slices of SLC toast with ox tongue and egg mayo.

L. Nothing at swimming lessons. Wee fella was tired today. When I asked him, he said, " Well, I did a 4 length medley, then 4 front crawl." It's no wonder I got tired.

D. Another Hairy Biker dish. Slight adjustments.

I've added it to my CMT. I browned the lamb in oil and butter. Removed the lamb, then added the onion and carrots to the same pan. I should have put the lid on and sweated the carrots a bit. I did half sliced potato and 1/2 celeriac for me. I would suggest blanching the celeriac slices a bit (not too soft), then coat ib melted butter before putting on top of the lamb. Green beans goes really well with it.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake!
 
Trying two meal a day to see if it helps my numbers.
Brunch 1230hrs boiled ham , cabbage and few carrots
Dinner 1800hrs 2x chicken breasts stuffed with garlic and mozzarella cheese wrapped in streaky bacon with roasted mushrooms,pepper,asparagus and onion
Handfull of nuts
Copious cups of coffee and 3x tea's
 
Woke up hungry. Haven’t been eating breakfast recently but today I had a cheese crusted omelette filled with mushrooms and more cheese. Spoonful of sauerkraut.

Big roast dinner at 3pm: slow roast shoulder of lamb, mashed swede, broccoli, roast veg( aubergine, mushrooms, yellow pepper and shallots) glass or 2 red wine.

Watched Strictly with a daughter who is starting a new job tomorrow. She brought the bottle of Moët her last employers had given her as a leaving gift. We drank that with nuts, cheese and h/m calves liver pate.
Glad you had your steak and eggs @Annb -my absolute favourite breakfast.

@RosemaryJackson what a cracking idea to re-use cans for individual cake tins. How do you scale down the cooking times?
 
Brunch : egg, bacon, sausage, mushroom, black coffee..
Dinner: beef, kale with shalllots choped in, slice of carrot, butternut squash, gravy and a small yorkshire pud. Two large glasses of Malbec. Mineral water of the sparkling sort.
 
Morning all. No bf today. It's pensioners lunch today so no idea. I will take my cheese and 2 crackers with me to see if it helps. My bg's are better and I don't want to spoil that. Teatime will obviously be no-carb. My font keeps changing! It's never done it before.

Breakfast: a toasted crumpet and 2 cold sausages.

2nd meal will be chicken - just thrown a smallish bird into the oven on a trivet of halved onions and lemons and a little water to keep it moist. Should be ready about 6.45. The oven's on full (my grandmother's tip) at present and I must remember to turn it down when the bird starts to sizzle. If I forget I will have charred chicken, instead of roast chicken.

My grandmother was said to have been a cook in a big London house in Edwardian times (employed by "Sir Poncy Ponsonby" or somesuch). To be honest, I have my doubts because she was only 21 when she married my grandfather, having "gone into service" at the age of 11, so she couldn't have been more than an assistant cook, or even a kitchen maid. Whatever, she was a very good cook and had learned her trade well. So, if she said full on until you hear it sizzle, so be it.
 
Yesterday: Breakfast was cheese omelette and 2 w/meal toast . Lunch ( in work ) was a bit mish mash had an apple and cheese then a packet of crisps ( total waste of carbs ) followed by a corn beef sandwich .( yep mish mash ) :rolleyes:
For dinner / or tea depending whether you are north or south lol Small chicken dinner ( still in work ) 2 small roasties and a Yorkshire pudding. FGB this morning was 6.9 .

Dinner: bolognese with sliced sautéed courgette and a sprinkle of grated extra mature cheddar followed by SF rhubarb (yes really!) jelly and cream.

Yesterday breakfast small bowl of porridge ( 7am ) followed by low carb sausages ,beans on one wholemeal toast ( 11am)
Next meal was around 4ish re work hours over indulged in bread with bacon and eggs , mince pie and a few chocolates .
Didn't' really eat again FBG came in at a respectable 6.3 at 5am this morning ( Tuesday ).
