What have you eaten today? (Low carb forum)

I have missed you all! I am just getting back on the wagon now after the Christmas New Year splurge and pushed my luck due to a Libre3 giving incorrect readings... Anyway back on the wagon now.
Fasted all day... Dinner was roast chicken, steamed broccoli cauliflower cheese, cabbage, homemade chicken stock gravy. desert was a spoon of greek yogurt and a few raspberries...... Then an hour or so later as my BG looked nice and low on my Libre3, I risked it with a 4 chocolates from the Roses box! Big mistake, but BG corrected after 2 further hours. I am not trusting that gadget anymore, and no more treats!
 
All sounds delicious and the cheese cake looks lush .
 
Ohhhh oven cleaning how I hate that .

Wow!! Your cheesecake looks a lot nicer than the one on Dietdoctor... Thanks for your advice on the sweetner!
 
Not sure if I should post all I ate yesterday had a few blips which resulted in a FBG of 7.6 this morning .
Short breakdown of meals breakfast 2 boiled eggs and seeded toast 2 cups of tea ..handful of nuts and finished off the Christmas mince pies .
Lunch wholemeal roll with chicken and sauerkraut cup of coffee ..all other drinks were water .
evening meal ( in work ) we had chippy takeaway fish bites loads of chips and curry sauce , then a bit of chocolate.
 
Been doing some batch cooking this morning. Freezer was already straining at the seams so a game of freezer Tetris followed.

Ate one portion of a mince/quiche type thing, which was basically this with some added onion. Very filling. Followed up with a choco matcha keto cupcake with extra thick double cream. Doubt there’ll be much else, if anything.

 
Breakfast around noon: mushroom soup made with coconut milk and chestnut mushrooms.
2nd meal will be: ratatouille again. I have all the right veggies in the fridge and I enjoyed it the other day when I made it to Michel Roux's recipe. Better than previous recipes. The secret was to cook each vegetable separately in olive oil and only mix them together at the end. That way, each vegetable retains its own flavour and texture rather than having one overall taste.
 
Had a restless night last night possibly because I ate more than normal for me during day yesterday and tummy a bit unsettled so got back today to my usual time restricted eating pattern and 2 meals. I'm feeling much better now.
10ish just a few spoons of kefir with my supplements before a 6 km walk in the sunshine really did me good to get out and about. We've had bad flooding here past few days but heartening to see the flood barriers working - they failed a few years back but the peak this time hasn't breached them thankfully.
1ish after hike two eggs fried in butter on one slice of LC toast followed by one baton of 100% chocolate - I got a fair bit of 100% chocolate for Christmas and trying to eat them and avoid the 90% chocolate that I prefer as I find I can eat a lot more of the 90%....
5ish roast chicken dinner with a few carrots and one hm roast potato and glass of dry white wine followed by LC chocolate brownie warmed and served with spoon of yoghurt.
 
No breakfast, but an extra coffee
11:30 ish. The second half of the fathead dough pizza from last night. Small bowl of hm lc veg soup. 1 seed bar
Walk, well a stroll really, with a friend
D: 2 glasses red. Brisket cooked in slow cooker with 1 onion and 2 carrots, served with broccoli and buttered leeks. A small scoop coffee ice cream.

Trying to ignore the smells of Hubby and son treating themselves to a gingerbread steamed pudding in the kitchen.
 
I was going to cook but then I didn't.
But today I did, with much grumbling because I didn't feel like cooking or anything else really.
Happy I did though, and it's enough for a couple of days too!

One of my favourite meals, lots of veggies with a spicy peanut sauce and half a pork belly strip, marinated in black bean and garlic sauce before putting in the oven.

Usually it looks a lot messier because I tend to put the peanut sauce all over instead of in the middle. But I thought to make it look prettier in case my endo asks about my eating habits tomorrow at my yearly appointment.
It's exactly the same meal but it looks a lot healthier if you can actually see the veggies!

 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: coffee shop coconut cappuccino and an Aldi protein bar.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake!
 
Two slices of cheese on toast for breakfast.
Pickled pork belly backed in the oven, green veggies, butter mushroom sauce gravy for lunch.
Finished the pork off in a couple of sandwiches for supper at six.

Glass of single malt before a early nights sleep.
 
Fluids only today, I think. A recently prescribed pill seems to have caused a serious amount of sore dryness in my system. Haven't been able to drink anything more than cold water and most certainly can't swallow anything solid. In the middle of the night, my throat and mouth were so dry I decided to have one of the emergency supply of sherbet lemons to try to get some saliva flowing. They have been hanging around so long they've gone soft and sticky! I'd already used up all the bedside water. Anyhow, I prised one out of its wrapper and popped it into my mouth. No saliva response. I broke it with my teeth and ground it down to tiny pieces and tried to swallow it - not my best idea ever - it stuck at the back of my throat and made matters even worse. Eventually a little saliva did manifest itself and I managed to get it down. I'm a bit short on salivery glands, having had some removed because they were blocked. Shan't be trying that again. So it's a sip of water every minute or so to moisten the dryness and ease the throat and I imagine that will be it for the day. Really hoping the effects of this pill don't last too long. My stomach really would like to be involved today.
