What have you eaten today? (Low carb forum)

Beef short ribs cooked in the Instant Pot were the star of the day. Earlier had a keto chocolate cupcake with extra thick double cream and following the short rib a few Montezuma’s buttons.

Yesterday ( sunday )2 rashers of bacon one egg dry fried mushrooms wholemeal roll tea ( 30 carbs )
Lunch cheese roll sauerkraut and some nuts ( walnuts ) coffee( 35 carbs )
had some grapes and a piece of cheese in the afternoon( 10 carbs )
Evening meal salad roast ham and some mayo(10 carbs roughly ).
FBG ( Monday morning 6.3 ).

Coffee and cream x 2
Smoked salmon
Beef cheese and tomato x 2

10ish a few spoons of kefir with my supplements
1ish mix of cooked leftover chicken with a couple of walnuts and a spoon of kimchi with two LC seeded crackers and one baton of 100% chocolate
3ish low carb cookie
5ish chicken slow cooked and served with mushrooms followed by low carb brownie

@Goonergal those short ribs look delicious.
Today I’ve eaten quite a lot-
B- Fried eggs (4) topped with grated cheese and a side of turmeric and ginger sauerkraut.
L-meant to skip it but instead I had beef and Emmental in a SLC roll then 2 HC 100% batons ( I agree @shelley262 they aren’t as nice as the 80% ones. Nor as nice as Montezuma’s 100%)
D- IP butter chicken with steamed broccoli. This dish has proved an absolute lifesaver when I’ve not planned/ forgotten supper.
Now drinking fresh turmeric and fresh ginger tea which is wonderful and warming. Just as well as our boiler isn’t working and we’ve run out of firewood. Can’t go and get more as daughter has borrowed my car because hers has conked out ( again!) Not looking forward to tomorrows expected freezing temps.

Friday 13 January - bed 7.8 FBG 7.2. Half day Friday and I ended up going shopping after pick up and drop off as I was back on the jujitsu and swimming run at the weekend.

B. TAG

L. Late on 2 slices of SLC fruit loaf toasted with butter and a CC little chocolate pot.

D. A weird mix that didn't really go together but I just couldn't be bothered. A bit of crustless quiche (reheated), 5 mini prawn toasts (I do mean mini as they wouldn't even make 1 normal size), 2 mini vegetable spring rolls. Hubby was having Chinese!

Saturday 14 January bed 7.9 FBG 7.2 Back on the jujitsu run.

B. TAG

L. When I got back I had a cheeseburger as I had a burger remaining. SLC seeded roll and a slice of jarlsburg.

D. Not very hungry after the burger to 1 slice ox tongue, haslet and a bit pork & egg - that was it.

Weather has been horrible. Constant torrential rain.

It's not easy to obtain. I used to get it from My Diet Shop for £9.95 but they haven't had it for ages. It's some hangover ruling from the EU I believe. I get mine Brought over from the US or Australia when relatives visit. I didn't get my niece to bring any from Australia in December as it was ridiculously expensive.

8 pm -throat still v sore but improved sufficiently to have something soft so I scrambled 2 eggs and then had a normal ice cream. Throat was fine while I was eating those things, but soon got back to being sore again. Tried to get hold of a GP without success so I used the e-consult and am supposed to receive a response by 6.30 tomorrow evening. If they leave it long enough, it might have fixed itself - it's 2 days since I took one of those pills.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a Carb killa bar.
Dinner: Balti chicken curry and cauliflower rice followed by SF blackcurrant jelly and cream.

A small chunk of cheese before exercise class.

L: 2 slices hilo bread toasted with soft blue cheese on top. 4 slices gherkins. 4 sqs 72% chocolate

D: bacon wrapped cauliflower. 1 small glass red.

Out at a committee meeting. Returned with mighty headache. Early night beckons

Had what serve for a couple of busy days here in Paradise - SE Asia Branch.

Sunday, usual breakfasts for us both, then our other meal TwoMad seems to be our way here for us to be comfortable Lunch was at an Aussie owned Beach Club where they do marvellous Sunday Lunch, with the meats from the BBQ. MrB had the full shebang, including a skyscraper Yorkshire pud. I had minus the carbs, so meat and veg. Standard fare are chicken, pork, lamb and beef. Next time, I'll choose which meats I want because it was a bit much.

Memo to self, request no gravy, as it was very thick and unlikely to be GF, so that was scraped off. A gravy boat is also served, so I could add my own jeopardy if I wanted to.

Yesterday, standard brekkers and (no) lunch. Dinner we both had Thai Red Curry locally, by a local chef who cooks very cleanly, in terms of ingredients. No MSG, no thickeners, colourings or whatever. So delicious, and spicy. She loves as as we love to eat local food, where we can. MrB had rice. I didn't. Here foods with a decent amount of sauce is served in bowls, with standard cutlery fork and spoon, so very easy to get all the delicious, rich sauce.

Today (Tuesday), standard brekkers so far.

Yesterday ( Monday ) on an early shift 7am so had a cheese roll because don't really get breakfast till 10.30 ..11 am ish and have been up since 5.30.
Then "proper breakfast " was 2 seeded toast half a tin of tomatoes and 2 rashers of bacon .Didn't eat again till I got home at 3pm ..felt shaky and lack of concentration so tested BG and it was 3.8 . Made a tuna and salad wholemeal roll and hot drink .
Evening meal was 2 low carbs sausages 2 very small potatoes and some sauerkraut.
FBG ( This morning Tuesday ) is 6.3 . Poor sleep was a wake a lot and felt hungry maybe I should have got up and had a snack .

Today I will be repeating yesterday's food - scrambled egg - but will not bother with the ice cream. I buy it for Em and wouldn't normally eat it myself but yesterday it was needed to calm the sore throat. Anyway, today only very soft food and coconut milk and, just maybe, some fruit or herbal tea. Quite like the taste of coconut milk, but not sure about putting it in tea or coffee.

Same every day, Weetabix with blueberries and strawberries. Are all carbs off the menu? Here is me thinking its good for you.

Hi there. No. Not all carbs are off the menu, but many of us choose to take a very light touch with them. That's pretty much what I do and have had decent success with that since 2013.

One thing a number of people do comment upon though is that they don't get on with cereals, and even less so in the mornings.

Do you do finger prick testing on your bloods to see how the things you eat are affecting you? Do you take any meds for your diabetes?

Sunday 15 January bed and FBG 7.8 Back to swimming lessons today with youngest. I am getting really fed up alternating between closing one eye or the other, depending on what I am doing. Thankfully, it is just over 3 weeks until I see my consultant again, and I am praying this will give me a second operation date. Welcome back, @Stephen Bond. @DJC3 it may just be the angle of the photo, but that looked like a lot of chicken. Initially, it looked like two small, whole chickens to me. Closer examination revealed it was drumsticks and thighs?

B. TAG and 2 slices of lightly toasted, SLC fruit loaf with butter.

L. Nothing at swimming lessons with youngest then son wanted a Tesco visit.

D. Oven baked salmon fillets rubbed with paprika and a curry mayo. Cauliflower cheese. A bit beige! I wish I'd gone for my mix of spinach/tomato/walnuts instead.
Campari and soda and a CC little chocolate pot.

Monday 16 January bed 7.6 FBG 7.2. Schools on strike again so I had eldest grandson (plus one of his pals) for company most of the day.

B. TAG and warmed up piece of crustless quiche.

L. After going to Fort with grandson, another warmed up piece of crustless quiche

D. Leftover cold cuts. Haslet, ham, chicken, pork & egg, roast beef, coleslaw and smashed avocado. CC little chocolate pot.

Visited Boots optician today with grandson and they "got" exactly how I was feeling with this eye imbalance. I was after a pair on sunglasses for when eye no 2 is done as the light (particularly with the white snow/frost is going for me. Sunglasses were on sale hence the early visit. I can't read with the right eye (long vision is great) so they suggested a visit as soon as 2nd eye is done to get a temporary, of the shelf 'fix'. There's no way I can go 6 weeks unable to read!

I thought the same when I looked back at the photo. It was actually 4 skinless thighs but that closest one does look like a whole chicken - maybe a bit ambitious even for me!
Hope you hear about your eye op soon.

Had a reply from the GP - "just wait until it medication leaves your system - another day should do it". I'll ne4ed to get in touch again and see if there is any alternative medication which might not have the same side effects.
