Scrambled egg is a great suggestion for 2nd meal today.Hi All
back to yesterday
usual brekkie of slice LC toast and copious tea.
Lunch was egg mayo, slice of ham and chopped salad.
Supper was mini chicken fillets,broccoli and a little Nandos Lemon & Herb sauce.
today same brekkie.
Lunch was a tin of mackerel in spice tomato sauce (don’t like the oil version) and a small avocado chopped up. I am a wuss with avocado but this one was just the right texture for me, not slimy.
Supper since its Firsday will be chunky cod finger, broccoli or cauli cheese.
@Annb I am sorry you are having such a rough time, you are so stoic and brave despite the pain and discomfort. I hope you start to feel good enough to get back on your feet. Suggest comforting scrambled eggs which are quick to make.
Those little pots are so useful for a single portion, aren't they? I have quite a collection because I hate to dispose of anything so well made but I don't use them very often. Quite useful as saucers for flower pots as well.@Outlier I share your joy! I find OMAD difficult too, so a wholehearted congrats from me!

L- 1/2 avocado, 1 h/b egg and smoked salmon
D- airfried pork chop, broccoli and cauli cheese ( I knew those little ceramic baked Camembert dishes would come in useful)
Definitely had some nuts somewhere along the way but no chocolate. View attachment 60215
The pork chop looks lovely - how long do you cook it in the air frier? and do you put tin foil in the bottom or what do you use? (yes, I just got a new air frier - so all ideas and tips are welcome)@Outlier I share your joy! I find OMAD difficult too, so a wholehearted congrats from me!

Your Camembert comes in ceramic pots? Cool. I’m just used to just the the very thin wood or cardboard. For the 3 months we have been here, the resident air fryer has not been turned on once. I doubt the home one will be 24hrs before being deployed. . How differently we live.
A lot of the time it comes in cardboard but once in a while in a ceramic dish. The last one I bought was in cardboard and it tasted horrible! Maybe it was a cheap version or maybe older than I would normally have it and it tasted kind of chemical. Threw it out.Your Camembert comes in ceramic pots? Cool. Do you chop the other vegetables as small as well? I might try to do that next time I have a cauliflower.I've taken to whizzing up cauliflower really small with the hand blender and frying it with onions, cabbage, kale etc in olive oil with various herbs and spices
Before I was using a grater and I'm sure you all know the mess that can happen
Bits of cauliflower everywhere! and then trying to scrub it off a grater...
I cleaned the flipping thing 3 times the other day and there was still cauliflower stuck to the sides like some sort of bizarre magnetic vegetable.
Then I find out we have a chopper attachment to the hand blender, one pulse and its finely chopped and far less mess and much easier to clean afterwards

I bet there are emporia selling Tefal all over. Just sayin’………..I nearly bought another last week in Portsmouth! There was a Tefal shop opposite the hotel which had the new all singing and dancing a/f with steam function for 1/2 price. It took great willpower to walk away and think about it, then keep myself away until the shop had closed.
