Breakfast mushrooms cooked in olive oil followed by two eggs on toast.
Lunchtime a portion of sauerkraut and a few olives followed by piece of my hm LC quiche and some hm hummus, a few nuts and 100% chocolate
Before dinner inspired by my new glucose goddess book developed a mocktail to disguise the taste of the tablespoon of Apple Cider Vinegar I'm trying to adopt as a daily habit mixed the ACV with some lemon juice, a teaspoon of cinnamon, a pinch of pomegranate powder and soda water and enjoyed it. Also ate some olives with my pre dinner mocktail. Dinner HM chicken curry with chopped fresh coriander, mint raita and LC roti plus glass of red wine. For pudding had LC cake and decaffeinated coffee.

Breakfast in hospital, a carb fest of cereals and toast to choose from, so I asked if there was any yoghurt available and yes there was, so I had a full fat strawberry yoghurt with a black coffee.
Black coffee and protein bar mid morning.
Ditto mid afternoon.
Dinner back home, hubby made me a salad as I’m on crutches and under strict instructions to sit with foot elevated for two weeks!
So a chicken salad with a topical coronation mayo!

B- cheese and mushroom omelette.
Lunch- Coronation buffet which we just grazed at through the day. Quiche using a DGF wrap for the base, inspired by @shelley262 ‘s success ( mine wasn’t quite so good looking, I didn’t manage to roll it out to fit an 8” tin so mine was smaller and dumpier) olives, salad, hummus and carrot sticks, open sandwiches. ( SLC bread).
I made red white and blue puddings using strawberry s/f jelly, whipped cream and topped with blueberries and strawberries. Couple of glasses of champagne to toast the king.
Not very hungry for dinner so had a small green salad and olive oil.

Early yoga (first for weeks as have been away and some bits of me had definitely seized up)

11:30 2 soft boiled eggs with 2 slices hm lc soda bread and 8 asparagus stems.
Then got the munchies so 1 sq 85% chocolate, 2 hm lc almond biscuit, 2 tablespoons of rhubarb and pear with ff greek yog, then the same again, then 1 sq hm lc rhubarb cake.
Finally finishes eating at about 2 .

Made an pc rhubarb and ginger cake. Cut into 16 squares for the freezer. Will be my go towhen everyone else is eating party food this weekend.

Also tried cooking some rhubarb, about 150g, with 150g grams of pear to sweeten it. Thought it might be better than using an artificial sweetner. Tasts OK to me, and hopefully too sour for the boys to want any. Probably 30g carbs in the lot and will get at least 4 portions about of it so say 8g a portion of only natural food.

D: 2 sausages, in lettuce wraps with a tiny bit of coleslaw.
What was annoying, last week hubby and I had had lidl cheese and bacon sausages and really enjoyed them. Boy had Lidl toulouse sausages and really enjoyed then, so tonight we cooked both for a sausage tasting off and one of each BUT there was no difference in taste, we all agreed.

Small glass white wine with a lot of soda, small coffee ice cream

Breakfast: Bacon and eggs. Quite late but there will be a second meal but I did have a piece of the brownies that I made yesterday. Should have known better - didn't measure the carbs but it's a lot. Feeling pretty nauseous and bloated as a result. Serves me right - I knew better and I didn't enjoy it anyway.

Something light for a 2nd meal - see if there's any tomato soup in the freezer.

B: 2 halves of the sausages from last night, cold. Still couldn't taste any difference.
L: party here for neighbours. Did have a couple of pieces of a very nice spinach and cheese filo pastry thing, but then lots of olives and some salami cheese roll ups I'd made. 1 spoonful proper trifle, quite a bit of a low sugar tiramisu a fellow t2 had made.
White wine with soda, champagne.
(Out of 13, 3 of us are now T2...am no longer the only low carber in town yay!)

D: will be asparagus, olives, salad and the last of the salami roll ups

Black coffee all morning as didn't feel hungry.
1.30ish starter of sauerkraut with a few olives, chopped herbs and two small tomatoes then last slice of my hm LC quiche then kefir and an Apple peel plus a few nuts
4.30 before dinner a mocktail again to make my new daily tablespoon of Apple Cider Vinegar taste better! Cinnamon and lemon juice really helped . Just before dinner some crispy kale and tenderstem broccoli cooked in oven with some olive oil then dinner of Asparagus, roast butternut squash and slow cooked brisket with glass of red wine followed by LC cake and decaffeinated coffee. I'm feeling significantly fuller with the hack from Glucose Goddess of eating something vegetable\high fibre based as a starter.

I'm feeling significantly fuller with the hack from Glucose Goddess of eating something vegetable\high fibre based as a starter.

This makes sense now I think about it. Mediterranean countries often start meals with a salad, before the main course of fish or meat, it must be the same principle.

Congratulations @DJC3 wonderful results. It's great especially when you've had some higher numbers. My bgs go higher with stress but eating in a managed way seems to keep the hbA1C in normal range. A definite incentive to continue.

Saturday 6 May bed 7.2 FBG 6.6. Busy morning, and I'm getting my hair cut (definitely needed) this morning as well. At least I was able to get the hair done and watch the coronation at the same time.

B. 2 slices of SRSLY toast with ox tongue and whipped cheese.

L. Nothing. I had to get out in the afternoon to fit in a visit to M&S before I collect Hubby from football.

D. Cold cuts! Slice each of ham, roast beef, corned beef, coronation chicken, pork and egg, coleslaw.
CC little chocolate pot and raspberries.

There's a lot of different burgers, sausages, and kebabs in the M&S summer range. Sausages are different seasonings such as peri peri. Cheese and onion burgers, Thai prawn burgers, the buffalo chicken burger is 8g carbs per burger. There's the Asian chicken wings kebab (which I've had) and a Korean lamb kebab. I saw a rather interesting hog roast doughnut burger, but they gad to spoil it by crumbing it, which put the carbs well up! They are doing 3 for £12 currently on the range.

Sunday 7 May bed 7.2 FBG 6.7. Still had swimming lesson today. My son wanted a trip to Tesco, and the eldest wanted a trip to the pet store to get hay for the Guineas! A very busy morning and into afternoon!

B. TAG and 2 slices of SRSLY toast with coronation chicken.

L. Nothing - here, there, and everywhere.

D. Usual campari and soda. Another new M&S item. From their collection range, rump wrapped in sirloin to form a beef joint. It had a herby melt on top, which you used to baste the joint periodically. Only took 35 mins to cook plus 10 mins to rest. Had it with asparagus and green beans. Asparagus is fab right now.
CC little chocolate pot and raspberries.

Wonderful concert from Windsor. Nice just to be able to relax and watch. I did laugh at one comment that described Katy Perry's dress as the "Quality Street toffee penny wrapper!"

Just waiting to see if my brother and SIL can get off the cruise ship they are on which is currently sitting in Stornoway harbour but not letting passengers off because the sea is too choppy for the tenders to get them ashore. Neil is ready to go and collect them and bring them here, if they can get off - he's even tidied up the car for their benefit. Not cleaned it mind - that's probably going a bit too far for him, but he has taken all the jump leads, spare battery, cables, plastic boxes and bags, out of the rear seat section so they can actually get in comfortably.

I knew today would involve lots of carby things for me to avoid so I have just made my mind up to it being there and to pack up all the leftovers for Em's family. It's beginning to look as though there are going to be more leftovers than I anticipated.

No - good news. They are ashore and at the ferry terminal waiting for their lift. It's drizzly so I don't suppose they'll wander off. Neil's just gone out of the door to get them.

Breakfast was a hard boiled egg, chopped into chunks with some spring onion and tomato, also chopped and some may drizzled over it.

Goodness knows what the 2nd meal will be.

have missed lots of posting but having speed read a few remarks. @Rachox hope you are on the mend and well done negotiating hospital food. @DJC3 congrats and well done on your superb HbA1c.
Back to Saturday.
Brekkie usual slice LC toast, lots of tea.
Lunch was small plate salad and cheese watching the Coronation and after.
Then spent a couple of hours cooking for our Coronation family gathering on Sunday.
Supper was Indian t/a of Tandoori King Prawns and cauli bhajee.
Sunday same brekkie.
Then one meal spread over a couple of hours. I made Coronation Quiche changing butter beans for roasted local asparagus. Turned out well and managed to get the shortcrust pastry super thin and crisp so I felt able to have a slice with mixed salad. I also had a spoonful of Morrocan salad which is my version of a cauli one I had out a year ago which is florets rubbed with Ras al Hanout loosened with oil and baked. Then stir in chickpeas and sprinkle pomegranate seeds then blobs of Morrocan humous and Greek yogurt and top with fresh mint leaves. (goats cheese was used in the original recipe but not to everyones taste). This time I used chunks of Butternut squash instead of cauli and it worked really well other than it was softer. Both sons & partners love BS. Otherwise made a big seafood paella (Bomba rice)using lots of fresh prawns, mussels in shells (essential for taste), squid rings. I picked out a small spoon mainly the rice clinging to the shellfish. I didnt dare think about the carb value but I ate less than the others and that was it for the rest of the day. Thats my excuse! Three of my inner circle are vegetarian and it actually worked out quite well. Lots of French rose for the girls and Heineken 00 for the boys!

Today same brekkie
Lunch was a Ryvita with Dairylea and tea.
Supper will be Thai chicken stirfry with rainbow pepper strips.

B: Scrambled eggs with mushrooms, salsa, mozzarella, and sausage.

L: Cup of mushroom soup, two babybels microwaved for 2 minutes to make crispy cheese.

Snack: A 40g Fulfil protein bar. I love them but the 55g ones are too big for me to tolerate.

D: A meal from a Green Chef box. I decided to take a bit of mental pressure off and treat myself to a few boxes.

I think it's pork steaks and cavolo nero tonight.

I did a bit of 'baking' too, and made cheesecake fluff from the sugar-free londoner blog. It's far too creamy and not tart enough for my taste. I didn't want to waste it, or faff about adding more cream cheese, so I've frozen it into little pieces.

When they're solid, I'm going to coat them in 90% Lindt and some toasted coconut, and keep them in the freezer. I think they'll end up as little ice-cream squares. Fingers crossed!

A good 50% of low-carb baking is crossing your fingers and hoping!
