What have you eaten today? (Low carb forum)

Your food looks so good @PenguinMum , I confess I had to look up bomba rice, I’d never heard of it. I was hoping it’d be some new kind of lc rice!
@Stardew I agree there is definitely a lot of finger crossing involved in lc baking.

Today I had to run an errand for no3 daughter, which took most of the morning. Lovely girl gave me a big box of Cheesies as a thank you so had one of the chilli variety around 11:30. ( black coffee up til then)
Big bowl of salad with a Hb egg when I got home later.
Dinner was leftover chicken Shish kebab with cauli rice and more salad dressed with olive oil.
A DGF raspberry coconut Square topped with clotted cream to follow. It was a bit like a cream tea, delicious.
 
Decided today that would split my tablespoon of Apple Cider Vinegar - a third in each of my two salad starters and remaining third with soda and lemon before my dinner and this worked better for me. I buy a fermented Herefordshire Apple cider vinegar with a mother and I'm sure it's best for me but getting sharper to the end of current bottle! New bottle tomorrow may be milder.
1.30 small salad starter of sauerkraut, olives and one small tomato mixed with ACV. Main made a two eggs omelette with cheese and fresh basil then peel of one Apple and some kefir
Mid pm had a couple of squares of 100% chocolate with cup of weak black tea
5.30 small starter salad and soda and lemon both with ACV

Main steak with mushrooms and onions and four hm small chips using par boiled new potatoes which I had cut into chip shapes and frozen a few weeks ago I cook them in olive oil from frozen. A small glass of red wine - these bank holiday s are not helping my usual habit of no alcohol on a Monday! Just had LC lemon drizzle and decaffeinated coffee.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: a portion of bolognese out of the freezer with a side salad (minimal prep so as not to be standing too long on my operated foot)
 
B: a cold sausage, ff greek with chia seeds and a tablespoon cooked rhubarb
Lovely walk and catch up with a friend. The bluebells were stunning. We have a local wood few know about so had it to ourselves
L: leftovers from yesterday, salami and cheese with gherkins, spoonful Coronation chicken. 2 squares 85%.
Did have a few small chocolate biscuits while playing a game with family this afternoon . Will not become a habit as that the last Chirstmas contraband gone now, and they were bit stale.
D: roast chicken, broccoli, buttered leeks and roasted peppers.
Coffe ice cream (this is becoming a habit which I must stop)
 
Just waiting to see if my brother and SIL can get off the cruise ship they are on which is currently sitting in Stornoway harbour but not letting passengers off because the sea is too choppy for the tenders to get them ashore. Neil is ready to go and collect them and bring them here, if they can get off - he's even tidied up the car for their benefit. Not cleaned it mind - that's probably going a bit too far for him, but he has taken all the jump leads, spare battery, cables, plastic boxes and bags, out of the rear seat section so they can actually get in comfortably.

I knew today would involve lots of carby things for me to avoid so I have just made my mind up to it being there and to pack up all the leftovers for Em's family. It's beginning to look as though there are going to be more leftovers than I anticipated.

No - good news. They are ashore and at the ferry terminal waiting for their lift. It's drizzly so I don't suppose they'll wander off. Neil's just gone out of the door to get them.

Breakfast was a hard boiled egg, chopped into chunks with some spring onion and tomato, also chopped and some may drizzled over it.

Goodness knows what the 2nd meal will be.
We had a lovely day and now they're gone again and the ship has sailed. They had lunch of the pasta with Bolognese sauce and so did I, but I did only have one serving spoon full. Very tasty. Lots left over. Just a short time before they left, I became very dozy and was finding it hard to concentrate on what my brother was saying. I was wondering if Neil had turned the heating on because I was hot and sweaty. Then I realised. Checked my Libre. 2.9! It hadn't warned me (probably because, in my tidying splurge, I'd dropped it into a stoneware jar, but I don't know). Took a small piece of the brownie and waited for it to work. It didn't. Then another - no change. Em came in and I asked her to get the jelly baby jar from my bedside. Took one - waited for it to work. It didn't. Took another. No change. Then another. No good. Checked the ingredients in case this was some new, low sugar jelly baby. Ingredients - sugar, glucose, fruit juice. Took another and fell asleep. Woke up choking on sugar reflux but managed to force a breath in and got over it. Checked BG - still 2.9. Had a few forks full of the remaining pasta. BG rose to 3.9. Had another small helping and it rose to 4.1. At least my guests didn't realise how bad it was and went away with Neil to get their tender back to their ship. Em stayed with me to make sure I was allright until her dad arrived to pick her up. Dozed off again and woke up just after 9 pm with BG at 7.1.

I did take a dose of insulin to cover me for the pasta at lunchtime, but it was only a small dose because it was only a small helping. Must, for some reason have been too much. Why the additional carb and sugar didn't make it rise, I have no idea. Misjudged it, obviously. Not bothering with clearing up and am heading for my bed now. The dishes can wait until tomorrow.

@Annb are brownies full of butter or some other kind of fat? If so they wouldn’t raise my BSL fast enough to treat a hypo because the fat slows things down (which is why chocolate isn’t generally recommended for hypo treatment). I was going low last night (i think I managed to stack my lunch and dinner insulin because ai had a very late lunch), but not in hypo territory, and wanted to raise my blood sugar so had 2 orange juices. I figured it was either: a) from the fat and protein in my dinner slowing down the orange juice; b) my dinner bolus; or c) a combination of both. I averted a hypo but everything took a long time to work

So I will have salad or avocado or broccoli before a meal now. See if that works better. Today I shall fast for as long as possible but will hard boil some eggs if necessary. My bg is slowly coming down so hopefully heading in the right direction. Have a good day everyone.

Yes brownies have equal quantities of butter and sugar as well as some flour and cocoa. The chocolate, of course, also has some fat in it, although it was a very dark chocolate. Normally though, it would send my BG soaring. But this time even the almost all sugar and no fat jelly babies didn't do it. The pasta, I suppose, eventually did. In the end, it was quite a large portion of the pasta. One more puzzle for me.

Egg mayo for breakfast today (I had boiled a few eggs, in case anyone wanted an eggy salad). That will be in a few minutes' time. BG this morning was 8.9 so I shall only take the smallest dose of insulin.

2nd meal will be cauliflower cheese - just cauli, cheddar and cream. That should be safe enough.

Appointment with the dietician this afternoon. Bit of a waste of time even though it is a referral from the medical clinic for weight loss advice. The person I'm seeing saw me before and said she knows very little about diabetes and referred me on to the normal one who deals with diabetics - that appointment never happened. Probably the same again today but at least she might refer me on more forcefully this time. Don't know why I am bothering really - they don't approve of low carb diets. Apparently I need carbs to allow the insulin to work. I tried to argue that if I didn't have carbs, I wouldn't need the amount of insulin, but that didn't wash. If I don't go, though, they will probably wash their hands of me again and leave me to my own devices. That's what they did with my arthritis when I refused the surgery they were offering.

're the ACV a lot of them are with the mother and are still actively fermenting. If you have a sensitive gut I'd imagine they could cause upset unless really slowly introduced. If you look at what the Glucose Goddess says you can use other vinegars to get same effect. Why not try something like white wine vinegar? You could mix some with olive oil for a dressing to go with a pre meal salad or a teaspoon in lots of water and see if you can tolerate it better?
When I was on Metformin,as I was on first diagnosis, I had a very unhappy gut. now been lucky enough to be off meds for 6 years and the last year or so I've been deliberately working on improving my gut permeability and gut bacteria diversity and , crossing fingers, no problems 're the ACV apart from strong taste. The GG says all vinegar s work to help flatten bgs if taken before a meal. But like all these hacks and adaptation s they have to both be something you can keep doing and they have to work for you. Our experience here is that you need to keep trying and testing -what suits one person may not someone else. Gut issues can just make it impossible for some people to eat certain keto foods for example many fibre based sugar or flour replacements. We are all experimenting on ourselves to cut the carbs but puzzle out too what works best for our bodies as well as our bgs.

Only black coffee for me so far today but planning as well as some salads something egg based and also marinated chicken. There may also be a small glass of wine too!
 
Eeeek, Annb, well done for spotting your hypo symptoms. Bodies are weird things. Hope you're feeling better now.

I am still getting over my cold/cough and feeling guilty about taking the day off work. I'm so much better than I was last week, but my husband came down with it too, and I exhausted myself looking after the kids while he was at his worst. I need today to rest while they're all in school and work, but obviously am beating myself up over it. I have very well-managed heart failure but when I get ill is when it frustrates me the most as it takes so fudging long to recover from minor illnesses (is swearing allowed? ).

Anyway, enough moaning!

B: Coffee with cream. I can't be bothered with anything much this morning, but need to eat soon to take meds, so will grab some cheese or a bit of greek yogurt for that.

L: I got my recipes from my Green Chef box mixed up so I have leftovers from yesterday's dinner, which was basically mildly-spiced chicken with broccoli and cavolo nero in a peanut and coconut sauce. Looking forward to that as broccoli and coconut together are a new pairing for me and I really like it. Photo attached.

D: What should have been yesterday's recipe from the box - some sort of pork steak and mushroom thingy.

Monday 8 May - a day of rest?? Hubby was unwell and in bed until noon. I was being quiet until then, so I got washing done and started on cleaning range cooker. When he emerged, I stripped down the bedroom and got behind the bed to give it a really good hoover. To my horror, I discovered Hubby had spilt a quantity of cough medicine on the carpet and failed to clean it properly (he hid it!). That's a job for tomorrow, though.

Great results, @DJC3 ! You must be delighted, and rightly so. @Annb, it must have been lovely to see your brother and SIL, even if it was a short visit. Best of luck with the dietitian!

Planned dinner: Mexican chicken (really spicy), a few peppers, and some cauliflower rice - I made enough for a couple of days and then just need to add the rice when eating.

Also, waiting on my seriously low carb order and dreaming of eggs on toast :D
 
Amazingly, this time the dietician seems to have learned about diabetes. She didn't offer to refer me to anyone else and she did recommend the Diabetes UK website. Glad to hear about my weight loss over the last 2 - 3 months. Said I'm due my next HBa1c check now and will arrange it since the diabetes clinic hasn't. Also putting me on the waiting list for a weight management programme run by the local NHS but it will take a long time to come on to the top of the list. Meantime she will be happy to see me again and check how things are going. She didn't complain about low carb at all but she did say that at my weight I should be drinking 3+ litres of fluids daily, not 2. I'm even finding the 2 litres difficult.

Currently on a cup of tea, with milk (not good apparently) but at least it's fluid. Had a small spoonful of the cauli cheese while making the tea. It was cold and it's delicious. Too much fat, according to the dietician but she should just taste it! I'll heat it up shortly and have an early 2nd meal. That might mean a snack of some sort later on. Another hard boiled egg maybe.

I had scrambled eggs on SRSLY toast this morning, but poached egg on ham on toast is not to be scoffed at!
 
Tuesday 9 May bed 7.2 FBG 6.7. Back on the school runs (and no holiday next Monday either).

D. M&S Korean chicken kebabs (no sauce It had glucose syrup and other nasties in it). A salad of lettuce, tomato, avocado, cheese, coleslaw, and mayonnaise. They are very spicy.

CC little chocolate pot and raspberries.

Finally!! On Masterchef last night, we had a low carb/low sugar entrant. His daughter is T1, and he's taught himself LC so she can have better versions of treats. He made a good-looking LC chocolate tart with a hazelnut base. The poor guy was getting dogs abuse on social media for "child abuse"?? How dare he not just let her eat what she wants and just inject insulin to compensate.

I do know some T1's that eat/drink whatever they want, and they are not what's I'd call healthy. Constant highs and lows with a few hospital admissions thrown in.

He's through anyway, so I'm looking forward to seeing more of what he can do. 20230509_190535.jpg

Spent the morning batch cooking as I’ll be out and about the next couple of days. Nibbled on a fair bit of cheese so wasn’t really hungry for lunch, but managed a DGF raspberry cake and the last of the clotted cream.
D- DD keto tuna casserole with a green salad. Some Montezuma’s absolute black orange chocolate.

@maglil55 thanks for the tip off re the lc contestant on master chef. I keep meaning to email the GBBO team and suggest a low carb week.
@IBEX82 eggs on toast has always been my favourite breakfast too. it was such a joy to discover I didn’t have to give it up.

Oh yes, eggs on toast is one of life’s pleasures.. if I am feeling adventurous I might add a little a avocado once in a while :D
