What have you eaten today? (Low carb forum)

B: ff greek with chia seeds and rhubarb
L: 1 hard boiled egg, a little ham, olives, almond, a little cheese.
More garden visiting today, 3 in total. All lovely and different.
D: cooked for me! roast chicken, green beans, broccoli, carrots and a little gravy.
Pud was my first ever DGF brownie, courtesy of my sons gift to me. Very tasty but it did make me want more. Luckily the rest are in the freezer.
 
My birthday today! Happy birthday for tomorrow, @MrsA2. May birthdays are lovely when the weather is nice.

B: Sausage patties with chaffles and courgette.

L: Chicken satay sticks, protein pudding, both grabbed from Lidl and eaten in the car. Made myself a spoon for the pudding out of the foil lid and felt like a genius.

D: After a long trample through the woods, we found a pub. It was the first time I've had to ask for changes as nothing on the menu was quite right. They happily swapped chips for broccoli and so I had steak, broccoli and pea shoots with peppercorn sauce.

Called in to Sainsbury's on the way home and spotted Truvia was half-price, so I loaded up on that as it's my favourite sweetener for drinks and sprinkling on things.

Dessert was also from Sainsbury's and I tried a Coconut Collaborawotsit chocolate pot for the first time (they were reduced) with some raspberries and a dollop of clotted cream, also reduced.

I'm going to have a crack at making low carb ice-cream tomorrow with the rest of the clotted cream.

Belated happy birthday. It’s nice to read that the pub happily swapped the chips for broccoli.
Re ice cream, I just mash up frozen fruit with double cream. The fruit starts to freeze the cream so within a few moments it’s like a soft scoop ice cream.
 
Scrambled eggs and chilli sauerkraut for breakfast.
Then spent the day on the beach: Packed lunch of SRSLY roll filled with Turkey breast and coleslaw. Celery sticks olives and a pack of Cheesies. Cup of black coffee from the beach hut when the others had ice creams.
Dinner at home: ACV in water then more sliced Turkey breast, Brie, cherry toms, avocado, more chilli sauerkraut ( it’s addictive). Followed by h/m yoghurt with rhubarb and seeds. Few nuts and 2 glasses dry white wine.

Sunday 21 May bed 7.9 FBG 7.8. Happy birthday, @Stardew & @MrsA2. Swimming lesson day and another Monday holiday tomorrow! I have to fit in Hubby getting to football and picking him up again later.

B. TAG and 2 slices of SRSLY toast with ox tongue and coleslaw.

L. Nothing - out and about.

D. Campari and soda. Roast lamb and lots of veggies. Seared it first, then into the IP with stock, rosemary, and thyme. 30 mins on high, 30 mins slow release. Transferred to my lidded casserole, with loads of veggies, lamb, and veggie stock. 160°fan for 2.5 hrs. Lovely and tender.

CC little chocolate pot with blackberries today.

@Stardew - keto ice cream tends to go rock solid, BTW. There's also a few off the shelf ice creams that are kind of doable so long as you don't go over the top - Oppo, Halo Top, and some of the Jude's ice cream. They all go rock hard, too, but a quick microwave blast sorts it. View attachment 61012
Adding alcohol helps to keep it from freezing, ala Nigella’s various no churn ice cream recipes.
 
Breakfast: (shortly to take insulin and get 10.9 BG down a bit) egg mayo on RyVita.
2nd meal: curried lamb with caulifower rice.

I have never like swede very much but I had decided to make celeriac chips to go with my garlicky chicken last evening. I got the celeriac out of the larder to find that it had rotted within its plastic wrapper - Neil only bought it last Monday so it should have been OK. Had to dump it and was left with half of a smallish turnip (swede) so I cut it into thick chunky chips, tossed them in lemon juice and microwaved for 5 minutes. Then I put them onto a baking tray with some butter and roasted them. They were in no way the same as potato chips, but they were delicious. The lemon made all the difference - it's the sweetness of turnip that puts me off. Adding more to the Tesco order for next Thursday because I will definitely be experimenting with turnip and lemon next weekend. Must remember to add lemons as well.
 
Morning all. Couldnt go to my granddaughter yesterday so after Pensioners lunch today, I shall go. I'm sure the ACV is lowering my bg's .so I'm definitely keeping on with that. I have 2 teapoonsful in a glass of water, a tablespoonful is too acidic for me. Will take my bg before lunch and then 2 hours after to see if it's made a difference. Have a good week everyone and see u at the weekend. :joyful:

D: baked fish with leek, bok choy, zucchini, chilli, ginger, lemon myrtle leaves; dessert no added sugar choc ice cream

I had to have an orange juice mid-afternoon as after chopping firewood I was heading low, but I call orange juice ‘medicine’ and am sticking to that :)
 
One of those not very hungry days. Stuck to my new habit of ACV in water at lunchtime and Dinner time even thought didn't fancy any lunch
Breakfast small portion of kefir
Dinner small salad starter then pulled pork with hm hummus, sauerkraut and LC wrap then LC cake with decaffeinated coffee.
 
@Annb thanks for the swede chips recommendation, I shall try that.
@shelley262 I hope it’s just the warm weather causing your loss of appetite, not some lurgy brewing.
Todays food-
B- cheese omelette with chilli sauerkraut.
L- small salad with ACV/ EVOO dressing to start, then SRSLY roll filled with pate. 1 DGF cake, not sure of the flavour but I wasn’t keen. Had a DGF peanut butter Easter egg to take the taste away. Mistake! Had another then had to take Dennis out for a walk quickly to stop me eating the rest. Another thing I can never buy again
D- ACV in water. H/m double cheeseburgers in lettuce wraps. Served with salad ( eaten first) 1 glass red and followed by rhubarb, h/m yoghurt and seeds. IMG_2496.jpg
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: coffee shop coconut cappuccino and a carb killa bar.
Dinner, it must be burger night @DJC3 ! I had lamb burgers on a LC roll with a smidge of rosemary jelly and a leafy salad.

Lunch: smashed avocado with poached egg on srsly low carb toast

Dinner: was not really too hungry so had cheese on srsly toast. Then around 8pm was peckish so I had some yogurt with a few strawberries

L: ham, olives, half a small avocado and pate spread on cucumber slices.
A DGF cake, didn't like the buttercream type topping but then I never liked real buttercream either. Liked the base though, but can see they are very moreish

A walk this afternoon proved difficult in the wind, felt I was having to work hard against it. Lc cocoa with cream

D: cold chicken with caulifower cheese and roast peppers. Shared the other DGF cake with carb eating guests who all agreed even 1/4 was too sweet.
3 glasses red wine
 
Breakfast: just finished - 2 RyVitas with plenty of butter (because it was cold and wouldn't spread) with egg mayo.

2nd meal will be the remainder of the curried lamb from yesterday. I didn't bother with the cauliflower rice because I just didn't fancy it (I can go off cauliflower very easily) and shan't bother with it today either - the curry itself is enough.

Trying to figure out a very low carb biscuit or cookie to take to a small function tomorrow. Trouble is, for me it can't contain any kind of sweetener or real sugar so it has to be made of maybe chocolate (as close to 100% as possible), egg (although they are being rationed again in our supermarket), butter, maybe peanuts and/or peanut butter, coconut/coconut flour and possibly - horrors - banana as a sweetener. I will make some savoury scones with coconut and cheese but not sure how the cookies will work out.
 
Back to Sunday
brekkie was usual slice of LC toast, good butter, copious tea.
lunch was scrambled eggs.
supper was Thai chicken stirfry mix from the farm shop with mixed pepper matchsticks. Wedge of Duris cheese (rich soft farmhouse cheese)
Then horrendous bout of v&d overnight likely due to the rich cheese or at least not helped by it. So not buying this again, its too rich and fatty for me to metabolise. Yesterday was a slice of toast at brekkie then just liquids and small bit of chicken and asparagus in the evening.
Amazing the effect on raising BG.
So far today usual brekkie of slice LC toast and tea. Still not quite right as tea didn’t taste as good as it should. Will try AVC in soda water at lunchtime.
Not sure after that.

@DJC3 and @MrsA2 agree with you both 're the sweetness of some of the DGF cakes it's always the ones with buttercream I find - like you both I didn't like butter creme type cakes even before I gave up sugar and I feel that even though eyrithritol is used rather than sugar the butter creme ones taste way too sweet. I only buy the very plain cakes prefer no icing at all. Means you have to avoid the mixed boxes @DJC3 also agree with you 're their milk chocolate products I tried their notella eggs and they were delicious but won't buy again. Sticking to 100% chocolate seems to be most successful way for me of not rebuilding my sweet tooth and not triggering any addictions to sweet stuff. I can stick to just one DGF lc cake if plain and a couple of squares of 100% chocolate but don't want to regrow my sweet tooth! I do know though that they work really well for some and think that if they don't trigger over eating of them for you that's great -it's working out just what works for you and keeps you on the low carb route.
Woke up hungry today after a non hungry day yesterday so ,as was going to be out all day decided on a proper breakfast
Breakfast one slice of bacon, egg and mushroom on LC toast.
While out I had a Fatt nut bar - 2g of carbs - they don't have sweetener so not over sweet but texture a bit odd and oily - still I ate it and it kept me going!
Pre dinner ACV in water and some veg crudites and hm hummus then slow cooked hm Bolognese and large glass of red wine. Then pudding some strawberries and yoghurt.

@shelley262 I couldn’t agree more about not wanting to regrow my sweet tooth. I was astounded at how quickly all the old cravings came back and how totally useless I was at resisting. Back to Montezuma’s Absolute Black ( but I still have a box of the eggs to finish!)
Todays food:
B- ham and 2 fried eggs, chilli sauerkraut.
L- prawn cocktail but ate 2 celery sticks first for the fibre.
D- picked up granddaughters from school and made dinner for us all at their house. ACV &water (just for me!)then 2x Waitrose 1 Cumberland sausages, mash and broccoli for them, mushrooms and broccoli for me. Put my second sausage in a DGF wrap with sauerkraut which reminded me of the little street sausage bars we enjoyed when visited Vienna a few years ago.
1 DGF peanut butter Easter egg which I bought with me.
Just got home so a relaxing glass of white wine is sitting beside me. IMG_2504.jpg

Woke after a good night's sleep but within minutes a migraine struck so back to lie down in dark room for another hour.
B: a bit of ham and a few olives as trying salt to stop the migraine
Dancing class 1
L: caulifower cheese with added ham. Ff greek with cream 4 chopped almonds and a sprinkle cocoa powder. Migraine hit again immediately after eating.
Dance class 2.
D: vegetable fritatta, green beans and asparagus
(Missing @Goonergal , she was so helpful about migraine)
