What have you eaten today? (Low carb forum)

It was these little beauts. A whole pack is too much for one person. 100g is more than 1/2 the pack and pretty good nutritional values.
Are they in the frozen section?
I just realised that a good friend of mine is currently on the ferry to Harwich for a holiday in Scotland. I asked her to buy them for me, should she stop at a Sainsbury on the way back.

I also asked her to bring 2 pots of Branston pickles! :joyful:
 
No breakfast as I was on school run duty then had to take Dennis for his vaccinations.
Late morning- big spoonful of sauerkraut, DGF wrap filled with smoked trout, cream cheese and lettuce, then h/m yoghurt, rhubarb and seeds. @shelley262 have you tried eating the ginger slices after they’ve been slow cooked with the rhubarb and lemon? I ate one accidentally and now I’m hooked! I’m going to try dipping them in dark chocolate. I used to love chocolate ginger, it reminds me of my dad.
Early afternoon dip in the sea, proper swimming not my usual bobbing about. Pack of Cheesies and a black coffee afterwards.
Got home and felt a bit drained - I think I’d used more energy than I realised. Had a cube of cheddar and some nuts.
D- pheasant in garlicky creamy white wine sauce, with broccoli and cauli ( eaten first) 2 glasses red. IMG_2510.jpg

Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: scrambled egg on marmite on LC toast.

I've been meaning to ask for a while, but could you share your 'porridge' recipe please? I'm always on the lookout for different ones.

Food today for me:

B: Almond flour waffles with a bit of cheddar and grated courgette mixed in. Served with spinach and some aubergine, done in the air fryer.

L: Homemade iced coffee with almond milk and some sugar-free syrup.

S: Random protein bar from the local Polish shop that was about 15g carbs and I assume was coconut flavour.

D: Donner kebab meat and salad with obsence amounts of garlic mayo, as is right and proper. Followed with a little bit of Pure Heavenly chocolate. I got a sample box for my birthday and have been enjoying trying all the flavours.

B: 2 scrambled eggs and quite a few nuts while I was cooking some to gift to a friend.
Also cooking rhubarb to freeze so picked at least as well
Went for walk to try to ignore lunch as feeling bloated and uncomfortable.
Slept in the afternoon. Keep sneezing, maybe I have a bug?
D: pack of pork crunchies and several spoons of rhubarb as I put into ice cube trays for freezing, all of which meant I lost my appetite for the steak and broccoli and carrots. Steak was tough so have put that aside for tomorrow.
Did finish off the very tasty coconut milk and chocolate and chia pudding I made a few days ago.
 
Cream of mushroom soup for brunch - bit too late to call it breakfast.

The salmon that I ordered came in the Tesco order but it was frozen. I hadn't realised that, although I should have. Everything else was fresh, but unavailable and I didn't notice that this was not fresh. It was too late to defrost it for yesterday's second meal so I put it in the fridge to defrost by today. Thought I might just have the salad I'd planned but in the end didn't bother with anything. So it's all still there for today. First, though, I have to take some more pain killers and rest my legs for a while. With any luck that will leave me able to make my meal.

We are currently having an egg shortage, but I think it's one of those Island things - when there is a whisper that there may be a shortage of anything, those who can, dash to the shops and buy up all the stocks, leaving others short and that continues for a while until eventually it peters out. Tesco are rationing customers to a dozen eggs and even so, didn't have any for my order, but Alistair managed to get me some from another shop. Seems to be a problem with Greek yoghurt as well - none to be had. No idea why that is.
 
Cooked last of my rhubarb crop this morning with lemon and ginger in slow cooker as usual . @DJC3 no I hadn't tried eating the cooked ginger root just drunk the infused cooking water but will try it this time, thank you for suggestion - dipping it in chocolate sounds creative and tempting.

Breakfast two boiled eggs
Lunchtime some of my rhubarb with yoghurt and a few squares of 100% chocolate
Mid pm slice of LC fruit loaf toasted and buttered.
Dinner starter of salad and glass of ACV in water then salmon in lemon butter with roasted asparagus and a few hm frozen new potato chips and glass of red wine followed by LC cake and decaffeinated coffee.
 
Early morning dog walk then open water swim. I can’t think of a better start to the day.
B- ham&cheese omelette ( 2 eggs)
L- air fried veggies with a tahini dip ( tahini mixed with lime juice, garlic and water to thin it). H/m yoghurt and rhubarb.
D- ACV in water and crudités to start then leftover curry and a glass of dry white wine. Finished with lazy mousse a la Goonergal ( melted dark choc mixed with double cream) and a chocolate ginger slice which I loved. ( made from the ginger left over from slow cooked rhubarb) IMG_2516.jpg

B: ff greek with chia seeds and blackcurrants. A chicken drum stick.
L: at garden centre cafe, a chicken ceaser salad. Gave croutons to hubby, otherwise it was very low carb.
Mid afternoon, a bit of hubby's ice cream. I've told him he's not to let me any more.
5pm a glass of wine, first of year at local brewery's outside events. Added soda water and ate a lots of cheese, nuts and olives I'd taken along.
D: 1 sausage and salad. 2 sqs 85%
 
Morning All
so back to yesterday
brekkie usual slice LC toast,butter and copious tea. Have to have two large mugs before I do anything but add the teeniest drip of milk, proper builders on steroids.
lunch was small plate chopped salad and finger of cheddar crumbled over the top and 4 pickled silverskin onions.
supper was smoked haddock, skinless, cooked in double cream with a large handful of chopped parsley and a teasp of dried tarragon. Served with cauli rice.
Today same brekkie.
Lunch is a mystery but have an avocado that needs using so might have that with tinned fish.
supper will be Tandoori King Prawns and cauli bhajee. Maybe a cheeky gin & soda or two beforehand.

Wednesday 24 May - bed 7.7 FBG 7.9. This was a chaotic day. Hubby going to football, boys here for dinner, and it was final revision day for eldest before his maths assessment.

B. TAG and 2 slices of SRSLY toast with ox tongue and coleslaw. Benecol dairy free.

L. A bit crustless quiche in between maths revision.

D. By the time I got the boys home & Hubby to football, I didn't have a lot of time, so I had 2 slices of SRSLY toast with melted cheese and SRSLY LC pickle. CC little chocolate pot. Then I had to head out again to pick Hubby up from football. At least they won!

TV, landline, WiFi have been down most of the past 2 days, so it kept me busy.

Thursday 25 May - bed 7.6 FBG 7.9 Normal service restored, so I was able to print the maths revision sheet for eldest.

B. TAG and a bit crustless quiche

L. A SRSLY sandwich with ox tongue and coleslaw.

D. I coated chicken drumsticks & thighs with paprika, hot sauce, and some chilli, then air fried them. Stir fried broccoli with mini santini tomatoes in butter & paprika plus tabasco. Asparagus on the side. I also added a spicy mayo that had paprika and hot sauce in it.

I've never thought of mixing broccoli with tomato but it sounds like a great idea. Must get some broccoli on Monday to try that. I'll also get the closest I can to the mini santini tomatoes but doubt if I can get the real thing here.

Breakfast today was the salmon and spinach that I didn't have yesterday. I did try to eat it lastg evening but it was so disappointing. the frozen salmon was just like vaguely salmon flavoured cardboard. It was supposed to be wild Atlantic salmon, and maybe it was but not anything like the farmed salmon that we usually buy. Goodness knows how old it was. I mixed it with, probably too much, mayonnaise, just so that I could use it up. Lots of spinach left so will have to make some curd cheese to make some kind of spinakopita mix.

2nd meal will be some kind of spicy chicken with maybe some leek and potato cakes from the mixture I have in the freezer and see what that does to my BG.

My goodness, it's beginning to sound as though I expect to have some energy left to do the cooking or eating.
