What have you eaten today? (Low carb forum)

B: FF greek yoghurt, raspberries, drizzle of Choc shot. Coffee with cream.

L: Leftovers - med. veg with cauliflower rice and homemade strained yogurt cheese.

S: Dehydrated crispy kale, protein bar.

D: Marmite courgetti and mushrooms, with walnuts. It's my version of Nigella's marmite spaghetti and I love it, it's so quick and easy. Butter, marmite in the cooking water and bit more added at the end, parmesan and black pepper. I used chedder instead tonight. Wednesday 31 May bed 6.8 FBG 6.5. A bit of running about, but then what's new? Boys here for dinner as well.

B. TAG and 2 slices of SRSLY toast with the last of the 1st Ploughman's Pate. Benecol dairy free.

L. Almonds

D. Having made a beef stir fry with 3 different noodles (udon, egg, and gluten free) for everyone else, I wanted something simple. I made a SRSLY pizza with tomato, cheese and salami. CC little chocolate pot with raspberries. A Moretti Zero this time. 20230531_185409.jpg
 
Breakfast: scrambled egg with mushrooms and pork mince cake - half a cake is enough for one meal - very tasty though.

2nd meal: salad with smoked mackerel. The mackerel came with the shopping and I will enjoy that later today.

The chicken in the order is short dated and should be used by tomorrow so I guess I'll have to at least prep that today, if I have the energy. There are other things to be done today as well, the most tiring of which is putting a new cover on the quilt. I use the method that @maglil55 suggested some months ago but I still find it exhausting. Then there is more sorting out of wardrobes to be done. If I make a start fairly soon, I might get some of it done.
 
Well, the day is half over and I've done none of the things I intended. I was about to start when 2 visitors arrived. One I haven't seen in about 20 years and one I see frequently. They have spent half the morning and half the afternoon with me and have just gone.

Rustled up some lunch from the fridge delivery yesterday but didn't have any "goodies" in to offer. I usually try to have something in "just in case" but hadn't got around to making anything this week (lazy me). Also didn't get around to prepping the chicken, or covering the duvet.

Must do the duvet before giving up for the day. May just put the chicken in the freezer. Used most of the salad for lunch, with some ham and some cheese but didn't have much of it myself. Still have some tomatoes and cucumber left to go with the mackerel.

Also discovered that the instant coffee I had has absorbed moisture and set in a solid lump - just about scraped enough from it for one cup of coffee so must put some more on the next shopping order.

But I did get my 2 cake boxes back, one of which went home from the last event in Stornoway, with the remaining cake and one which had gone missing from a previous event. Unfortunately, my friend had taken one out of the freezer and pried the lid off while still frozen. Didn't do the lid much good. "But it still closes" she pointed out. And, indeed, it does, but there is a huge crack and a hole crossing the lid. Ah well, maybe I can use the box itself for something. Just as well I'd given up on those boxes and bought new ones.

sorry been MIA for a couple of days.
Last night was the first night of our hols in Suffolk and had pub meal of steak, mushrooms and salad. Did also have one of Mr P’s sticky ribs as he had a whole side. It was delicious but probably not wise and then I had another one. A couple of gin and slimlines before and a glass of red with just to get in the holiday mood ;) Today Brekkie was slice LC toast, butter and copious tea. Lunch was at a cafe at an animal wildlife park and the least dangerous option available was a small bacon bap freshly made and a mug of tea. BG soared in straight line and just as quickly crashed in another straight line! On track now for going out for supper, Indian tonight but not a menu I am used to, more fish/seafood than meat so hope to navigate maybe tapas style.
 
Hi everyone

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablets, followed by an espresso.

L: Packed lunch made with leftover spinach and goat's cheese pie, almonds, hazelnuts, lettuce, Romano peppers, celery and tomatoes dressed with an olive oil and balsamic vinaigrette.
Strawberries to round off lunch. Water to drink.

D: Smoked salmon and cream cheese salad made with lettuce, fennel fronds, celery, cress and cherry tomatoes, dressed with olive oil and a touch of lemon juice and topped with toasted pumpkin seeds.
Water to swallow tablets.
 
Didn’t post yesterday as I seem to have had a 24hr stomach bug, so didn’t eat much :depressed:
However today much improved :)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a Aldi protein bar.
Dinner: LC roll with sliced seafood stix (I know, odd but just what I fancied!) with coleslaw.

Glad you’re feeling better now @Rachox , I used to really like those seafood sticks too.
@PenguinMum happy hols! Did you feel ok while your BG was coming back down so swiftly after your bacon bap?
Todays food:
B- dippy eggs with bacon twists ( Streaky bacon twisted and grilled crispy so it makes a good ‘soldier’ to dip)
L- salad of leaves, 1/2 avocado, feta cheese, small h/b egg and ACV/evoo dressing. Yoghurt and rhubarb to follow.
D- family bbq ( which I ended up cooking in the airfryer as we didn’t have any charcoal!) 1 chicken thigh and a h/m cheeseburger in SRSLY roll. Green salad, olives,coleslaw, wine. Few squares Montezuma’s mint absolute black IMG_2680.jpg
 
Yesterday


B: bacon, eggs, mushrooms, 1/2 tomato, rocquet, 1 piece of toast (not low carb bread but it’s not often there’s bread in the house and I couldn’t resit… I think I like the butter better than the actual toast itself though but I enjoyed it)
L: tinned salmon, mixed salad leaves, tomato, onion, black turtle beans, baby beetroot, feta cheese
D: chicken wrapped with pastrami and rosemary, broccoli, cauliflower, peas; no added sugar choc ice cream
After dinner: hazelnut milk with sugar free drinking choc, pork crackle, 6 strawberries. I’ve run out of 95% chocolate and think I must be addicted to it because I missed it while reading my book
 
Morning all. @DJC3, I'm going to copy your bacon twists and 'dippy' eggs, loved the look of it. Yesterday had the chicken drumsticks for tea and bacon, eggs and tomatoes for lunch. I was really good too, very few carbs but my level was high when I went to bed and 6.7 this morning. I'd been gardening too so didn't expect a high reading. Oh well, better luck today. Hoping to make some tuna melts today. Have a great weekend everyone. :)
 
Breaking fast with bits of gouda. I only meant to have one little chunk to keep me going but so far have gone back to the block twice more and cut off another little chunk. Have put some eggs on the hard boil for a bit later on.

2nd meal will be some more of the lamb hotpot from a couple of days ago.

It took me about an hour to get the cover on my duvet yesterday - and that was doing it the "easy" way. I needed my bed after that effort. Did none of the other things I wanted to do yesterday - not even having my 2nd meal. Too exhausted. So today is going to have to be even more busy - they're coming back tomorrow and bringing some other folk with them (around 5 pm so food will be required) one of whom is diabetic and on a low carb diet so will need to make something special for her as well as my normal "high tea" kind of things.
 
Morning All
first of all @DJC3 I felt completely fine when my BG went down from 9.2 to 4.6 within a short time after the bacon bap.
Last. night’s Indian experience was awful for various reasons. I chose Tandoori King Prawns and broccoli & cailiflower Tandoori florets. A large white plate was delivered with TWO prawns and a side plate with half a dozen florets. The prawns cost £18 so I expected at least 4. Then I managed to dribble some of Mr P’s sauce down the front of my favourite Joules Harbour top and then made the big mistake of dipping the napkin in my glass of water and rubbing it, only the napkin was RED. So I have bought emergency Vanish but though the curry stain is gone the big red patch remains. All in all an expensive and disappointing evening.
This morning usual brekkie of LC toast and two mugs tea.
Lunch will be dressed crab from the fish shack
Supper unknown but hoping tonight’s place can do a simple bit of fish with some veg.

Back home after a wonderful wedding experience and of course was given cake on the day and to take away. Will get back to normal LC posting tomorrow but yes yesterday at wedding and today when back shared a slice of this cake with OH. We had a slice of the raspberry layer yesterday and the blueberry layer today. I avoided the frosting though as not a fan and had a small sliver both times but the cake was delicious.
Otherwise ate broadly low carb. I so enjoyed going with the flow had happy days and my bgs seem if anything lower - but I did about 25k steps a day didn't sit down much and felt so so happy sure this helped. I'm sure also though that this is a rare occasion so I'll also be happy to go back to my usual food from tomorrow - oh whoops that's if I can avoid the last slice of cake in the fridge!

That rolling method with the quilt gets quicker when you get used to it. I did get a bit fed up with the quilt dislodging when it was in place, so I got a box of "pins" on Amazon that you push through the duvet/quilt (just pin size) and it holds it firmly in place.
