What have you eaten today? (Low carb forum)

Is " Good Butter " the same as " Best Butter " that was a term used when I was growing up
The butter I like best is Sainsbury TTD West Country salted. I’ve tried lots and this remains my favourite. Its not the cheapest on the shelf and I wouldn’t use it for baking (not that I do it).
So yesterday brekkie slice LC toast, butter, copious tea.
Lunch was half a Scotch egg, slice of ham and chopped salad.
Supper was skinless smoked haddock fillets cooked for 5 mins in Double cream and chopped fresh parsley, started by frying a finely chopped shallot in butter, finished with good grind of pepper. Served with rice/cauli rice. Simplebut delicious.
 
I've " re-joined " this thread hoping to stay on the straight and narrow ( ish ) because if I have to post my meals and be honest ( ) it should help . Also I do like reading about other peoples meals and it gives me ideas of things to try .
So today ..early 6am a small apple and herbal tea ( 14 carbs ). Can't call that breakfast I had that about 9 am which consisted of 2 back bacon rashers 1 fried egg ( in olive oil ) and 2 slices of wholemeal toast ..coffee ( butter on toast ).( roughly 38 carbs ).
Lunch was tin of tuna black olives large tomato and small wholemeal roll .(23 /25 carbs.
For some reason I was craving a banana so just had 1/2 of one with some 90% dark chocolate ..coffee (23 carbs )
Evening meal is going to be grilled chicken thighs small avocado 1 egg omelette with salad and mayo (10/14 carbs )
Total carbs roughly 114 .
Had a small apple and cup of tea before bed so roughly another 18 carbs .

1030 ish a small bowl of ff greek with seeds
L: 2 hard boiled eggs, 2 slices gm lc soda bread and butter. 4 sqs montezumas 70% with cherry. Too moreish, it was a present
4pm 4 more squares and a chunk cheese
D: thai chicken curry with green beans (boys had rice)
 
B- scrambled eggs and sauerkraut.
L- leftover tuna nuggets, Edam ‘toast’ with Brussels pate and a couple of cherry toms for colour. H/m yoghurt with seeds to follow.
D- Barnsley chop with turmeric roast cauli ( both airfried) with chopped salad. 1 Sq lindt90% and decaf coffee.
 
Could you say how you make the Edam toast please. Is it simply grilled slices of Edam?
 
Evening all

My kitchen faces north so stays relatively cool most of the Summer. All the same, I changed today's plans to avoid additional heat and humidity in the run-up to lunch.

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns, seasoned with a grinding or two of black pepper.
Water to swallow tablets, followed by espresso.

L: Salad using salmon fillets poached first thing with black peppercorns, salad onions and lemon juice, then refrigerated. For lunch, combined with watercress, avocado, tomatoes, celery and sweet cicely, dressed with olive oil plus a touch of lemon juice, lemon verbena and garlic, topped with toasted almonds and walnuts.
Skipped pud.
Water to drink.

D: Seafood salad made with king prawns, mussels, lettuce, fennel fronds, celery, Romano peppers, salad onions, black olives and mustard cress, with a dollop of aioli for dipping, topped with toasted pumpkin seeds.
Water to swallow tablets.
 
I've had that black cherry chocolate before. Seriously addictive!
 
I keep on doing this. Cooked my lamb tagine but I don't feel like eating so it's just going to wait until breakfast. Haven't even had much to drink today - that's bad and I must try to get more fluids in before bed.
 
They are also nice cut smaller and used a s crisps or tortilla chips, especially if sprinkled with paprika or other herbs spices. Just a few are really filling.
You can also use other waxy type cheese such s gouda (cheddar doesn't work)
Neil is borrowing Alistair's car tomorrow and will do my shopping for me. I've asked him to get Edam slices, if he can, or just a block of Edam, or the same with Gouda. Unfortunately, the Gouda our supermarkets sell seems only to come in thinish single slices - just one slice per pack. Might not be worth the bother. I was also wondering about Leerdammer - never bought it but I wonder if it is a kind of Gouda. I've seen that sold as packs of a few slices.

I love Leerdammer!
It has a very distinct flavour and large bubbles/holes inside. (It's nicknamed 'gatenkaas', 'holes cheese' around here.)
My mum told me the holes/bubbles and flavour are created by special bacteria letting out delicious farts. No idea if this is scientifically correct though, it's a very long time ago she told me this.

The texture is alike to a young Gouda, so I suppose they may need a bit longer in the microwave if you want to crisp them. They may stay a bit chewy though.
No reason not to buy it, it's a very tasty cheese just like it is!
 
The slices for the crisps need to be thin, hence why the presliced ones work so well. It's worth experimenting with cheeses, timings and thicknesses as they all vary, as does each microwave. I'd do it in 30 second bursts just to be sure.
And even then the odd one may get browner than his friends do...
Oh and a spoonful of grated parmesan piled up worked well too...but does tend to scent the air a bit much
 
All this talk of making cheese crisps\toasts - wonder if a compte cheese would work it's all I have in fridge - will try later! Looks like thinness is crucial thing I have baked parmesan ones in oven but never tried the microwave version.
Difficult day yesterday involved a vet visit as we were so concerned about Cooper who had a gastric problem - seems nasty bug doing rounds and he may have picked it up on his walks. We were really affected as he's a very special dog and all our efforts yesterday were put into keeping him cool, comfortable and as hydrated as possible. vets are so expensive but she was so reassuring and thorough and gave him anti sickness jab etc and he seems much more himself this morning. He's now on a little but often, plain chicken diet today and crossing fingers but no walks for a few days.
So yesterday
Breakfast of kefir with shelled hemp seeds
Nothing in day apart from water and black tea and coffee
Late dinner sea bass and asparagus and much needed glass of chilled dry white wine.
 
Just had my, probably, one meal today. It was the tagine I made for yesterday's main meal. Wasn't sure I wanted to eat at all with the temperature on a pretty well all time high of 24C. But I did and it was delicious. But it was enough, I should think, for one day.

Neil's been shopping but the only waxy cheese he could get was a 1/12 segment of Edam. Don't know if I can cut it thin enough to make crisps, but I'll try. Just heard - our car is done and will be delivered home today. Worryingly the garage have very kindly told us that we can pay the bill in installments!

Also have been given an appointment for my MRI scan in Glasgow - 3rd July at 12.30 - allows time to fly down and back again in one day. DIL will probably go with me. Things are looking up. Should I be concerned that they are acting so quickly? Ah well, we shall see...
