What have you eaten today? (Low carb forum)

@Antje77 that’s the most entertaining food photo I’ve seen on here. Not a Dutch thing- I suspect many of us would automatically focus on the cat/dog/horse/goat/ chicken in the background.
:hilarious: I meant the herring being a Dutch thing, not the focusing on the animal. But I'm sure @JoKalsbeek will be happy to hear she's not the only one who zoomed in on the cat, missing the herring at first. :cat:
The wite thing in the background is actually a young turkey.

Evening meal was the same as yesterday with added peanut sauce: mixed veggies, marinated pork belly pieces, fried duck egg and peanut sauce.
 
Both pickled herrings and kippers are completely different in flavour and texture from this Dutch salty herring. I like the taste of kippers but I do agree on the bones aspect. Salty herring does have some very thin bones, but they're so soft that they don't bother me.
I'm fond of fresh herrings, especially the males with their creamy soft roes. They're at their best now. (I used to love rollmops too, but they're off the menu, thanks to the caster sugar.)
 
Early yoga so break fast was about 11. 2 chicken drumsticks. Ff greek with seeds and 2 strawberries.

No lunch.
Did do some lc baking, a cinnamon cake and some blackcurrant muffins.
Bit migrainy so took salt and thanked the late and missed Goonergal as it worked

D: 1 Chicken drumstick and a piece of antipasto grilled artichoke. 2 muffins and a tiny sq of the cake.
15 sqs of cake and 6 muffins now safely in the freezer
 
Away at a friend’s for the day, so I’ll just post a pic of the lovely low carb dinner she cooked for me. Salmon with butter, Parmesan, garlic and parsley rub with roasted Mediterranean veggies with a sprinkle of mozzarella.

Toast for breakfast. Bad choice.
2nd meal will be the rest of the pork and vegetables from yesterday.
Baked some oatcakes this morning and some experimental oat cookies for a friend who might visit tomorrow. She is T2 diabetic and believes that she can only eat oatmeal. I have told her about low carbing but she wants to stick with the advice given to her by the diabetes nurse. I think she has misinterpreted the advice, but she's all grown up (just a few months younger than me) and must make her own decisions. The cookies are oats, banana, dried fruit, butter and egg. They look good coming out of the oven, but I'll have to try a tiny bit of one to see what they taste like. But it will only be a tiny bit.

Edit: Tasted a tiny bit and will have to be very firm with myself because they are very good. As soon as they are really cooled, I must put them away where I can't see them, or I can at least say to myself that they are spoken for and, for me, do not exist. I can often trick myself that way.

Interesting day. Decided to go out for breakfast. Not my usual but more expensive and think they must have cooked it all in the microwave! Horrid.
Bacon, egg, sausage, half a tomato and a large mushroom.
Cappucino not nice either.

Champagne x 2 small glasses
Cottage cheese and tomato

Herring on a slice of LC bread is very tasty as well!
I managed to cram a herring and a half on a small slice of bread, so the dogs and cats got lucky with two tails and half a herring. :cat:

The herrings were on offer yesterday so I bought 4, but they have to be eaten in 3 days so one left for tomorrow.
Evening meal will be the same as yesterday. Or maybe I'll turn the last portion into peanut soup.

Todays food
B- 2 eggs mashed with butter and cheese.
L- small leftover slice of DD keto meat pie, DGF brownie.
Mid aft- macadamia nuts. Why on earth did I buy them.
D- air fryer ‘KFC’ (recipe on my CMT) To make my portion low carb, I used the same ‘secret blend of 11 herbs and spices’ but swapped the flour for 1/2 quantity mixed oat fibre and coconut flour. In the photo Paul’s is at the back ( less salad, he hates it) and mine in front. It was nice but maybe not worth the faff. I really like airfried chicken just with salt and pepper. Have you tried AF chicken with Lemon Pepper? Very delicious! I was Goonergal's Lemon Pepper dealer. :hilarious: :hilarious: That was courtesy of a ginagerous tub brought back from overseas, which is almost gone, but it is now available in UK.

I do remember her saying you’d introduced her to lemon pepper. Is it the same as the one available on Buywholefoodsonline.co.uk do you think? I buy a few bits and bobs from them.

Making your own lemon pepper with cracked peppercorns and lemon zest is worthwhile, if you have the time.

If not, lemon verbena with a grinding or two of black pepper works wonders with fish/seafood dishes and salads; it was an instant hit with my family. Lemon thyme is better known, yet not so aromatic and more fiddly to prepare, especially when using new growth early in the year.
 
Today I had eggs cheese and black garlic kimchi for breakfast.
Mid aft champagne.
Dinner- Slow roast pork belly, the usual carby accompaniments gif the others plus cabbage cooked in butter ( much nicer than it sounds). Toasted celeriac with bacon and mustard ( not as nice as it sounds) and roasted cauliflower with butter, lemon and cumin ( a definite keeper, it was delicious) red wine to drink. Evening all

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a tomato, garnished with flat-leaf parsley and seasoned with a grinding or two of black pepper.
Water to swallow tablets
Espresso.

L: Baked whole sea bass, belly stuffed with French tarragon and garlic, drizzled with olive oil, accompanied by asparagus spears with butter and a medley of broccoli, leeks, and red peppers with garlic.
Raspberries and Greek full-fat yoghurt.
Water to drink.

D: Salad made with anchovy fillets, eggs, avocado, fennel, Padron chilli, thyme leaves and a touch of lemon juice, with a dollop of aioli for dipping, topped with toasted pistachios and chopped chervil.
Water to swallow tablets.
 
B kefir with hemp seeds and a few garden berries
L one crispbread with avocado and one crispbread with pate ( Swedish thin crispbread 5g of carbs per slice) followed by a few squares of 100% chocolate
D steak with mushrooms, roast spring onions and half a tomato with a few hm new potato chips and glass of dry red wine plus just had LC cake with decaffeinated coffee.
Dramatic thunderstorms here this afternoon but luckily did my gardening this morning. Cases now down from loft ready for slow packing over the week. This time next week fingers crossed should be on a ship heading to Norway from Southampton.
 
Late lunch. :hungry:
Eaten outside because there are always pieces of raw onion falling off a herring eaten from the tail.
Cats and dogs approved as well. :cat:
No idea why the camera absolutely refused to focus on the herring.

This is the one we have (and in scale too). We first found it in Tortola, BVI, then Antigua. When we sold up in Antigua, we shipped some back with other stuff.


Other sizes are available. :)
