What have you eaten today? (Low carb forum)

Finally found the chicken shawarma in M&S but nearly ended up having to post a photo of prison food! I took all my shopping to the self serve scanner and wandered merrily off, having completely forgotten to pay for it! I’d got to the door by the time I realised, I turned hastily back to see a shop assistant hot footing it towards me. He was lovely and said “ I don’t think your payment went through madam” I had to fess up to batty old lady brain and having totally forgotten to tap my card.
Starting with dinner then; chicken shawarma, spinach and roasted broccoli then a cup of tea and DGF cake. @maglil55 we also thought it was spicier than last year, but we both like a chilli kick
Lunch was a salad, all veg with AVC/EVOO dressing and mixed seeds. Few squares Lindt 99%
Breakfast- 2 scrambled eggs and ham.
Happy belated birthday @PenguinMum glad you had a lovely weekend and a drop of fizz to celebrate.
@Cherianne40 I struggle to drink water too. I’ve found that soda water with a slice of lime and a pinch of Himalayan salt feels more exciting and easier to drink!

Stuff left over from yesterday so - choc chip biscuits to be taken home by Alistair when he comes today plus a box of not perfect, but very edible (according to DIL) shortbread, fruit salad and very thick cream - had some of that for breakfast. Not an ideal breakfast but it was only a small portion with quite a lot of the cream. Still some left. Had the salad for my meal yesterday but there's still some of the sardine and tomato paste and a fair amount of ham to be used up.

Someone brought a tin of Walker's shortbread yesterday and a punnet of apricots. The shortbread I'll keep for another occasion (Friday probably). Not sure about the apricots. I love them, but probably not as a raw fruit - there are too many. I was about to make an apricot curd with dried apricots. Maybe I can do that - never tried it with fresh ones.

I do have to use up some chicken breasts that are about to go past their use by date so that will have to be for today's 2nd meal probably with a mango sauce - Neil got me a very ripe mango yesterday. What to put with it to make a sauce for chicken though. I am thinking chilis or Ras al Hanout and onion. I'll also have to use up a mini pumpkin that Neil bought a while ago, before it goes off. Any thoughts anyone?

Th8s was yesterday, it didn't post for some unknown reason.

Had a bad night with difficulty sleeping, several wees and hunger!
Breakfast1: ff greek with seeds and 2 strawberries
Breakfast 2 90 minutes later: 2 lc crackers with butter and pate

No exercise class today as teacher is away but did still meet friends for coffee (herbal tea in my case)

L: 1 lc cracker with butter and pate

Mid afternoon 2 hm lc blackcurrant muffins

7: a late (for me) dinner of cold pork, roasted peppers with tomatoes, chunk of cheese. Had 1 tiny slice pizza.

8pm still hungry so a chunk of Stilton

Wow, wearing my first libre for ages. Dinner sent me straight up to 12 from 7. Had been hovering 7 to 8 all day.

Not really - it's fairly sweet when very ripe. But I'll make a lot of sauce and only use a little then freeze the rest in small portions for using with some other things in weeks to come. I reckon it will go well with fish and maybe pork, or duck perhaps. Most mango dishes seem to use sugar but I don't reckon to need that in it. The one I am making right now has chili powder, garlic, apple cider vinegar, butter, onion, powdered ginger and I might finish it with some cream - not sure about that yet.
 
Hi All
today usual brekkie of slice LC toast, butter, copious tea.
Lunch was small chopped green salad, spoon coleslaw and finger (a big one) of Shropshire Blue.
Supper will be cheese and tomato 3 egg omelette. Currently enjoying a gin& Soda with lots of ice.
@shelley262 thanks for the birthday wishes and I am sorry for the loss of your uncle, sudden death before their time is hard.
@Annb I hope you start to feel better after the stress and exertion of going for the scan. I admire how much you do to include so many while catering for everyone and dealing with all the leftovers. I repeat I bet your shortbread is out of this world!
 
Evening all

B: Two poached eggs topped with a knob of butter, avocado seasoned with black pepper and Caerphilly.
Water to swallow tablets
Espresso.

L: Salmon fillets baked with broccoli, mushrooms, cream and flat leaf parsley. Steamed asparagus spears garnished with a generous knob of butter. Mixed green salad made with sweet cicely, chicory, celery, fennel, green peppers, salad onions and chervil, dressed with olive oil, garlic and a touch of lemon juice, topped with toasted pistachios.
Skipped pud.
Water to drink.

D: Seafood salad using brown shrimps, mussels, lettuce, cherry tomatoes, celery, Romano peppers, black olives, salad onions and mustard cress, with a dollop of homemade mayonnaise for dipping, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
B kefir with hemp seeds and a few garden berries
L one fried egg on LC toast then 100% chocolate
D frittata with salads and glass of red wine followed by LC cake and decaffeinated coffee.
Lots of eggs cooked today but I seem to have lots that have a short date! Think will be boiling some tomorrow to eat over next few days....

D: frittata, greek salad. Strawberries with cream.
Somethings spiked me to 9, but have been averaging 7 all day any way.

Still smarting from practise nurse saying today that my hba1c rise from 39 to 42 was "satisfactory ". Not to me it isn't!!!
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a Phd bar.
Dinner: gammon steak, fried egg and salad.

I ran out of eggs today so I had a bacon sandwich. My blood sugar went from 11 to 15.5 . So lesson learned….
Raspberries and greek yougurt and a snack and then a bit of chicken and went out when I came back I was exhausted blood sugar was 8.4.
Then had cheese and mushroom omelette and strawberries and double cream and 2 hours later 9.2 which I think for me is quite good ……..but I would kill for some custard!!!!! And I am still exhausted. This is day 6 of low carbs and metformin.
There's lots of low carb custard recipes. I've even made low carb trifle. Here's one of many:-


You have to be careful and keep it on a low heat otherwise it will scramble. You can't leave it and you have to watch it. I also have a recipe for low carb creme brulee which is a similar recipe.

You use cream to make it low carb as milk adds too much sugar to the mix.
 
@DJC3 - I'm glad you agree it's spicier. I don't mind, but Hubby is less keen. @Annb - I do admire what you manage to get done with all your current issues. I have to say that the oat lady's T2 diet is a major mystery! Happy belated birthday, @PenguinMum.

Monday 10 July bed 7.1 FBG 6.4. This turned out to be an exhausting day. Up to book into Aqua for next week, then got ready for this week's class to be followed by physio. Turned out grandson also wanted a lift to go shopping for Guinea supplies, which led to shopping for GF snacks too! In between, I was negotiating multiple road works. Having left at 9.10 am, I returned home at 3.55pm!

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. Very late! A bit of crustless quiche. 1/2 a fulfil bar while out.

D. I wasn't very hungry, so I ended up with GF haggis (only it wasn't) and a 1/2 smoked sausage. CC little chocolate pot. Moretti Zero.

Tuesday 11 July - bed 9.2 (wrong haggis. I'd taken non GF out) FBG better at 7.4

B. TAG and 2 slices of SRSLY toast with egg mayo. Benecol dairy free.

L. A bit of crustless quiche

D. I decided to get inventive and came up with mushroom chicken breast (which I've added to my CMT). Chopped pepper, jumbo spring onion, halved santini tomatoes & button mushrooms. Cook for a couple of mins in a wok, season with paprika. Put in a Pyrex dish. Cook seasoned chicken breasts for a few mins each side add to dish. Put 1/2 mug of mushroom stock into the wok, add chopped parsley, and a small container if M&S mushroom sauce. Add a handful of grated Emmental and stir until melted. Pour over chicken, cover with foil, and into oven for 20 mins. Remove, add more grated Emmental to the top of the breasts, and return to the oven until it melts. I served it with parmentier celeriac.

When I took the chicken out of the fridge I realised that there was far more of it than I expected so I decided to cut it all into thick strips (3 strips from each breast) and cover them with the sauce. Wasn't entirely happy with the flavour so quartered an orange and placed that into the pan around the sides. Baked the whole lot in a moderate oven about half an hour. Very tasty. I had 2 strips of chicken with their coating - could have eaten much more, but decided I shouldn't. The rest will be packed into individual containers and put into the freezer when it is cool enough. Another time I will tweak the recipe a bit but it worked pretty well. Really needed the spices though.
 
I feel for you with the roadworks @maglil55 they are everywhere here too, it seems never ending and we are just coming up to peak season so the traffic is going to get even worse.
I spent this morning jumping through hoops with the council trying to get them to do something about rats which have taken up residence in a derelict farmhouse near us. Felt I needed a treat by mid morning, so breakfast:
Fluffy omelette and bacon. Did the trick!
L- fridge raiding - bit of chicken shawarma left from yesterday, slice of ham, cheese, DGF cake.
D- 2 big mushrooms, one stuffed with blue cheese, other with spinach, feta and pine nuts. Macadamia nuts and Montezuma’s Absolute black to follow then a small HC gin.
 
I'm an idiot! Had quite a few painkillers this morning which may have affected my judgement, but I don't think it's that. Just plain idiocy. I had 2 crumpets with butter for breakfast. Just because they were there. Em hasn't been in for a few days and I figured they would be getting too old so, instead of throwing them into the compost bin, I toasted them and ate them. We'll see how the BG goes but it is pretty far from low carb.

Another visit from the same group of people coming up on Friday (they have been on holiday from Shetland and will be going home at the weekend) so I need to think of some different snacks - fruity, veggie, non sweetened, oaty, banana-ey (not a word but I don't know what to call it). Have to put my thinking cap on.

2nd meal today will be a couple of pork sausages and some mixed green veg.

The ingredients are making my mouth water! I imagine it will be a sauce where a little will go a long way.

Actually the sauce was very moreish and I could have had much more than I did but I was strict with myself and put the remainder away in the freezer (actually attached to its chicken - there was a lot of chicken so I cooked all of it and all of the sauce so each piece of chicken had a thin coating of sauce). But I will make the sauce again and freeze small portions of it. I didn't finish it with cream - didn't feel the need for it.

Edit: DIL had to go back to Glasgow on Monday so that she could have her own MRI scan. Her appointment was for 8.30 Tuesday morning, so she had to be there overnight and then, couldn't get on the return flights so had to stay on until this afternoon's flight. Luckily, her father was able to come from Falkirk to pick her up, take her home and take her back to the hospital for the scan, then take her home again and bring her back for this afternoon's plane. She is still having trouble with her neck/shoulder where she was told she had a slipped disc months ago. It has been a long trip away just for a half hour scan. At least she could combine it with a visit to her father and also had a chance to see her elder son who lives in Kirkaldy.

This afternoon's job, therefore, is to make a coffee and walnut cake for her as a welcome home gift. Alistair will pick it up on his way home.

I present yet another successful experiment - This was after my long..ish fast (72 hrs) so had to be a soup - I am calling it Minty Basil Mushroom Soup with all my creative might :p and recipe can be found here.

I was not sure how it will turn out, so I made just enough for myself, but my wife and daughter tasted it and loved it, so I will be making it again today :).

Anyway so this is what I had yesterday and will be having again today along with some Gluten based garlic bread. I did have 2 fried eggs and 40 gms of extra mature cheddar cheese earlier today.

No spikes so far, although I do have a bit of cough cold coming up so BG is going to be all over the place in coming days I guess.
