The baked egg sound lovely.Breakfast: made my Dad's favourite. He used to call it "baked egg" and loved it with a chunk of crusty bread to dip in. It was cheddar cheese chunks around a small dish and an egg broken into the centre, then baked in a moderate oven. I did it in the microwave and had it without the bread. So that was an all protein meal to start the day. That's quite enough cheese to last all day as well.
2nd meal: will be a couple of pork sausages with the remaining cauliflower mash mixed with the remaining leeks. Small amount of carbs in the veg and in the sausage - not sure how many but it will have to do.

Depends on the size of the egg. My medium egg took 90 seconds on full power. That gave firm white and soft yolk. Leaving it too long makes the yolk firm up. Of course, you may like your yolks firm. I ate day before yesterday and now will be eating tomorrow morning so haven't got much to report but day before yesterday I made falafel from frozen edamame beans and frozen peas. Turned out quite good, so updated on my recipe journal here.
I had this with Tzatziki and some roasted veggies - Capsicum, Mushrooms, Aubergine, Onion and Tomatoes. All went well together.
I also tried making a shake with coconut cream and peanut butter but that was just ok, not great.

Actually, I find it's safer to buy avocados when they're still rock hard, store them at room temperature for 3-4 days (depending on their best before date) then enjoy! BG running too high this morning so I took a correction dose - obviously not enough because, although it did come down, it was still quite high (2+ hours later) before breakfast. So I took another dose of insulin - not a dose as big as I would normally take, just in case...
Breakfast: the remaining leeks and cauliflower mixed with 2 eggs and scrambled with 2 pork sausages. Quite a large meal so hoping for OMAD.
It's not going to work out that way. BG down to 3.7 and I started shaking. Ate an iced cupcake. BG carried on dropping and I was seriously into hypo territory. Another cupcake (last of the ones I made a few days ago) and I'm beginning to get back to normal. I hope.
