What have you eaten today? (Low carb forum)

Breakfast: made my Dad's favourite. He used to call it "baked egg" and loved it with a chunk of crusty bread to dip in. It was cheddar cheese chunks around a small dish and an egg broken into the centre, then baked in a moderate oven. I did it in the microwave and had it without the bread. So that was an all protein meal to start the day. That's quite enough cheese to last all day as well.

2nd meal: will be a couple of pork sausages with the remaining cauliflower mash mixed with the remaining leeks. Small amount of carbs in the veg and in the sausage - not sure how many but it will have to do.

Baked Egg does sound very good. How long does it need to be microwaved?

I ate day before yesterday and now will be eating tomorrow morning so haven't got much to report but day before yesterday I made falafel from frozen edamame beans and frozen peas. Turned out quite good, so updated on my recipe journal here.

I had this with Tzatziki and some roasted veggies - Capsicum, Mushrooms, Aubergine, Onion and Tomatoes. All went well together.

I also tried making a shake with coconut cream and peanut butter but that was just ok, not great.

Baked Egg does sound very good. How long does it need to be microwaved?
Depends on the size of the egg. My medium egg took 90 seconds on full power. That gave firm white and soft yolk. Leaving it too long makes the yolk firm up. Of course, you may like your yolks firm. Really a matter of trial and error to get it the way you want.
 
Evening all

Today:

B: Two poached eggs and scallops topped with chopped, flat-leaf parsley, asparagus spears with a generous knob of butter, all seasoned with a grinding or two of black pepper.
Water to swallow tablets.
Espresso.

L: Tuna steaks rolled in finely chopped celery and oregano, baked with red peppers and aubergines, moistened with cream and topped with grated Cheddar cheese.
Salad using watercress, chicory, avocado, radishes, salad onions, mint and black olives, dressed with an olive oil, garlic and balsamic vinaigrette and topped with macaadamia nuts roasted in butter.
Skipped pudding,
Water to drink.

D Seafood salad made with tiger prawns and mussels, lettuce, fennel, Romano peppers, celery, cherry tomatoes, salad onions with homemade mayonnaise.for dipping and topped with toasted pine nuts.
Water to swallow tablets.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a Carb Killa bar.
Dinner: avocado, prawns and garlic mayo with a side salad (the pic’s a bit messy as the avocado halves decided to roll over and tip the prawns off on the route from kitchen to sofa!)

Mrs M is still not entirely convinced about this low carb stuff, but I have managed to ween her off several roast potatoes down to one, from a full portion of rice down to just half or third of a portion. I've made her sandwiches with more filling and much less bread. But today I feel I may have had a bit of a breakthrough. I made fried egg and bacon (she doesn't like fried eggs) fried tomato (which she doesn't like) and avocado (which she also doesn't like). After the meal she said she felt full for the first time this week and that she actually enjoyed the meal. To top it all, her BG was 5.5 before and 5.7 two hours later. This is the lowest rise yet! :)

This looks brilliant. I really miss falafel so thank you very much for sharing the recipe.
 
B- cheese omelette.
L- sausage sandwich using Coop Irresistible sausage and SRSLY white hot dog roll. Montezuma’s Absolute black with Almonds to follow.
D- air fried chicken thighs, Halloumi and a mushroom filled with Cornish Blue cheese. Served with salad. ACV/EVOO dressing and a decent size glass of red. IMG_3072.jpg
 
I skipped breakfast then as rain stopped play in the garden I spent most of the morning in the kitchen, popping out briefly to pick blueberries and courgettes.

I made an aubergine and courgette curry and a baked blueberry cheesecake from a slightly adapted keto recipie I found online for lunch. Both were really nice. I frozen much of the cheesecake As it’s too much for us to get through over the next few days.

Supper was another bowl of the soup I’d made yesterday followed by a SLC ‘not’ cross bun with skinny syrup and clotted cream. It’s the first of the buns I’ve tried and sadly I wasn’t overly enamoured. I do like their fruit bread tho so I’ll stick to the
at in future. It’s all a bit of a learning curve at the moment.IMG_0915.jpeg

I’ve discovered Aldi’s ripe and ready avocados
They've been selling 'ripe and ready' avocados in all supermarkets for years here, for double the cost. And there's nothing ripe or ready about them. :(

Today's evening meal, after more very wet and cold work on the pond in the pouring rain, was fried onion, bell pepper, garlic, with the last of the broad beans and the other half of the fish thing, all thrown together in the same pan with the last of the cream cheese and a salty anchovy fillet instead of salt for extra fishiness.
 
Mid morning: 2 scrambled eggs with ham and cheese in
Mid afternoon 1 sq hm lc cinnamon cake
D: 2 hamburger in lettuce leaves with cheese and mayo, cucumber and radish. Coffee ice cream with chopped 100% chocolate, cream and a splash of whisky. The latter was a mistake, it tasted better without.

Bgs have been odd the past few days, sitting in 7s mostly, some 8s. Never lower than mid 6s. Couple of spikes when eating carbs but never normally this high as a rule. Didn't even dip down in the night last night whereas I often go below 4 for a short while. Seem to be a whole point up on usual. Confirmed by finger pricks.

I struggle too. I buy the cheaper ones and leave them on a sunny window sill. Sometimes when one gets soft it is OK, most of them aren't.
I'm hopeful of one for tomorrow... it will be a red letter day if its ripe

Actually, I find it's safer to buy avocados when they're still rock hard, store them at room temperature for 3-4 days (depending on their best before date) then enjoy! In the unlikely event they're not eaten right away, refrigerate until needed.

I've come unstuck with avocados labelled "perfectly ripe and ready to eat." At best the flavour was disappointing.
 
BG running too high this morning so I took a correction dose - obviously not enough because, although it did come down, it was still quite high (2+ hours later) before breakfast. So I took another dose of insulin - not a dose as big as I would normally take, just in case...

It's not going to work out that way. BG down to 3.7 and I started shaking. Ate an iced cupcake. BG carried on dropping and I was seriously into hypo territory. Another cupcake (last of the ones I made a few days ago) and I'm beginning to get back to normal. I hope.

Oh no Ann, I hope it stabilises soon. It must be frightening.
