This is the bread. Just do it in rolls. Just add more heat 200°C and drop baking time to 35 minutes. Let them cool first then you can fridge them. They are better toasted. Just take out the eggs and add add a tablespoon of Psyllium instead and some Puffed Quinoa.That's an excellent looking roll. I remember my early efforts. I'd get a nice crisp exterior, but cut them open, and they were hollow! Ahh, memories of early baking days.

Had a lovely day out at Hever Castle to celebrate friend’s birthday. I packed a picnic for the three of us including sandwiches, crisps, strawberries and water (I just had rollitos and strawberries) then mid afternoon tea and cake (I had one of my LC lemon muffins). However I did give in to a scoop of coffee ice cream to join in with the othersBtw the grounds were stunning and we found a good picnic spot in shade overlooking the lake twice but we had to quickly abandon the tour of the castle due to the volume of people in a very small space.
Supper back home was baked spiced chicken breast with green veg.
@jomar_uk your unenviable task of balancing an eating regime for Crohns and Diabetes must be a constant dilemma. As you may know a lot of NHS nutritionists and dieticians are not in the loop about LC not just sugar being unhelpful for D. I understand you must eat to your Crohns but if they could work out a plan as LC as possible that would help. I wish you well.

@jomar_uk I don't envy you trying to balance the 2 sides. It's a nasty illness.
Today 17 August, bed 7.1 FBG 6.4. I've spent most of today in the low 5's. Hubby has come down with a stinker of a cold, which I am trying desperately to avoid catching. It's bad enough struggling to walk without succumbing to a bug as well! I'm still on 2 crutches.

L. Finally, a TAG when Hubby emerged from bed. I'd dropped both boys at school and dragged myself into Tesco to try to find something that would tempt Hubby to eat. I was in a cold sweat by now.
D. Boys were here. Hubby decided on a seeded roll with ham and egg. I eventually had 2 bits of crustless quiche and my CC little chocolate pot. Another TAG as well.
I'm feeling a bit queasy, but I had to eat as I have a 2nd dose of antibiotic to take. On a more positive note, my hand is clearing up. Now, if only I could walk with only one crutch again?

2nd meal will be home-made sausage. The food mixer does all the work for that and I'll chuck in some onion and passata, or tinned tomatoes and shove that in the oven. Should manage that allright.
Spoke to GP about the legs. She reckons it sound like plantar fasciitis - it is similar but much more painful than when I had it before but I didn't know it could travel through the ankle up into the legs. Told to self refer to the Podiatry Department so I downloaded a form and have sent that in by e-mail. Now wait until they deal with it. Meantime, GP says, try not to take as much of the painkillers.
