Hungry when woke up unusually and low bgs so broke my fast a bit earlier than usual
10ish small portion of kefir with my supplements
1ish hm hummus with celery, radish,kimchi and tomatoes from garden followed by garden berries with LC chocolate brownie and yoghurt

5ish ACV in water then chicken breast with mushrooms in sauce made from cream and butter and cauliflower mash with glass of dry white wine then a LC berry crumble.

That's an excellent looking roll. I remember my early efforts. I'd get a nice crisp exterior, but cut them open, and they were hollow! Ahh, memories of early baking days.
This is the bread. Just do it in rolls. Just add more heat 200°C and drop baking time to 35 minutes. Let them cool first then you can fridge them. They are better toasted. Just take out the eggs and add add a tablespoon of Psyllium instead and some Puffed Quinoa.

If anyone is interested, This is the bread I make:

PROTEIN BREAD

100g flaxseed (crushed)
100g ground almonds
Each 50g of.....
Hemp seeds
Chia seeds
Sesame seeds
Pumpkin seeds (chopped)
Amarinth
Sunflower seeds
Spelt bran
Oatmeal

6 eggs
500g low-fat Curd Cheese
1 teaspoon sea salt
1 bag of Backing powder

Mix everything at once

Pour into baking pan

Bake at 170°C 0for a 60 - 70 minute - top and bottom heat.

Evening all,

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablets.
Espresso.

L: Mushroom and spinach frittata made with eggs, grated Cheddar cheese, onion, cream and oregano.
Green salad using watercress, chicory, sweet cicely, celery and salad onions, dressed with an olive oil, balsamic, garlic and mint vinaigrette, topped with roasted cashews.
Water to drink.
Skipped pud.

D: Seafood salad made with brown shrimps and mussels, lettuce, cherry tomatoes, Halkidiki olives, Romano peppers, salad onions and mustard cress, with a dollop of homemade mayonnaise for dipping, topped with pecan halves.
Water to swallow tablets.

Hi All
Had a lovely day out at Hever Castle to celebrate friend’s birthday. I packed a picnic for the three of us including sandwiches, crisps, strawberries and water (I just had rollitos and strawberries) then mid afternoon tea and cake (I had one of my LC lemon muffins). However I did give in to a scoop of coffee ice cream to join in with the others ;) Btw the grounds were stunning and we found a good picnic spot in shade overlooking the lake twice but we had to quickly abandon the tour of the castle due to the volume of people in a very small space.
Supper back home was baked spiced chicken breast with green veg.
@jomar_uk your unenviable task of balancing an eating regime for Crohns and Diabetes must be a constant dilemma. As you may know a lot of NHS nutritionists and dieticians are not in the loop about LC not just sugar being unhelpful for D. I understand you must eat to your Crohns but if they could work out a plan as LC as possible that would help. I wish you well.
@Annb and @maglil55 sending gentles hugs for the pain and mobility issues.

The Crohns team have “seniority” I think because of the up coming surgery and they want me to be as healthy as possible. You are spot on about a balancing act. To be honest it’s trial and error as 2 sheets of diets put in front of you with no in depth Explanation is challenging.

I know both teams say the Crohns must have priority due to the strictures and lack of blood flow flow to lots of parts of the small Bowel. To be honest I feel quite well and active. It’s just when a flare hits, it’s without warning and it’s blues & twos again which I would prefer not to have to go through.

There are many far worse off than I am, I am grateful for a sounding board to express frustration, hopefully encouragement and obtain help till I can reciprocate.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: bolognese with sliced sautéed courgettes and a sprinkling of grated mature cheddar cheese.

@jomar_uk I don't envy you trying to balance the 2 sides. It's a nasty illness.
Today 17 August, bed 7.1 FBG 6.4. I've spent most of today in the low 5's. Hubby has come down with a stinker of a cold, which I am trying desperately to avoid catching. It's bad enough struggling to walk without succumbing to a bug as well! I'm still on 2 crutches.

Ɓ. Water and a Benecol dairy free.

A much later breakfast - 2 slices of SRSLY toast with cheese triangles.

L. Finally, a TAG when Hubby emerged from bed. I'd dropped both boys at school and dragged myself into Tesco to try to find something that would tempt Hubby to eat. I was in a cold sweat by now.

D. Boys were here. Hubby decided on a seeded roll with ham and egg. I eventually had 2 bits of crustless quiche and my CC little chocolate pot. Another TAG as well.

I'm feeling a bit queasy, but I had to eat as I have a 2nd dose of antibiotic to take. On a more positive note, my hand is clearing up. Now, if only I could walk with only one crutch again?

Back home to a nearly empty fridge so
Mid morning 2 ryvitas with pate and cream cheese. 2 nut bars

Dancing then a supermarket shop
Ate most of a bar of 70 % chocolate on the way home. That set me up for a carb binge of
1 icecream lolly and way too many tastings of some dishes I'm preparing for vegetarian guests this weekend and vegan the week after.

I had a large tin of mango puree in the store cupboard from pre-diagnosis days. Made a mango cheesecake using sugar free jelly and cream cheese and cream, the only sugar is in the ginger nut biscuit base (and the mango of course). Then combined some of the puree with coconut milk and coconut cream and put in in my ice cream maker to make a vegan sorbet
Kept licking and tasting all the way through.

Feeling quite sick and bloated so have fasted since.

Both boy and hubby have taste approved the sorbet. I reckon it's about 60g carbs for 8-10 servings.

The cheesecake is looking good too, tasting will happen on Saturday

Bacon and an egg again for breakfast, but I did ring the changes by having streaky instead of the normal back bacon... ;)

G&T with a packet of pork scratchings for lunch

Baked chicken breast flavoured with Pataks Korma paste, yoghurt, lemon and garlic, cauli rice sautéed in the bacon fat from breakfast, sautéed mushrooms in butter.

Thick double cream with teasp cocoa

Around 13g of carbs.

It was chicken drumsticks. By the time I got home I was too exhausted and in too much pain so I took more painkillers and slept. About 6pm I threw the drumsticks in the oven and had them just as they were. When Em came in I did manage to mix a batter for pancakes, with her doing all the fetching and carrying and the actual baking but was in agony.

Just wondering if there's something more sinister going on with my leg. Nurse says I'll have to decide between swollen legs and less pain so not much help there. I'll try to talk to somebody medical tomorrow because I'm beginning to be concerned about phlebitis ofr even thrombosis. I know little about either condition but what is happening right now just ain't right.

BG has been in the 5's and 4's all day.

2nd meal will be home-made sausage. The food mixer does all the work for that and I'll chuck in some onion and passata, or tinned tomatoes and shove that in the oven. Should manage that allright.

Spoke to GP about the legs. She reckons it sound like plantar fasciitis - it is similar but much more painful than when I had it before but I didn't know it could travel through the ankle up into the legs. Told to self refer to the Podiatry Department so I downloaded a form and have sent that in by e-mail. Now wait until they deal with it. Meantime, GP says, try not to take as much of the painkillers.

You sound to me like superwoman!!

My practice diabetes nurse just phoned in last hour they are getting someone to phone me over 6 weeks to explain diets etc.. better late than never and I’m extremely grateful to them. They really go out of their way to help me!

I hope you stay clear of your hubbies cold.

I was thinking if you cannot walk with one crutch you could always hop? (Memories of sisters playing hopscotch spring to mind :)

Double espresso.

L: Packed lunch made with leftover mushroom and spinach frittata.
Lettuce, Romano peppers, celery sticks and cherry tomatoes with a dollop of homemade mayonnaise for dipping.
Almonds and hazelnuts.
Water to drink.
Wild blackberries picked on the hoof to round off lunch.

D: Smoked salmon and cream cheese salad made with sweet cicely, vine tomatoes, lemon verbena, Kalamata olives and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pine nuts.
Water to swallow tablets

Hungry first thing again and low fasting bloods so broke fast again a bit earlier than normal I always start my fast by 18.30 in evening so even today had done 16 hours fasting - often don't eat until 1 so usually 18hour fast. It's a method that works for me .
10,30 keto roll with two boiled eggs
1ish some berries with LC brownie and yoghurt
5ish salmon with green beans and dry white wine followed by LC brownie and decaffeinated coffee.

10:30 ish (so a 20 hour fast) a 90 second bread roll with butter and marmite.

Cooked some lc seed crackers, some roasted peppers and some lc blackcurrant muffins. The latter are safely in the freezer, minus one for testing purposes.
L: a few crackers with pate. A small icecream

D: chicken breast briefly marinaded in jerk seasoning and a hit of yoghurt then cooked in the airfryer, served with green beans and carrots tossed in butter.
Blackberries with cream and a couple of spoons of a "protein pudding" new from lidl yesterday. Supposedly 5 g carbs per 100g but tasted very processed to me. Won't be buying it again.

Easier said than done when in pain. Can you stand ice packs?

@jomar_uk - that's the reason for the Supergran avatar. I seldom have time to draw breath, but it's a darn site more difficult currently. One of these knee scooters that only MSPs with minor injuries get might help. There again, they're not the brightest. Google scooter in holyrood - you'll see what I mean.

Friday 18 August - half day Friday! Yay! Bed 7.2 FBG 6.3 usual school runs and back to transporting DIL to her clinic. I did get over an hour to myself before repeating the process.

B. Water and Benecol dairy free.

Later on, 2 slices of SRSLY toast with Ploughman's Pate and finally a TAG.

L. I actually managed into my butcher's on 2 crutches, and they kindly put my purchases into my car. Got lovely deli roast pork, which became a SRSLY roast pork sandwich. First I've enjoyed in a few days.

D. A mix of scallops and prawns in a creamy sauce which these spicy halloumi bites I like. I didn't finish it, but it was necessary to be able to take the meds.
CC little chocolate pot.

I had half a fulfil bar at one point. Still drinking loads of water.

I'm still on 2 crutches, feeling less queasy, and an appetite of sorts is returning. Legs are still not great, though.
