What have you eaten today? (Low carb forum)

Trusting this Sunday morning finds people 'on the mend'. @Annb my husband had a painful problem with his arch, Dr diagnosed it as plantar fasciitis. Have you searched on Amazon for 'flat feet insole support'? The search will come up with some wonderful ideas. What worked for him, quite cheaply in fact, was a sort of 3" elastic band that went around his foot, it had a pad attached that went under the foot. It can be worn over or under socks. He found relieve with the bands and after a few weeks his pain went away, we'll never know if it was the band, but that pain hasn't returned since. If you're handy with a sewing needle I'm sure the support can be made.

Friday:

Breakfast, streaky bacon with an egg
Lunch, home made veg soup (chicken stock cube, cabbage, fennel, celery, onion, mushrooms), garnished with cream.
Dinner, same as lunch.

Yesterday, Saturday

Breakfast, streaky bacon with mushrooms
Dinner, liver and onions, sauteed cauli rice, French green beans from the garden

I have used a variety of insole supports over the years, including ones made specially for me by the podiatrist at the local hospital but they always caused too much pain. When Neil was just learning to walk, the clinic told us that he had flat feet and prescribed boots to correct the problem. Without the boots, he walked very well for a one-year-old. When we put the boots on him, he cried and refused to get up onto his feet at all. A doctor then told us that we should keep the boots off him - his feet would sort themselves out as he walked. His arches never did fully develop but he was as active and quick on his feet as any other child. Then he worked out his own way of walking to keep his feet comfortable - toe down first. Maybe that is why he is so quiet - just appears out of nowhere.

Dinner last night was a casserole of aubergine, pork mince, onion and tomato with some apple chopped into the mix with the pork. There was lots of it and there's enough left for a meal today plus a bit more that I couldn't get into the casserole so just put it aside for cooking today. If I can find space in the fridge, I'll cook it off and put it in there; if not it will be the same meal for a third day.

Just thinking about breakfast and getting a bit peckish. 2nd cup of tea first, then I think I feel like having some peanut butter on RyVita.
 
Sunday 20 August - bed 5.6 FBG 6.1. one thing with all this malarkey, my BGs are a good bit lower. Currently, down at 4.6. I haven't seen 4's for a long time.

B. TAG and a bowl of the Paleo mixed Berry granola, 4 blackberries, sugar-free coconut milk. Benecol dairy free.

L. 2 slices of SRSLY bread with Benecol spread, Tesco rare roast brisket, vegetable salad. Another Benecol dairy free.

D. Didn't really want to eat but had to finish meds. More of the rare roast brisket with vegetable salad. 6 walnut halves. CC little chocolate pot.

Lots of water again. I did manage to get youngest (swimming) grandson to his swimming lesson. He carried the gear, and I carried myself on two crutches. I can see the difference just a few weeks at the swimming club has made. He's not letting on at the moment that he's training with a club. I was amused though. One boy that continually tries to overtake him was gaining on him today on a backstroke length. GS was just using a relaxed stroke when he suddenly became aware of the other child. He just ramped it up a couple of gears and left him trailing. Don't think he quite knew what had happened. He's older than GS, too, but lacks his stamina. I needed to elevate the foot when I got back, but at least I made it.
 
Evening all

Today's plans included a family picnic. I made a vegetarian pie to pass round. My husband looked at the forecast and decided we would have 'gazpacho' weather. (My better half's a dab hand at gazpacho, which he learnt to make as a young man on secondment overseas). It's a refreshing pick-me-up especially welcome in sweltering, hot weather such as we experienced here in June. Thankfully, temperatures did not reach those heights, but once the wind abated, it was hot and humid.

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a tomato, all garnished with chopped, flat-leaf parsley and seasoned with black pepper.
Water to swallow tablets
Espresso.

L: Spinach and goat's cheese pie, using almond flour, sesame seeds, oat fibre, butter and an egg for the pie crust and spinach, garlic, nutmeg, eggs, sliced goat's cheese and a little grated Cheddar for the filling.
Salad made with cucumber, salad burnet, salad onions, rocket, raspberries, strawberry halves and mint, dressed with olive oil, garlic, a squeeze of lemon juice and topped with toasted sesame seeds.
Gazpacho to drink.

D: Seafood salad made with king prawns, brown shrimps, lettuce, sweet cicely, Romano peppers, celery, cherry tomatoes, Welsh onions, oregano and Kalamata olives with a dollop of homemade mayonnaise, topped with pecan halves.
Water to swallow tablets.
 
Black coffee until 1.30 then mix of kimchi, a couple of garden cherry tomatoes and sardines in olive oil with half a keto roll then berries and yoghurt
5ish roast Chicken, sausage and cauliflower cheese with glass of dry white wine then two squares of 100% chocolate with decaffeinated coffee.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a Carb killa.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake!

Hi and thankyou! It's 150gram organic peanut butter, 1 egg, 50g sweetener, pinch of salt, pinch of cinnamon about 1 gram of carbs per cookie and gorgeous! I make them a lot. Another one is ground almonds, double cream, butter and an egg,4 squares of dark chocolate chopped up... not good for the calorie conscious but so good and cause no spikes in blood sugars I only make those ones occasionally!
 
Have family staying and been busy. Can't quite remember yesterday's food fully.
There were some biscuits in the morning, lots of blackberries while out picking more for the freezer.
Dinner was pizzas for everyone, but I just had the toppings.
The mango cheesecake was a hit.

Today was
Leftover mango cheesecake for breakfast.
Picnic of rollitos, a chicken drumstick and olives in St James Park amongst all the tourists.
A visit to the RA summer exhibition, not too crowded and air conditioning, yay!
D: cold meats, cheeses, salad followed by celebration carrot cake. It was full sugar version but oh so tasty.
Rather too many white wines but all very watered down with soda.
 
Was out all day with a friend, had chicory leaves an hummus on the road.
Forgot to take what I ws going to have with the green beans my young neighbour cleaned from the freezer so I had a slice of low carb bread with a couple of slices of charcuterie type chorizo, three tiny eggs from the black and white spotted chicken, ans a soft brie like cheese for my evening meal.

My elbow was very happy I thought to borrow a sling from my neighbour for the day out, but it gets loudly angry with me any time I make it do anything apart from laying in my lap or hanging in the sling.
I guess I'll have to resort to buying pre-sliced cheese and veggies next week, and get really creative with my meals.
It's times like these I wish I could just pop a pizza in the oven or microwave some ready meal.
 
Hi All
yesterday usual brekkie was slice LC toast, butter, copious tea.
lunch was two scrambled eggs, cup of tea.
early supper was selection of bbq meat (2 meaty sausages, piece of chicken and beef burger) and accompanying Greek salad.
Today will be a repeat.
Cold leftover bbq meat with salad so easy peasy.

@maglil55 sorry to hear you still need two crutches, good on grandson besting the big fella in the pool, proud grandma!
@Antje77 sorry for the challenges of putting meals together. Can understand chopping near impossible, whisking eggs for omelettes etc possible with one hand and cooking on a pan. Maybe you could bribe young person next door to do list of prep every couple of days ;)
@Annb hope your legs and feet improve soon.
 
DIL has been doing LC(HF) for a few days now (a bit wary of the HF part so still trying to use some low fat products) and is delighted with the results. She has had to cut her insulin drastically, is running a steady 4-6 and has lost 4lbs in weight. It makes her feel that she can do this thing, at last. I did warn her that some days it will go pear-shaped so to be prepared, but not daunted. She seems to have taken that on board.

Change of plan on the cauliflower cheese. I forgot that I still have some of the aubergine and pork casserole waiting to be finished off. So I'll get that used today and keep the cauliflower for tomorrow.
