What have you eaten today? (Low carb forum)


What a great idea! I’m looking forward to reading about your test runs with it. We have spates of power cuts so putting a slow cooker on and leaving it for the day is always a bit of a gamble but this would be perfect once the initial heating up was done.
 
@Annb that's a fantastic idea, didn't know what they were called, but one's been on my to-do list for a while now. I've got the 'clean' sheep's wool (the best insulator ever) to stuff the bag with. The wool came side a hamper of meat that was sent through the post, a present from step-son. I feel the urge now to crack on and make it!

For a late breakfast had 2 back bacon rashers, 2 eggs, and 3 mushrooms. 3x coffees with cream.

Early dinner was a chicken shepherds pie made with left over chicken and stock from the carcass. Made a sort of mirepoix with a tiny onion, half a carrot, mushrooms and a stick of celery, tried thickening the stock with cream cheese (it didn't really work, tho' I couldn't detect any cream cheese flavour). Topping was left over creamed swede from yesterday with an egg added, the topping was 'topped' with grated cheddar.

Had a glass of merlot, sorry I drank it as it was 6g of carbs. Should have stuck to a G&T

So far carbs are just under 22g.

Large very strong coffee with butter and double cream for breakfast.

Half leg of lamb in onion, garlic, red wine, tin of tomatoes and slow cooked to disintegration.
Braised cabbage.

Plenty of leftovers.

Partner also had a baked potato, but I am strong!!
 
Today for the first time since diagnosis of pre diabetes in July I ate in restaurants as we were out.

Breakfast was a so called breakfast omelette. It was a 3 egg omelette with bacon , sausage, mushrooms and tomato. It was very good and no serious spike.
Lunch I had chicken satay and salad. I was worried as it tasted slightly sweet but two hours after eating I was down to 6.3.
A result!
 
B - scrambled eggs on lc toast
2pm h/m yoghurt with seeds then out for school run. It’s about 45 min trip normally but there are so many road works/closures atm I had to leave even earlier. Took a bag of h/m trail mix to eat while I waited if I was early ( I was). Trail mix was almonds, toasted shredded coconut and Absolute black chocolate.
D- chicken thighs in garlic, mushroom and Parmesan cream sauce. Green beans. Red wine.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a Aldi protein bar.
Dinner: chilli with cauliflower rice.

 
DIL has just been in. She will be leaving tomorrow morning early on the ferry to go to the Queen Elizabeth hospital in Glasgow for her surgery. She hadn't had any information from them so she phoned today to find out how long she would really expect to be kept in and was told that she might not be admitted after all because at the moment they don't have a bed for her. She should phone tomorrow morning to find out but by tomorrow morning she will be on her way and between Ullapool and Garve before the office opens.

We go to hospitals from here on expenses from the Health Board because travel is so expensive, even by ferry and car, but if she is not admitted to hospital, she will have to pay back the ferry fare to the Health Board. Add to that, she has been told that her case has priority and it has to be operated on asap. But still, until she is on her way, she can't be told whether she will be admitted.

Then there is the issue of her low carb diet over a week or more with no access to external supplies beyond the few days her daughter will be able to stay with her and bring food in for her.

We can only hope that it will all work out well.

Meantime, Em will be here early every morning because her Dad has to start work at 7 am (Christmas working hours) so she will be dropped off here at 6.30 for breakfast (and maybe washing and dressing - she does occasionally turn up in her pyjamas.

Breakfast pancakes, I guess. She usually won't eat before she goes to school, which seems like a bad idea to me, but she will usually wake up sufficiently to have something here.
 
Same meal as yesterday, except I tried a very quick and lazy way of preparing the meat.
Didn't expect much of it but it turned out very nice, almost as good as with a working oven!
I put the pork belly pieces in the microwave for a couple of minutes to get done, and transferred them to the frying pan for a bit of crust while my plate of veggies was reheating in the microwave. Egg fried in the pan together with the meat.

Sorry for the ugly plate, the pretty ones are all waiting for the dishwasher to be filled up!

 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and four tiger prawns, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Cassarole using chestnut mushrooms, kale, eggs, Cheddar, cream cheese, double cream, thyme and garlic.
Steamed French beans smothered with butter.
Water to drink.

D: Seafood salad made with crab, brown shrimps, lettuce, apple peel, celery, baby plum tomatoes and mustard cress with a dollop of home-made aioli for dipping, topped with chopped parsley and toasted almonds.
Water to swallow tablets.
 
Belated Happy Birthday
It was mine too yesterday, following my "not quite my birthday" meal the day before. At least I managed two days of meals out.

I do a similar thing with the airfryer as they are indeed a swine to clean.

I don't find the AF too tricky to clean at all, and the new on is easier than out last.

Do you use Elbow Grease degreaser? It is much better than Mr Muscle or the others I have tried. A couple of sprays, leave for a minute or two, then wipe down. Grease gone. We do always have a drip dish in place though.
 
B: ff greek with seeds and raspberries
First exercise class in ages as teacher was away, then I was. Hadn't realised how stiff I'd got.
Tea and a catch up afterwards with friends
L: 4 hard boiled eggs with mayo.
Had a result whilst in supermarket yesterday 15 shelled hard boiled eggs £1.Have mashed the rest with mayo and frozen in portions .
Tried @DJC3 hummus recipe . Very tasty. It made a lot so have tried freezing some in small portions.
Used up half an open can of coconut milk in a chocolate mousse thing by adding cocoa and chia seeds and yoghurt. 3 good portions.
D: small steak with cauliflower cheese.
Glass white wine with soda

Still have cauliflower to use.
What's your favourite recipe using cauliflower?
 
I've not used any chemical cleaners, only my elbow grease along with very hot soapy water after every use. Then I started using foil trays to cut down on the time spent & it's fine, not perfect though, good for a couple of years + use. Maybe I'll get some Elbow Grease to give it a birthday.

L HM mushroom soup. Spoonful hummous, rocket, avocado, tuna
D Savoury mince, mashed cauli and celeriac
 
Break fast - Almond milk coffee 2cups, chia seed pudding with 30g peanuts.
Snack - Home made almond, cocoa butter chocolate with almond milk coffee
Lunch - Avacado salad, raw red cabbage, egg whites fry with mushrooms & fenugreek leaves, tofu fry, cauliflower fry, egg curry.

Snack - almond milk coffee
Dinner - avocado salad, red cabbage, egg white fry, cauli fry, egg curry, chia seed pudding with ground nuts.

Welcome to this friendly food related thread and had to say well done to you on bringing down your hba1c so quickly and your weight loss too congratulations. I find 6 years into remission this thread helps me to stay on track but also gives me loads of ideas for meals and snacks.
 

Welcome! So glad you decided to take the plunge and join in. You’ve done brilliantly to get your HbA1c down to normal, non diabetic levels. Posting your food on here will help to keep you focussed, it certainly does with me.
 
Morning all. Well, Pensioners lunch turned out to be C of Mushroom soup (small dish), then baked chicken with carrots and cauli (I always give the potatoes to the men on my table cos sometimes the cook forgets not to put them on my plate). I took sf jelly with cream and blueberries with me for pudding. For tea I had ham and coleslaw plus 4 crackers with guacomole on them. My level was still high! Lunch today will be a shepherds pie with mashed swede on top plus cauli. for tea my favourite pink salmon with acv and mayo. Thanks @Annb, I said it sounded magical! What a brilliant idea! Will be interesting to seehow you get on with it. Have a good day folks.
