Coffee and cream x 2
Coffee and unsweetened almond milk
Cheese and onion, tomato Omlette.
Steak tomato and Balsamic vinegar sauce.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: chicken in mushroom sauce with roasted Mediterranean veggies.

About 11am had 1 Heck 97% pork sausage. 2 fried eggs, and 2 back bacon rashers.

Mug of cocoa with cream and 3x 1g carb hm shortbread biscuits, later in the afternoon had 25g of pecan nuts with a G&T

Beef stirfry for dinner, marinated a sirloin steak, after cutting into strips against the grain, in sesame seed oil, Kikkoman soy sauce, ginger, garlic. and a splash of Dr Wills hot sauce, then frying it with strips of celery, cavolo nero, white cabbage, green pepper, and cauli rice.

4 squares of 90% Lindt chocolate

Mug of cocoa with cream, it's so cold outside Brrr

About 25g of carbs today.

Evening all

Today:

B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Courgetti alla puttanesca made with anchovies, Kalamata olives, capers, canned tomatoes, garlic, olive oil, butter, parsley and spiralised courgettes.
Braised cavolo nero with garlic and toasted almonds.
Skipped pud.
Water to drink.

D: Seafood salad made with brown shrimps and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, Halkidiki olives and salad onions, with a dollop of home-made aioli for dipping, topped with walnut halves.
Water to swallow tablets.

Breakfast - 2 cups almond milk coffee. Chia seed pudding with 65grams peanuts & walnuts
Lunch - Salad, beets - 1spoon, small zucini fry, peanuts salad. Almond milk coffee.

Bit of a rush this morning - by the time I got Em up, showered and breakfasted, then got my own shower, I had about 2 minutes left for breakfast before going to get my rebandaging done. So breakfast was 2 RyVita with cold bacon (I'd given Em bacon and egg, but she left the bacon). Filled a gap!

Can't remember if I actually took my basal insulin this morning so I am assuming that I did - BG is still only around 7.

2nd meal today: cold roast chicken and some more of the cabbage/carrot stir fry.

DIL will be having her surgery at the moment so hoping that it will go well. The surgeon told her it was risky and there was a reasonable chance that it would lead to paralysis. However, if she didn't have it done, that would definitely lead to paralysis. Hobson's choice really....

Steamed Brussels sprouts tossed with parsley and garlic butter.
Carrots, onions and apple peel sautéed in butter.
Water to drink.
Skipped pud.

D: Plan to have seafood salad made with king prawns and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, lemon verbena and salad onions, with a dollop of home-made aioli for dipping, topped with roasted macadamias.
Water to swallow tablets.

Late back from school run as I got caught in a blizzard! Very unusual for these parts and no roads gritted. Needed strong coffee when I got home. Then an early lunch of a small sirloin steak and fried eggs.
Mid aft h/m yoghurt with blueberries and seeds.
Dinner locally caught lemon sole (with crispy skin @maglil55 ) with lemon butter, steamed cavolo nero and celeriac. Montezuma’s absolute black with almonds and cup of tea to follow.
@Annb keeping fingers crossed for your DIL

@Annb Sending positive thoughts towards your DIL, it's got to have been a long trying day for you all. x

Breakfast was a fav chaffle recipe made with Mozzarella. Eaten with a heaped tablespoon of Phily on the top.

Cocoa with cream and 3 hm lc shortbreads

Rotisserie chicken breast, and two different kinds of chips, one lot was swede and one celeriac. which one was the best?

My 'experiment':
75g of celeriac (uncooked) has 4.2g of carbs, where 75g of swede (uncooked) has 3.6g carbs. The celeriac seemed to have cooked quicker but there weren't much in it. When cooked I didn't notice much difference in taste. The celeriac was more limp when cooked, whereas the swede cooked more like potatoes and held together better. Both were tossed in grapeseed oil and salt before cooking. Celeriac was £1.50 a kg, swede was about 70p a kg. My hubby preferred the celeriac, it certainly is easier to peal.

For afters I tried a pot of 'Hartleys 10 Cal', basically it's a jelly, but rather nice and only <0.5g of carbs - was thinking this would be nice in the summer, frozen with a lolly stick in the middle. Asda have them on a sale at the moment for £0.50.

Carbs for the day around 15g.
