What have you eaten today? (Low carb forum)

The past two days I had the rest of the mixed veggies from the start of the week, with a fried egg and almost cremated pork belly pieces.
I killed my neighbour's small electric oven last week by leaving it on for almost a day on high, and he promptly ordered a new one even though he was away for work for the week.
New oven came so I thought to be a good neighbour and unpack it and plug it in, in case he wanted to use it after coming home late on thursday night. Nothing to do with me liking my pork belly pieces best from the oven of course.

Well, apparently the old one hadn't been working all that well for a long time, this one proved to be a whole lot hotter!

Today I was forewarned, and I took my chances with a 'fish fillet á la Bordelaise' (Aldi, surprisingly little carbs) and Brussels sprouts with grated cheese, and I didn't burn the fish!
I'm quite happy I did cook at all, it's the first time I got myself to do so after a cold afternoon swim. So far, every time after swimming I made do with a sandwich or such.

I missed the gym and my cold swim on wednesday, due to snow. Too slippery on the road for my tastes, it's not worth risking your life for.
But I still wanted to do the swim thing because I wanted to know if I'd still like it now it has gotten so much colder. Water temperature last week was still around 8°C, but this week the tap in my neighbour's kitchen froze.
So I went today, with two other idiots, and to my surprise I still liked dipping in the cold water even though I swam through ice!

Brrr! I'm happily huddled over a heater in my kitchen and you still make me feel cold, just looking at the pictures. Brave lass.

Yesterday
B Greek yog,raspberries, sprinkle of coconut flakes
L Scrambled egg, tomatoes,mushrooms, spinach
D Salmon, celeriac mash, broccoli and asparagus
 
Breakfast - 90grams nuts - peanuts, salted almonds, cashews, walnuts. 2 cups of almond milk coffee
Lunch - egg white omelet with spinach leaves, string beans fry, tofu fry, salad, chayote squash fry, greens fry.

Snack - 40grams nuts. 2 cups of almond milk coffee.
 
@Antje77 I use the app and the only reaction available is ‘like’ - that really isn’t superlative enough for your swim post sorry. I’m really impressed, it must have been so invigorating. Good to hear about the new oven too.
B- scrambled eggs and 1/2 avocado
Grandchildren staying this weekend so we took Dennis out for a long frosty walk and came back for a late lunch of leftover soup then settled down for a film ( Matilda, a box of maltesers opened so they could have one each time Miss Honey appeared. I had Absolute Black choc)
Nobody is hungry yet, maybe some cheese&crackers/celery/nuts later.

Yesterday was a bit of a messy day eating wise, I had a go at a few different recipes, most were unsuccessful and not to my taste, but the experiment with making hummus was a success. Basically it's a roasted head of cauli, blitzed and treated like chickpeas. The cauli and the peas have the same texture, I thought it worked really well. So my main meal of the day was chaffles with my hummus.

Today, 3 cocoas with cream (purely for comfort).

Had an early dinner of rotisserie roast breast of lamb..... what a disaster! I should have known the breast wouldn't be suitable. Not to worry, the sliced lamb has been chucked into the slow cooker with an onion, carrot and celery for tenderising, it'll become a shepherds pie for Monday's dinner. My cooking is a bit 'hit and miss' at the moment, though the swede chips was very nice..

Cauliflower hummus. The 'shiny liquid' on top is olive oil.

 
Evenin’ all - we miss you George D. Been dealing with some tummy issues and JKP’s hearing ( both all solved) visiting relatives, laying wreaths on graves, collecting grandchildren, and attending their concerts in Cathedrals and school halls. Result has been no real meals. Tired, hungry and very cold - my honest usual winter experience of LC - can’t lie about this. More sensible food day today.
Tea and Advent calendar cheese - 15 gms
Smashed avo (big M and S one), scrambled egg (3 X large) on KC toast for brunch
CWC etc with triple choc crunch Adonis bar
Meatballs slow cooked in passata, celeriac mash and creamed spinach, water. I've honestly taken more photos posting food pics here than all the time I've had a phone or camera. @shelley262 glad you liked the pasta - I use NLCK.

Out for our big (35+) family Xmas meal & evening, already picked my meal, pate, roast beef then cheese & a few G&Ts thrown into the mix.

@JenniferM55, just to say, when I do air fryer roti lamb breast, I cook it until it looks ready, then I take it out, slice it & put it back in for 5-10mins on high, in a foil tray, it then comes out perfect. Crispy, juicy & delish!

Smoked salmon later
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: egg mayo on a low carb roll with leafy salad.

 
I formally assess you as insane.

Evening all

Today:

B: Two poached eggs and scallops with chopped, flat-leaf parsley and asparagus spears smothered with butter, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Tuna steaks rolled in finely chopped celery and thyme, baked with red peppers and mushrooms, moistened with double cream and topped with extra mature Cheddar.
Steamed French beans with a knob of butter.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

S: Coffee with a dash of milk (gave my hands something warm to hold while OH tucked into refreshments, none of which were diabetic-friendly).

D: Seafood salad made with mussels and brown shrimps, avocado, baby plum tomatoes, mint, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to swallow tablets.
 
I don't usually eat before yoga, but felt I needed to today because of the cold.
B: small ff greek with seeds and 8 blackberries

Resisted all the cake at village coffee morning
L: lc tuna melt bread. Had half with some extra strong cheddar. Then a chocolate coconut chia pudding I'd forgotten I'd made earlier in the week

Mid afternoon, making the sugar packed jars of jellies to give away. Added some spices and it's ended up rather good. Trouble was it took rather too many tastes to get it that way.

Later 1 lc cinnamon and cherry muffin.

Out tonight at village event. Food on offer was crudités, lasagne with French bread, trifle.
I'd gone slightly prepared so ate the curry and avocado dips with the half of tuna roll made at lunch time. The lasagne actually was packed with mince so I ate most of it avoiding the pasta and white sauce. The bread went to hubby. As did the trifle. I didn't need the 4 chipolatas I'd taken but did eat a bit of cheese and some almonds.
Preparation was key.
2 small glasses wine and a pint of water.

Well, lovely to see all the family, the meal was good. I'll admit that I did eat 1 small roastie, 1 little Yorkie & some parsnip. Then erm, I couldn't resist, I had some 'normal' crackers with the cheese, I just thought what the hell, it's nearly Xmas. BTW, Isle of Wight Blue is a lovely cheese, so I found out, very pleased it's local. Sadly, I had to come home early, I bought a 'new' foldable powerchair today, I had tried it out, but found it was not good for even an hour, I gave it 2 hrs, I was in so much pain, I did an eat & run. The chair will be up for sale tomorrow!
