What have you eaten today? (Low carb forum)

The past two days I had the rest of the mixed veggies from the start of the week, with a fried egg and almost cremated pork belly pieces.
I killed my neighbour's small electric oven last week by leaving it on for almost a day on high, and he promptly ordered a new one even though he was away for work for the week.
New oven came so I thought to be a good neighbour and unpack it and plug it in, in case he wanted to use it after coming home late on thursday night. Nothing to do with me liking my pork belly pieces best from the oven of course. :angelic:

Well, apparently the old one hadn't been working all that well for a long time, this one proved to be a whole lot hotter!

Today I was forewarned, and I took my chances with a 'fish fillet á la Bordelaise' (Aldi, surprisingly little carbs) and Brussels sprouts with grated cheese, and I didn't burn the fish! :joyful:
I'm quite happy I did cook at all, it's the first time I got myself to do so after a cold afternoon swim. So far, every time after swimming I made do with a sandwich or such.

I missed the gym and my cold swim on wednesday, due to snow. Too slippery on the road for my tastes, it's not worth risking your life for.
But I still wanted to do the swim thing because I wanted to know if I'd still like it now it has gotten so much colder. Water temperature last week was still around 8°C, but this week the tap in my neighbour's kitchen froze.
So I went today, with two other idiots, and to my surprise I still liked dipping in the cold water even though I swam through ice!

You are as insane as DIL and her fellow swimmers! They swear by it, though.
 
@Rachox I’m late posting but my hugs re your foot are no less heartfelt.
Had a busy day today, mostly at local farm helping to make up and stamp boxes for the nearly 2,000 turkeys they have ready. A better job than no 1 daughter who worked 12 hr days last week plucking them and getting very cold.
Black coffee before school run and another before getting to the farm.
Home briefly at lunchtime to take Dennis out and eat a quick meal of fatty mince with an egg cooked in the fat.
KC order arrived! Very quick delivery. Most went straight in the freezer but I had a taste of raspberry, almond & cinnamon traybake. Very nice, thanks for the recommendation @ianpspurs and @shelley262 not as sweet as the DGF cakes which is a relief. I hadn’t noticed they contain xylitol though, so will have to keep well away from Dennis.
Dinner - too tired to cook much so more fried mince with some leftover celeriac dauphinoise, a pretty uninspiring meal. H/m yoghurt with berries and seeds was better.
 
Aquajogging late morning, grocery shopping afterwards, followed by a short cold swim outside before going home, where I found two extra dogs in addition to my own two and the one of my neighbour which is sleeping over monday through thursday while neighbour is away for work. My friend forgot to inform me I'd have his dogs for the week! :hilarious:
Then I had to put groceries in place, make coffee, and feed not only my own guinea pigs, bunnies and chickens, but also my neighbour's chickens, turkeys, ducks and cats.

The rest of the afternoon was a cosy affair to do with sharing a blanket and some almonds on the couch with 5 small dogs, and at around 5 pm I remembered I had wanted to make slow cooked beef.

I decided on a mystery brown block from the freezer instead, which turned out to be the cottage pie with minced meat and chicken liver I made last month, not bad at all!
It was an odd portion, too much for one day, too little for two, I guess I believed I'd make a salad to go with it or such when I froze it. No salad, but 5 very happy little dogs who all got a good share of pie! :joyful:

I'll st an alarm to remember to start the beef early tomorrow afternoon... :angelic:

B: ff greek with seeds.
Libre's on. Showed a 3 rise from 6mmol/L to 9 which lasted until 12 noon. Could be explained by a hot shower then 2 hours dancing, but am suspicious.

L: 2 stuffed portobello mushrooms. Ready made so breadcrumbs in the stuffing. 7 to 11 rise with steep steep drop after.

Not admitting to what I ate in the afternoon! But safe to say, never again.

D: steak, salad, 3 tortellini. Lc chocolate mug cake with shot of Baileys poured over

Comfort eating following some upsetting news. A very stressful time to come methinks.

D Chicken breast, mushroom sauce, broccoli and asparagus
Off to Prague for a few days tom. Hope I can stay on track, it’s a bit carby by the looks of it. Hubby is GF so hopefully we can find meats,cheeses andveg. Must remember, mulled wine bad
 
Sounds v tasty. Do you wear latex gloves while preparing it? I find the smell of raw fish just lingers on my hands no matter how many times I wash them. For that reason I only ever slap fish in a pan or baking dish - minimal handling! And we only have it on Tues because the bin men come Wed so I can chuck all the bones etc out.
Glad you are starting to fire on all cylinders again. You’ve been through it recently.
I wear a latex glove on my right hand. For some reason, the skin on the palm of my right hand (only) reacts to raw fish, and it takes ages to recover. I have no idea why it's just the right hand. I guess it's just another oddity of my body .
 
Sorry that you had some sad news, @MrsA2, always seems harder in December & comfort eating is just what it is & you needed it, no guilt for that & it's not every day.

Today, I baked! It's something I don't normally do, but I have swallowing tests tomorrow & they require me to take yoghurt, biscuits & cake for their different textures. So made lc shortbread & later carrotcake muffins that ended up being my own on the fly recipe. The air fryer kind of darkened them, thank goodness they're only for me & maybe there's 4th texture! I know they don't spike my levels, as, of course, I tried one of each. Had to do a late shop, (not realising I didn't have another pack of almond flour!) was already cream crackered so grabbed some end of aisle eyecatcher Tesco Smoked Salmon Canapes for dinner, 2.8 carbs & were quite nice, will remember them when I want a lazy fishy dinner.

@MrsA2 sorry to hear you've had some upsetting news take good care of yourself. It's always tougher during stressful upsetting times to keep things in balance.

Good luck with your swallowing tests I'm impressed by the effort you're putting in to bake lots of low carb options. Hope they go well.
 
Hi All
Yesterday usual brekkie of slice of LC toast, good butter, copious tea.
Lunch small wedge of Shropshire Blue, tomato & two water biscuits.
Supper was chilli beef with broccoli florets.
Today same brekkie.
Lunch will be eggs boiled or scrambled.
Supper will be baked cod with roasted Med veg.
@Rachox sorry about the foot complication and sending hugs.
@Annb hope Em gets better soon and you don’t get the lurgy.
@DJC3 you mentioned your “uninspiring meal” and your food never is unlike mine which follows a familiar dull pattern. I like the camaraderie here and the food accountability and ideas.
 
Bacon and eggs for breakfast. 2 eggs and just one rasher of streaky bacon because the rest is in the fridge in the back porch, which Neil has taken over for some painting so I can't get into it. Ended up just having sausages yesterday evening because the chicken was in the fridge out there and unreachable.

2nd meal, as long as I can get into that fridge, will be the coq-a-leekie that I should have made yesterday. If not I shall have to find something in the little freezer in the kitchen. Last time I looked it was quite uninspiring but you never know.
 
Morning all. Christmas lunch today for our Good Companions club. 63 of us! Luckily for me it will be a carvery which takes a lot of stress out of it. I'm not sure about the pudding but there will be men there so maybe I can palm it off on one of them! Yesterday at Pensioners lunch it was Cottage pie with cauli and carrots and I took my own jelly and cream so felt quite virtuous!!! Have a good day folks :)

@DJC3 hope you manage to keep your new cakes, which include xyitol, away from Dennis - will remember when Cooper comes to stay must admit I hadn't noticed that! You'd think it would have been highlighted on packaging as know it's very dangerous for dogs.
Breakfast kefir then two boiled eggs and LC buttered roll
Lunch a few berries and yoghurt and one square of 90% chocolate
Dinner hm Bolognese with some lc pasta and glass of red wine followed by LC Blondie warm served with cream.

@DJC3 the long cold hours your daughter worked on those turkeys is a timely reminder of the work involved in field to fork. Often forgotten and never seen by some. Thanks for the reminder and hugs for her and all the others. The use of xylitol not erithrytol and olive oil in bread were what attracted me to Keto Chefs but vet DIL alerted us long ago. @jessj hope tomorrow goes well.
Tea and a Fattbar cookie - not sure how on earth we ended up with no babybels.

KC MS Roll with cheese then and Adonis bar - chocolate crisp - sitting in the car for an hour for school pickup. Park up early or go to the next town and ask school to hold them. I say park, some are basically abandoned. engine actually left running

The day nutrition forgot but I needed some cals (72 kgs isn’t a good look on me, except when I was running, since I was about 14/15 ).with not too much fibre for now. Some very aspirational celeriac hash recipes about but I tested the basic premise. Pork and beef or venison mince, nduja, egg in a well atop sounds like a plan. Sage features in a few versions.

Evening all

Today:

B: Two poached eggs with a knob of butter, avocado and 4 tiger prawns, seasoned with good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Mushroom stroganoff made with chestnut mushrooms, dried porcini mushrooms, onions, vegetable stock, white miso paste, tomato purée, paprika, garlic, olive oil, butter, parsley and soured cream.
Cauliflower rice with peas and toasted cashews.
Braised cavolo nero with garlic and toasted almonds.
Skipped pud.
Water to drink.

D: Seafood salad made with brown shrimps and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, Halkidiki olives and salad onions, with a dollop of home-made aioli for dipping, topped with pecan halves.
Water to swallow tablets.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: roast chicken with pork and apple stuffing, Brussels, runner beans carrots and gravy.

Once again been a bit lax recording my day's meals, or should I say meal since I've had two days just eating one meal a day.

It's so easy to do one meal a day when we have to go out. Hubby had an appointment yesterday and today so being out of the house till dinner time is a great distraction. Tuesday he had the results of his Pet scan, the consultant said that it was 85% positive. In the words of my step daughter "85% is a distinction result" so we'll take that as great news. Today was an hour of physio, trouble was the appointment was at a hospital nearly two hours away, goodness knows how less mobile patients cope. Tomorrow we're out again, this time to SIL's, we've been invited for a coffee and mince pie before she goes on holiday for Christmas.... I'm just so worried about that mince pie, can my resolve really be corrupted by a hm full-carb mince pie?

Yesterday's meal was simple enough, it was a hm burger topped with cheese and served with swede chips. Today's meal was just as simple; leftover roast beef and gravy, served with creamed celeriac and sauteed mushrooms.
