I made a very lazy veggie soup yesterday: 25 cent bag of pre-cut 'soup veggies' to be used on friday. Looked and smelled fine on sunday, so soup!
I've never made a 'traditional' Dutch veggie soup in my life so I simply followed the directions on the bag of veggies: Boiled water with a stock cube (herbs, not meat). Added small balls of minced meat, I accidentally bought pre-spiced mince, which saved me the trouble of adding spices to the meat. Cooked for a bit, added bag of veggies, cooked a bit longer, ready!
Life got in the way of eating at a sensible time so it was just soup yesterday, followed by chicory with hummus and pork scratchings with aioli in bed.
Today I had more of the soup for a late lunch or an early starter, not sure which.

Main meal was a summery thing of bits and bobs, nicely compensating for the absence of veggies with our pure carnivore bbq on saturday:
A large plate of tomatoes and mozzarella with olive oil, balsamic vinegar, salt and pepper, lettuce leaves with chorizo and gorgonzola, and half of the chilli shrimp in the picture.

Just what the doctor ordered @IanBish with a dose of decent June weather.Today, on the hottest day of the year (in the UK), I had a home made chicken, mushroom, salmon and prawn Madras, with a small portion of wild rice. The weather wasn't that hot, and neither was the curry; I quite enjoyed it.

It's about a third less, @LivingLightly, but it was a small portion. I like cauliflower rice, but not with a curry so much. How does wild rice compare to basmati rice carb wise?
Thanks for this. Received bread and rolls this morning. Lovely and fresh. Rolls were delicious. All else is in freezer. Was concerned about delivery here to Northern Ireland. I ordered Sunday, they were sent out Monday afternoon and I have them here today - Wednesday.I’ve been meaning to say, take a look at the Low Carb Food company bread. That’s the company I always use. I buy their rolls, loaves and pizza bases. their email today reminded me to order more and tell you!

Really? @IanBish. Perhaps I should revisit the mushroom risotto I used to make regularly before diagnosis! It's about a third less, @LivingLightly, but it was a small portion. I like cauliflower rice, but not with a curry so much.
Assuming you'd be using arborio rice, or similar, I'd check the carbs @LivingLightly. I used to cook mushroom and asparagus risotto, but haven't had it since the before times.Really? @IanBish. Perhaps I should revisit the mushroom risotto I used to make regularly before diagnosis!
