Hi All been seriously missing in action for a week now. Since my holiday I seem to be completely “at sea” with everything. Have had the same brekkie of slice LC toast, copious tea. Dinners have been much of my regulars, chilli, chicken, chunky cod fingers, scrambled eggs one day.
Lunch are bits of salad with cheese or ham, nice having my own supply of fresh lettuce. Don’t know when I might have h/g tomatoes but am encouraged by lots of yellow flowers. Today plan two scrambled eggs for lunch. Steak stirfry flavoured with ginger, lemon (and other flavours I can’t remember) from the farm shop with red & yellow strips for supper.
Yesterday I had a small mashed avocado on LC toast for lunch with a big mug of tea. This was made super tasty by a sprinkling of Four Pepper & Salt from the Cornish Salt Coy which is also essential to put on cut tomatoes.
Looking back on this topsy turvy post you can see I’m still “at sea” haha.

Yesterday I marinated some chicken thighs in a mixture of spices (I forget which exactly) plus lemon juice, garlic powder, Greek yoghurt and olive oil. Then today I roasted them in the air fryer, and served them with fried mushrooms and garden peas for my lunch today.

First picture is the whole frittata I cooked today made with seven eggs the portion on second photo is a generous quarter of the whole served with salads. Frittata - started with olive oil and cooked down a few baby plum tomatoes and spring onions with a sliced cooked sausage and ham scraps remaining from an organic ham I cooked for a family party yesterday. When cooked these I added the seven beaten eggs and cooked through then added some grated cheddar cheese and browned and finished off under grill. Served with coleslaw, avocado baby leaves and olive salad plus a teaspoon of leftover potato salad.
Edit left over frittata in fridge for lunch tomorrow

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a H&B protein bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: chicken and coronation mayo on a LC roll with side salad and mayo.

Sunday breakfast as ever, pork sausage, egg, bacon, mushrooms, black coffee ( 3 cups)
no lunch just drinking lots of water and staying out of sun.
dinner lemon pepper chicken, cauliflower mash, sugar snap peas. Water to drink As don’t feel like anything else.
Going to finish the day with peppermint tea, as have had indigestion all day. :(

That's my kind of food @shelley262. In Summer, leftovers cold the next day are handy for packed lunches too.

Evening all

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of fennel fronds and garlic, drizzled with olive oil.
Steamed asparagus spears topped with a knob of butter.
Baked calabrese, cauliflower, leeks, garlic and Romano peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, Welsh onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.
Water to wash down tablets.

Today's main meal looks like yesterday's frittata but this is a half of a pizza made from a low carb pizza base topped with passata ( had base and passata portion in freezer) plus left over cooked meats - chicken and sausage and topped with some fried chilli and garlic plus lots of grated vintage cheese. Served with salads.Just had LC chocolate brownie with decaffeinated coffee.

Don't worry about it, those types of mistakes happen to the best of us, as proven by you! ;)

I made a very lazy veggie soup yesterday: 25 cent bag of pre-cut 'soup veggies' to be used on friday. Looked and smelled fine on sunday, so soup!
I've never made a 'traditional' Dutch veggie soup in my life so I simply followed the directions on the bag of veggies: Boiled water with a stock cube (herbs, not meat). Added small balls of minced meat, I accidentally bought pre-spiced mince, which saved me the trouble of adding spices to the meat. Cooked for a bit, added bag of veggies, cooked a bit longer, ready! :joyful:
Life got in the way of eating at a sensible time so it was just soup yesterday, followed by chicory with hummus and pork scratchings with aioli in bed.

Today I had more of the soup for a late lunch or an early starter, not sure which.

Main meal was a summery thing of bits and bobs, nicely compensating for the absence of veggies with our pure carnivore bbq on saturday:
A large plate of tomatoes and mozzarella with olive oil, balsamic vinegar, salt and pepper, lettuce leaves with chorizo and gorgonzola, and half of the chilli shrimp in the picture. :hungry:

I kind of make it up as I go along, but here goes!
- slice and fry 1/2 onion
- cut liver into bite sized pieces and coat in a small amount of seasoned flour.
- when onion is soft add the liver and fry slowly til cooked.
- stir in 300mls of stock.
- continue to cook until gravy is reduced to required thickness.
