Don't worry about it, those types of mistakes happen to the best of us, as proven by you! ;)

I made a very lazy veggie soup yesterday: 25 cent bag of pre-cut 'soup veggies' to be used on friday. Looked and smelled fine on sunday, so soup!
I've never made a 'traditional' Dutch veggie soup in my life so I simply followed the directions on the bag of veggies: Boiled water with a stock cube (herbs, not meat). Added small balls of minced meat, I accidentally bought pre-spiced mince, which saved me the trouble of adding spices to the meat. Cooked for a bit, added bag of veggies, cooked a bit longer, ready! :joyful:
Life got in the way of eating at a sensible time so it was just soup yesterday, followed by chicory with hummus and pork scratchings with aioli in bed.

Today I had more of the soup for a late lunch or an early starter, not sure which.

Main meal was a summery thing of bits and bobs, nicely compensating for the absence of veggies with our pure carnivore bbq on saturday:
A large plate of tomatoes and mozzarella with olive oil, balsamic vinegar, salt and pepper, lettuce leaves with chorizo and gorgonzola, and half of the chilli shrimp in the picture. :hungry:

Sounds perfect for warm weather @Antje77 especially the tomato and mozzarella creation.

Btw in North America, they would probably describe the seafood as shrimps. Here in the UK we call those prawns; shrimps are somewhat smaller and have their own distinctive flavour. I often serve prawns and brown shrimps in the same seafood salad. They taste quite different from each other, even when unadorned with dressing.
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, avocado and three crevettes, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Sweet red peppers stuffed with feta cheese, eggs, Kalamata olives, chopped mint and baked until golden on top.
Salad using chicory, Romano peppers, radishes, Welsh onions and mustard cress, dressed with an olive oil, oregano and balsamic vinaigrette and topped with roasted macadamia nuts.
Water to drink.
Skipped pud.

D: Seafood salad made with brown shrimps, mussels, shredded red cabbage, apple peel, celery, thyme and baby plum tomatoes with a dollop of aioli for dipping, topped with roasted macadamia nuts.
Water to wash down tablets.
 
Evening all

Another scorcher in prospect here, so made ceviche first thing to avoid unwanted heat in my kitchen at lunchtime.

B: Two poached eggs topped with butter and avocado seasoned with black pepper plus a wedge of goat's milk Gouda.
Water to swallow tablet.
Espresso.

L: Ceviche using haddock fillets cured with lime juice, zest and salad onions, then combined with tomatoes, Padrón chillies, cucumber, Kalamata olives, chopped coriander and olive oil.
Salad made with watercress, lettuce, baby plum tomatoes, radishes, Romano peppers, Welsh onions and nocellara olives, topped with toasted almonds and dressed with an olive oil, oregano, garlic and balsamic vinaigrette.
Skipped pud.
Water to drink.

D: Seafood salad made with brown shrimps, king prawns, rocket, fennel fronds, celery, cherry tomatoes and mustard cress, with a dollop of home-made aioli, topped with toasted pumpkin seeds.
Water to swallow tablets
 
Hi All
Have been mostly eating like a caterpillar since Monday! Lots of leafy salads with sliced ham, quiche with crust cut off, cheesy coleslaw, cheese. Last night for supper I just had three scrambled eggs accompanied by 6 roasted asparagus spears. Enjoyed so much might repeat this evening. Then thats the very last asparagus from the farm down the road for this year. Brekkies are still the usual slice LC toast, cooled with good butter and copious tea
 
I’ve been meaning to say, take a look at the Low Carb Food company bread. That’s the company I always use. I buy their rolls, loaves and pizza bases. their email today reminded me to order more and tell you!

Thanks for this. Received bread and rolls this morning. Lovely and fresh. Rolls were delicious. All else is in freezer. Was concerned about delivery here to Northern Ireland. I ordered Sunday, they were sent out Monday afternoon and I have them here today - Wednesday.
 
Another three of the oniony and cheesy meatballs with mustard, flattened today for quick and lazy frying, with tomatoes and mozzarella with olive oil, balsamic vinegar and salt and pepper.

Three more meatballs left for tomorrow, not sure what to have them with yet now the soup and the mozzarella have been eaten.

Leftover ceviche made with haddock fillets cured with lime juice, zest and salad onions, then combined with tomatoes, Padrón chillies, cucumber, Kalamata and Halkidiki olives, chopped coriander and olive oil.
Salad using rocket, lettuce, baby plum tomatoes, radishes, Romano peppers, Welsh onions and olives, topped with toasted almonds and dressed with an olive oil, oregano, garlic and balsamic vinaigrette.

D: Seafood salad made with brown shrimps and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, Halkidiki olives and salad onions, with a dollop of home-made aioli for dipping, topped with pecan halves.
