@shelley262 your smoked trout and kimchi lunches look fantastic!
@IanBish your omelette looks great to me, not at all scruffy, and they are my favourite fillings.
Today I had fried eggs, avocado and a cheese ‘cracker’ for breakfast ( slice of Gouda microwaved for 90 secs until bubbly and crispy)
Lunch was cream cheese in celery sticks and lettuce boats filled with M&S prawn and crab cocktail. DGF brownie and cream to follow.
Dinner DietDoctor Chinese style pork stew with cabbage noodles which was really tasty. Few almonds and tea with lactofree milk.
I’m trying to get back on track. Food has been erratic the last few days and BG sky high as Paul collapsed at work on Wed and has been in hosp on the cardiac ward since then. He’s ok and in good spirits but it was a horrible shock.
I hope Paul is doing well. That does sound like you have a BG nightmare to manage.

Breakfast was a very rushed slice of Gruyere on lc toast with a spoon of garden mixed berries and Greek yogurt before playing pickleball.
Lunch was a salad of cabbages, peppers and onions from the garden with about 1/4 of egg noodles all doused with ginger, soy, lime and garlic dressing. Delicious, and bit heavier carb than I took insulin for as I was about to take my grand- dog on a long walk. We are helping to dog sit while our son is deployed. Our cat is not impressed to say the least... and they are about the same size.
Dinner will be a faggot in sage and onion gravy with mashed cauliflower and green beans and cabbage. Followed by a glass of wine or two while I referee these animals and question our judgement in having offered help.

No cooking today. I didn't feel all that hungry, so just did some prawns with a home made Marie Rose sauce, with a couple of tomatoes and boiled eggs.

That does look fabulous - I had similar "no chance of cooking" situation, with relative and could only buy off the shelf, so had a meal of ready-to-eat prawns, paté and Olives - and found my Ketone level basically doubled.. really need to try that again.

Also need to start making sauce like this - I miss mayo ....

Breakfast was the ham&cheese roll I’d made for yesterday’s lunch but didn’t get a chance to eat.
Lunch Waitrose Chicken shawarma kebab with some salady type veg and a dollop of sour cream. Not hungry for dinner so I might not bother.

It was a case of didn't feel like, and it was a bit hot. I did have a CKM a while ago, but never got very high readings. I guess I won't be a hybrid any time soon. The sauce was easy; just mayo, ketchup, lemon juice and a bit of smoked paprika.
Looks delicious to me
It was lovely. And I'm still not hungry six hours later. Though it's getting close...

That looks lovely. I've had bought chicken shawarma, and also made it myself. I think I prefer my own, even though it may not be authentic.

I've been MIA and just skimmed over all the posts I've missed.

I spent the weekend (friday afternoon until just now, sunday evening) with my neighbours at a small festival, two nights in a tent, little sleep, lots of booze, and mystery food, and had a wonderful time!

I wish I could tell you what I've eaten, but the festival was one where everyone brings foods to share so I chose my meals by appearance and taste, guessing on lower carb options and dosing insulin quite boldly, knowing there were plenty of high carb options to nudge my BG up a little if needed.
So I had lots of tasty food but no clue what most of it actually was! :hilarious:
The ongoing buffet was quite dimly lit, and there were many foods I've never seen or tasted before, a true diabetic adventure!

My sensor showed I chose quite well, only one unexpectedly carby thing must have snuck past without me noticing, which made me go up to 9.1 for a short while, still no idea which of the dishes was the culprit though.

People behind the bar (drinks only, food was DIY and wash your own dishes) were very accomodating. Caipirinhas turn out to be very tasty with only a smidge of sugar as well, which made for a perfect balance between the alcohol lowering BG and the sugar upping it.

Breakfast low carb granola mixed with extra chopped walnuts and a few garden berries plus a spoon of the new Zoe 30+ supplement all mixed with kefir
Lunch same as yesterday - hummus with celery, kimchi, radishes, a few garden tomatoes, a few nuts, olives, artichoke heart with olive oil and two seeded low carb crackers
This afternoon made some mini crustless quiches, as had eggs to use up today, photo is of them just out of oven. ( would not have cooked anything in oven by choice today but eggs were on their last use by day!)
PXL_20240812_150039135.jpg

Dinner was the same as yesterday - salads with leftover chicken but also added in a ripe avocado and a couple of the cooled crustless quiches - rest popped into fridge for next few days. More chicken to finish so no doubt tomorrow's dinner will be similar! Definitely a day today though to stick to cold left overs and salads!

2 black coffees saw me through to 13:30 by which time I was very hungry. A big pile of air fried chicken wings filled the hole.
Dinner was pasture reared bavette steak with avocado, charred padron peppers and a selection of fermented veg. ( I’m particularly pleased with the cauliflower with garlic and ginger)
