For tea tonight I had a lamb shank in a red wine gravy, steamed runner beans, and a few (starch-resistant) Maris Pipers roasted in coconut oil.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: bolognese with sliced sautéed courgettes and a few spots of low sugar ketchup and a sprinkling of extra mature cheddar.

Evening meal was yet another barbecue with neighbours after working on neighbour Astrisd's house and roof.
I stuck to spareribs (marinated but not too carby), a skewer with onion, bell pepper, and salami slices, very low carb, a single bite of bread with zaziki, and a generous portion of salad with extra olives. :hungry:

BG rose over 8, which doesn't really make sense, I've had those spareribs about once a week for the past couple of months and this is not what they usually do. I'll have to ask Astrid what she used for a salad dressing, I'm suspecting honey was involved...
A little extra insulin and the bike ride home quickly solved the problem, back in the high 5's by now. :joyful:

B: Two poached eggs topped with a knob of butter, avocado, seasoned with black pepper and a wedge of Teifi.
Water to swallow tablets
Espresso.

L: Salad using Alaskan sockeye salmon fillets poached with black peppercorns, salad onions and lemon juice.
Combined with vine tomatoes, avocado, celery and sweet cicely, dressed with olive oil plus a touch of lemon juice, lemon verbena and garlic, topped with toasted pistachios.
Water to drink.
Skipped pud.

D Seafood salad using king prawns, mussels, lettuce, home-grown tomatoes, flat leaf parsley, Romano peppers, Kalamata olives and Welsh onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted
pine nuts.
Water to wash down tablets.

Spicy food which is too hot. Nasty people who have no idea on your life journey but feel the need to comment and be cruel.

Coffee and unsweetened almond milk
Bacon, egg, sausage, tomato, mushrooms
Gouda and coleslaw
Blood sugar a tad low. So had some Smoked salmon.

Out all day just coffee
Dinner sea bream cooked in a parcel with lemon, dill and olive oil - photo before parcelling it up to put in oven

D Seafood salad made with crab and brown shrimps, lettuce, home-grown tomatoes, celery, Welsh onions and mustard cress, with a dollop of aioli for dipping, topped with flat-leaf parsley and toasted pistachios.

What's zaziki please? @Antje77. Is it the same as tzatziki?

That kimchi sounds like a super duper partner for smoked trout @shelley262; especially in warm, sticky weather.

L: Ceviche made first thing using lemon sole fillets cured with lemon juice, zest and Welsh onions, then combined with vine tomatoes, Padron chillies, cucumber, Kalamata and Halkidiki olives, chopped coriander and olive oil.
Salad made with watercress, lettuce, home-grown tomatoes, radishes, Romano peppers and Welsh onions, dressed with an olive oil, garlic and balsamic vinaigrette and topped with toasted almonds.
Skipped pud.
Water to drink.

D: Seafood salad using king prawns, mussels, rocket, sweet cicely, vine tomatoes, celery and salad onions dressed with home-made mayonnaise, made with egg, avocado oil, white wine vinegar, flat-leaf parsley, garlic and seasonings, scattered with toasted sunflower hearts and pumpkin seeds.
Water to wash down tablets.
