Evening all

Today:

B: Two poached eggs topped with a knob of butter and avocado seasoned with a good grinding of black pepper
A wedge of Gorwydd Caerphilly.
Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover mushroom and spinach frittata.
Lettuce cups, Romano peppers, celery sticks and garden tomatoes with a dollop of home-made mayonnaise for dipping.
Almonds and hazelnuts.
Water to drink.
Wild blackberries picked on the hoof to round off lunch.

Mid-afternoon: black filter coffee

D: Smoked salmon and cream cheese salad made with sweet cicely, vine tomatoes, lemon verbena, Kalamata olives and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pistachios.
Water to wash down tablets.

Breakfast kefir then fried some garden tomatoes in olive oil and served with one fried egg and one slice of low carb toast
Lunch some cheese, nuts and celery plus apple peel from a local Cox apple then a few garden berries ( harvest nearly finished now) with yoghurt
Dinner home made chicken curry with low carb roti

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: similar to yesterday just used a LC roll with my sausages, a smidge of low sugar ketchup and coleslaw today.

I do miss Cox's Orange Pippins @shelley262, an old English apple variety that has a complexity of flavours with a kick!

Our crisp, apple-eating weather has arrived earlier than usual this year. I suppose I shall have to make do with its peel. When fully ripe, it has an attractive orange blush.

B: Two poached eggs and two scallops, asparagus spears smothered with butter, all seasoned with a good grinding
of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry red wine.
Tuna steaks rolled in finely chopped celery and sage, baked with aubergines and red bell peppers, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed runner beans with a knob of butter.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, vine tomatoes, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to wash down tablets.

Lunch home made hummus with celery, radishes and garden tomatoes with a handful of nuts followed by the peel of a local Worcester Apple.

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a vine tomato, sprinkled with flat-leaf parsley and seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Whole sea bass baked en papillote, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked calabrese, onions, red and yellow sweet peppers with garlic chestnut mushrooms.
Raspberries and Greek full-fat yoghurt.
Water to drink.

S: Tea with a dash of milk (gave me something to do with my hands while OH tucked into refreshments, none of which were diabetic-friendly).

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.

My garden produce is sadly coming to an end but a fair few tomatoes harvested today so roasted them with some celery, garlic cloves, onion and a few herbs drizzled with cold pressed oil

I then used a blender when veggies cooked and cooled to make a sauce to which I added venison mince and mushrooms. Towards end of cooking took half out of casserole to make a chilli tomorrow and added a small portion of well soaked low carb pasta to the remaining portion so that pasta took on flavour of sauce during rest of cooking time.
Dinner had a portion of the low carb pasta casserole sprinkled with some parmesan shavings.

Dinner: meatballs in tomato and mascarpone sauce with runner beans and cauliflower.

I had a kidney stone a couple of years ago and it was found to be a calcium oxalate stone. I was advised to eat low oxalate to prevent a recurrence, so along with low carb it gets complicated. Today when I was checking something else I noticed that dark chocolate is high oxalate :wideyed:
I guess I’ll have to stick to DGF white and milk chocolate!

Lunch club today so no telling what I will have. Finger's crossed it won't be high carb.
Two suggestions for next week's lunch club @RosemaryJackson.

Are there fellow diners who like potatoes but are not keen on green leafy vegetables? If so, perhaps you could swap your spuds in return for their greens.

If I were you, I'd take my own delicious LC pud rather than risk whatever they serve for afters.

L: Courgetti alla puttanesca made with anchovies, Kalamata olives, capers, garden tomatoes, garlic, olive oil, butter, rosemary and spiralised courgettes.
Steamed runner beans smothered with butter.
Raspberries and Greek full fat yoghurt.
Water to drink.

D: Seafood salad made with brown shrimps and mussels, sweet cicely, Romano peppers, celery, vine tomatoes, mung bean sprouts, flat leaf parsley and salad onions, with a dollop aioli for dipping, topped with pecan halves.
Water to wash down tablets.

No lunch as out and busy - Just coffee.
Dinner heated hm chilli - a spiced up version of yesterday's hm Bolognese with chilli and a few kidney beans ( I now buy a can of cooked kidney beans, drain and rinse lots and then use a quarter of the tin - with the other three, quarter portions, frozen for future use) an eighth of the can seems to be ok with my bgs - served with small glass of red wine. Just had a low carb brownie with decaffeinated coffee.
