I went to see the Jack and Gills Windmills today on the South Downs. It was so beautiful. I sneak ally had a lovely chocolate brownie. My sugars levels went up obviuosly but I walked it off and found this to be the way to get it down. My levels went to 10 but soon went down to 6.5 so it's worth it once in a while. So I suggest to all you peeps. If you fancy a treat once in a while. Plenty of fluid and walk it off does you good. Go 4 it ok and test the waters for you. Good luck.

Had a creative afternoon making a new larger batch of roti using the Panda pantry mix. I trialled a small batch a few weeks ago to see if they could be frozen uncooked just mixed and rolled out then wrapped in greaseproof paper to be defrosted one or two at a time and then cooked and it works really well - so made 16 this afternoon for freezing for later cooking and serving with curry. They should be fine for a month or so in freezer.
Dinner Had a LC roti with chicken curry served with fresh coriander.
Tomorrow I'm planning to make some more low carb cakes to portion and freeze. I find that being able to have a small daily low carb sweet treat works well for me.
Spent yesterday at a friend’s house, type 2 who also eats low carb.
She cooked a lovely dinner of mixed fish with LC gnocchi and a creamy sauce with a sprinkle of grated cheddar on top. I’d never eaten gnocchi before so I don’t know how this low carb version compares with the full potato version, but I enjoyed it.

Morning all. I've bought myself a beautiful sirloin steak for my lunch today. Just hope I don't ruin it by messing up the cooking! I used to be a good cook but cooking for one?? You would think I'd have learned by now! Have a lovely Sunday.

Made another batch of low carb cakes - lemon ones using panda flour. Photo below is of them cut up in portions ready to be frozen. Used three lemons as recipe.

Brunch yesterday - 1 small avocado. Usual amount of plain full-fat Greek yoghurt. Evening meal - small portion of mixed nuts followed by steak and asparagus! How the wealthy do live. Then - oh joy - a couple of pieces of 100% cocoa plain chocolate. Bizarrely I have lost 2lb since starting this, which is probably nothing to do with the chocolate but very good for the morale.
