What have you eaten today? (Low carb forum)

Breakfast boiled eggs mashed with butter
Took a packed lunch to work - l/c roll filled with strong cheddar and h/m mayo, then a little pot of blueberries.
Dinner was beef stroganoff with courgette ribbons sauteed in olive oil. 2 glasses of Malbec
 
Had something planned rearranged so decided to use the free time to finish my current batch baking for the freezer and made the low carb lemon drizzle - good to have a wide range of low carb treats in the freezer for next month or so.


Breakfast kefir then two poached eggs
Lunch ham, cheeses, celery, tomato and low carb seeded crackers and two strawberries

Dinner wild salmon with asparagus then had a portion of the new low carb lemon drizzle.

Well, I fell off the wagon again! I need to get back to cooking my own meals again instead of being lazy and buying ready made meals. But my moods have been so up and down recently and sometimes I wonder what the point is. Does anyone else get like this? If so, how do you get on top of it?
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: Brie and cranberry on a low carb roll with coleslaw.

 
Breakfast kefir then mushrooms fried in olive oil served on low carb toast with a poached egg
Lunch cheese, celery, and low carb crackers followed by a couple of strawberries and spoon of yoghurt
Dinner chicken curry with mint raita and chopped coriander - I've run out of home made low carb roti and missed it. I must make another batch before next weeks curry night to finish my restock of the freezer. The last two batches I rolled out myself and it was very time consuming plus turned out odd shapes so I've ordered a cast iron tortilla press to try and make the job quicker plus they may look more uniform! Will share results when manage to make them.

Followed by a piece of hm LC rhubarb and ginger cake.
 
I love my tortilla press but from my experience I’d recommend putting your dough between two pieces of parchment paper not just straight into the press.
 
Today I had a lamb shank in a mint gravy, with Brussels sprouts, cauliflower, and a medium red rooster potato sautéed in lard. My usual supplier had run out of lamb shanks so I had to turn to an alternative source, and it wasn't great. Also I forgot to look for Jersey Royals, which are in season, which I will get next week.

Lunch organic hummus ( bought - must get back to making my own as this one had olive oil in but also rapeseed oil mixed in - tasted good though!) With celery and a couple of tomatoes followed by a couple of strawberries and served with yoghurt (added later)

Mid afternoon to treat us after some hard weeding and pruning a portion of LC hm coffee and walnut cake served with a cup of ginger tea.
Dinner roast chicken served with braised celery cooked in chicken stock followed by LC hm lemon drizzle cake with decaffeinated coffee.

Lunch picnic while out for the day -took out left over hummus with a few celery sticks, some vintage cheddar and a couple of LC crackers followed by hm LC coffee cake.
Dinner left over roast chicken and one pork sausage with salads - I had extra cheese on my coleslaw. Followed by hm chocolate brownie warmed and served with spoon of yoghurt.

SRSLY we’re offering their new bagels for 1p lat week if you bought their croissants,so I did. I had a toasted bagel with ham and cheese for breakfast as I was heading off for a swim with a friend on the N Cornish coast. The bagels are expensive (£3.95 for 2) at normal price but I still think I’ll buy some - very impressed.
Lunch: tomato mozzarella and basil salad.
Out to see a show tonight and had pre theatre meal at our favourite tapas bar. I had Chilli king prawns and a new dish of roast pollack on creamed celeriac which was absolutely delicious. Glass of white wine and soda with it and a gin and soda interval drink at the show.
