I used to cook it on a high heat in a steel pan, but despite opening the windows, the smoke used to get a bit overpowering. I now use an air fryer: 230⁰C for 6 minutes and let it rest for 10 minutes.
So hot in my flat today. Didn't cook. Food in the fridge.

A whole tub of Greek yogurt Kiwi fruit
Brie.............
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: gammon steak with mixed salad.
HbA1c 30! So happy, full update to follow when I’ve had my review.

Today I had Greek yoghurt with walnuts and pumpkin seeds for breakfast.
Lunch was 2 h/m scotch eggs and 2 cornichons.
Dinner: chilli using Edemame beans instead of kidney beans. Holland &Barrett zero carb rice ( made of organic konjac flour and organic oat fibre). 1 DGF peanut butter mini egg to follow.

Lunch left over frittata
Dinner left over roast chicken with a large salad. Then had a low carb home made chocolate brownie.
My rhubarb crop is good this year so I have plans to make the upside down rhubarb and ginger cake using Panda flour. All my low carb baking to date using Panda flour and their recipes have worked well for me so I'm crossing fingers - if it works will post photo.
We had a meeting in the office today, and they passed around some small millionaire shortbread type things. And I had one, automatically and without thinking.
Anyway, for tea tonight I defrosted a home made chicken & mushroom jalfrezi and had it with cauliflower rice with finely-chopped mushrooms and onions fried in butter. The cauliflower rice was lovely.
