Weather horrid again this morning so decided on some baking. 1st Panda porridge slices - these had the taste and texture of a hobnob. Very nice. I didn’t add the sweetener ( 30g erythritol in recipe) as I thought they’d be sweet enough with the coconut, inulin and vanilla. They didn’t need it.
Then 2 packet mixes from the low carb food co: Very Merry Muffins ( I made into a loaf) which is lovely spicy moist cake. I’ll freeze slices and spread with butter like a malt loaf.
Lastly Low Carb and Keto Seedy Cracker. These taste great and are v low carb. They are quite fragile and crumbly though and I can’t imagine they’d take the weight of a lump of cheddar. I’ll have to reverse the order and put the cracker on top of the cheese!
All in all a successful morning ( I only sampled all the bakes so I could, with hand on heart post in this thread saying I’d eaten them)

Your bakes look like a real success -a great creative thing to do on a rainy morning. Looks like a rainy few days later this week I may be low carb baking too as my freezer supplies are getting low again!

Breakfast kefir then two poached eggs on low carb toast
Lunch - out and about had black coffee and a portion of hm LC coffee and walnut cake I'd taken with me from freezer.
Dinner quarter chicken that had been marinated in spices and olive oil and then cooked in air fryer and served with a salad followed by hm LC lemon cake.

It makes me feel more "normal" to see other people eating low carb while still enjoying the occasional bread, batter, chocolate etc. All my real-life friends and family live on bread, cereal, pasta, potatoes, cakes, biscuits all day, and I feel like the odd bod (apart from my mum who is low-carb but still serves vast amounts of carbs to everyone else...)

I'd rather drool over a picture of steak than the constant stream of bubble tea, ice cream, noodles and chips that my student daughter sends!

I go to aquafit Wed mornings so don’t tend to have breakfast but I was hungry this morning. I decided to try bulletproof coffee and surprised myself by really enjoying it.
Lunch was selection of cheese with h/m seedy crackers, olives and walnuts. Raspberries and ff Greek yoghurt to follow.
Dinner was a salad with wild smoked salmon, h/b eggs and a chunk of the panda flour soda bread. Then a small piece of Montezuma’s AB
