What have you eaten today? (Low carb forum)

It’s a very satisfying dish. Funnily enough the recipe came from a friend who does Slimming World ( they use low fat cottage cheese though)
The egg mixture does seep under the corned beef a bit while cooking but as it sets it doesn’t really matter.
I used 4 eggs to a tub of cottage cheese. I also sprinkled extra grated cheese on top.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: Chinese crispy duck with small portions of the carby stuff.

Yesterday I had

Grillparty (Austrian sausage selection) with fried onions, tomato and coleslaw. Photo taken after I'd eaten all the onions and 1/3 of the sausages.

After that (eaten in 2 sittings) I didn't want another meal so just nibbled some leftover chicken salad and cheese.
 
Breakfast kefir then bacon and egg
Lunch made a mackerel pate ( pureed tin of mackerel with olive oil with lemon juice and horseradish sauce) had half of the pate served with seeded crackers and olives, celery and a couple of tomatoes ( including a green one). Followed by a couple of berries and spoon of yoghurt.

Dinner roasted chicken and sausage ( cooked yesterday) with salads

Followed by hm LC chocolate brownie.

Way too hot for me today - I was wishing that I hadn't had to do any cooking - although frittata doesn't require a lot and I now have some leftover to eat cold when out. My online shop arrived earlier with 6 of my dozen eggs being cracked so thought should use them especially as delivery guy deducted from my bill but suggested I keep and use them. I can't resist a money saving opportunity!

I need more details about quantities, cooking temperature and time pls. Corned beef sounds a great idea for the case.

It’s quite forgiving - I used a packet of corned beef slices (0g carb) but tinned would do too - just slice and press into the base and sides of a pie dish.
Filling is a 250g cottage cheese mixed with 4 beaten eggs and any extras you fancy ( I added onion salt and garlic powder, chives or chopped pepper would be nice too)
Top with more grated cheese
Bake at 190 for 1/2 hr or so
( the numbers have rubbed off my oven temp dial so I just guess and it’s worked well each time I’ve made it)

Today for lunch I had tinned red salmon in a couple of high protein rolls. And later, I wasn't that hungry, so I used up the last of the Jersey Royals, nestled on a bed of mushy peas.



 
Just black coffee this morning then met a friend who lives on the coast for a swim. Back to hers for coffee, she subscribes to Zoe Nutrition and had made some nutty cocoa balls to go with it. Ingredients:cocoa powder, ground almonds, chopped nuts ( so far so good) and dates! I felt bad saying no when she’d gone to this trouble, so ate one and it was delicious but BG was still 8.5 when I got home at 2pm.
Probably should have fasted a bit but I was hungry so had a couple of h/b eggs.
Dinner was the last slice of corned beef quiche with salady stuff. DGF cake to follow.
 
I've done that a few times. Easy to adjust quantities for size of dish/number of people/appetite. And extra fillings such as peppers, courgettes bacon.
Just make sure the corned beef base is thick enough so filling doesn't seep through... but if it does call it corned beef frittata

Coffee and unsweetened almond milk
Ham and coleslaw and tomatoes
Smoked salmon

Dinner: bacon melts with cauliflower, broccoli and carrots, just a small portion as I wasn’t feeling very hungry in this heat, currently 30°c in my house!

 
Could someone advise me please. If you eat only fresh, not packeted food how do you calculate how many carbs are in your meals? Thank you.

You can just Google for instance “carbs in cauliflower” or use an app. I use Nutracheck.
