Made a new stash of low carb mini naan breads today - two for dinner today and the rest packed and frozen. Here's the recipe I used to make 8 mini naan breads ( it's an adaptation of a Panda Pantry recipe)
In the mixing bowl add:
130g of yoghurt
275g of water
Put to one side the following weighed out dry ingredients:
100g of Panda Flour( it's their own mix of coconut flour, bamboo fibre and psyllium husks)
2g of easy mix yeast
7g of Bicarbonate of Soda
Weigh and melt 20g of salted butter or add a pinch of salt to melted unsalted butter and put to one side.
Using a mixer either stand mixer or electric hand held first lightly mix the yoghurt and water. Then slowly add in the dry ingredients and then the melted butter at the end. Knead with mixer or hands until a ball of dough
Rest covered in a warm place for 20 mins.
Then prepare a floured (panda flour) surface and rolling pin and weigh out into 8 equal pieces( mine weighed 74g each.)
Then lightly roll out each into a small shape
Then place all 8 rolled out naan breads on parchment paper to keep separated ready for freezing
I left two out to cook today and the rest were frozen in packs of two to keep in freezer for the next three curry nights!
They are cooked for about a couple of mins each side on a hot buttered griddle (if frozen I normally move a pack to defrost in fridge for a couple of hours before cooking)
