What have you eaten today? (Low carb forum)

Ran out of eggs, horror! So had a tin of sardines on L/c toast for breakfast.
Lunch was a green salad topped with grilled bacon and some leftover chicken from the other day. Montezuma’s AB with almonds.
Dinner was 6 scallops fried in butter then more of the moreish Montezuma’s almond chocolate.
Forgot food photos today so here’s a photo of yesterday’s dinner: ray wing with lemon butter and tenderstem broccoli. ( forgot to post food yesterday)

Made a new stash of low carb mini naan breads today - two for dinner today and the rest packed and frozen. Here's the recipe I used to make 8 mini naan breads ( it's an adaptation of a Panda Pantry recipe)
In the mixing bowl add:
130g of yoghurt
275g of water
Put to one side the following weighed out dry ingredients:
100g of Panda Flour( it's their own mix of coconut flour, bamboo fibre and psyllium husks)
2g of easy mix yeast
7g of Bicarbonate of Soda
Weigh and melt 20g of salted butter or add a pinch of salt to melted unsalted butter and put to one side.
Using a mixer either stand mixer or electric hand held first lightly mix the yoghurt and water. Then slowly add in the dry ingredients and then the melted butter at the end. Knead with mixer or hands until a ball of dough

Rest covered in a warm place for 20 mins.
Then prepare a floured (panda flour) surface and rolling pin and weigh out into 8 equal pieces( mine weighed 74g each.)

Then lightly roll out each into a small shape

Then place all 8 rolled out naan breads on parchment paper to keep separated ready for freezing

I left two out to cook today and the rest were frozen in packs of two to keep in freezer for the next three curry nights!
They are cooked for about a couple of mins each side on a hot buttered griddle (if frozen I normally move a pack to defrost in fridge for a couple of hours before cooking)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: takeaway local Chinese house special curry with three prawn crackers, tried and tested for blood sugars several times, fingers crossed they don’t change their recipe! (I leave a lot of the sauce).

Cheese&mushroom omelette for breakfast.
Lunch was a beef, cheese and dill pickle sandwich in low carb seedy bread then a DGF cake with thick cream.
Had quite a long and active afternoon so was pleased I’d made a lamb stew yesterday and left it in the fridge. Quick to reheat and filling.
Forgot photos again.

Dinner: MIL not well so home for tea tonight, same as Friday Brie and cranberry on LC roll with coleslaw.

Breakfast kefir then bacon and egg
Made a low carb spiced fruit tea loaf this morning again using 20g of dried barberries, in place of usual dried fruit, which I'd soaked overnight in tea and a dash of brandy.

Lunch cheese and celery plus a buttered slice of my new LC tea loaf -I've became a fan of barberries - which are the fruit of the plant used for the supplement Berberine.
Dinner steak with onions and mushrooms and glass of red wine. Followed by hm LC chocolate brownie.
