What have you eaten today? (Low carb forum)

Hi no I haven't assembled it to freeze - mainly because of space. I always open freeze the raw florets and then when frozen I pack into a bag and store in a bag to grab to cook.I just grab a few florets when ready to make, often just for me - I'm also married to a cauliflower hater! I would suggest if you have time before assembling you put the frozen florets you're using for a quick few mins in microwave and then get rid of water as it can make it a bit watery. I then just add cream, seasoning and cheese and pop in the oven.
Maybe give it a go with a small amount assembled and see how it works? Let us know if you do I'd be interested.
 
Oh dear not the best day.
Decided I would like a roll, not low carb.
Chicken and tomato Butter and rolls.....all day. Blood sugars not come down yet!!!!
I do love bread.......See why I shouldn't eat it.
I love bread too ...rather have some lovely crusty bread ( and butter ) than steak !
 
I'll post my meals the next day : Yesterday didn't eat till late ( 11.30 am ) but as usual BG just keeps rising .
Brunch was 2 egg omelette with mushrooms some onion and red pepper ...baked beans .
Only had 2 meals next one was large salad ( with salad cream must try and make own dressing ) and slice of turkey and ham some seeded crusty supposedly sourdough bread ( from lidi ) . BG shot up but came before 2 hr mark . There appears to be some controversy about the lidi bread as to whether it is sourdough but it was lush . Bedtime BG 6.3 .
 
Breakfast kefir then poached egg on mushrooms
Lunch celery and cheese followed by a few garden berries and yoghurt
Dinner chicken breast with mushroom sauce served with carrots and green beans

For pudding I tried a piece of my cooked today Low carb Blackberry, lemon and cinnamon upside down cake -an adaptation of my rhubarb, ginger and spice upside down cake. I slow cooked blackberries with a lemon before removing the lemon from the cooked blackberries which I used for my cake.

I cooked two low carb cakes today a lemon one as well as the upside down blackberry cake. Both now cut up into portions and stored in the freezer
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: we were supposed to go and see a comedian at the theatre but it’s been postponed due to illness so decided to go out for dinner instead. Indian restaurant, I had lamb buhna, cheesy tandoori mushrooms and a quarter of a peshwari naan. (Blood sugar behaving so far!)

 

Cheesy tandoori mushrooms? I’ve never seen those in an Indian restaurant. They sound , and look wonderful.
 
I had scrambled eggs and chilli sauerkraut for breakfast.
Lunch was a blast from the past - a cheese and tomato sandwich (L/c bread). I haven’t had one for years and always considered them the most boring of all sandwiches. I really enjoyed it though, it felt quite nostalgic.
Dinner was a lamb chop, airfried veg and cauli cheese.
@shelley262 thanks for the cauli tips, open freezing florets is a good idea and I’ve made up a single portion with cream and cheese to see if it works once frozen together.
