What have you eaten today? (Low carb forum)

Sounds like everyone is enjoying life!
B. Sardines on HiLo toast, black tea, black coffee.
L. Double egg and chips in local cafe, diet coke
Snack. Roasted soy beans
D. Homemade mee goreng. Onion, green beans, pak choy, beansprouts, tofu, a few chilli noodles, sambal olek and various spices. Lemon and lime sugar-free jelly.
Lots of gardening but the weeds are getting a toe-hold.

The balloon flight sounds amazing! What a lovely experience!

We’ve had a lovely day pottering in the garden in the sunshine. We painted some exterior masonry and had a wonder into the local town to pick up some carb friendly bits and pieces.

B. Bacon, sausage and egg
L. Prawns fried in butter with olive oil, coriander, garlic and chilli and a small amount of courgetti
D. Fat head pizza. With rocket and parmasan salad

This was the first bit of low carb baking I’ve done and oh my goodness it was delicious. Only managed 3 slices of pizza, so plenty left to snack on tomorrow.

I might give the lemon drizzle cake a go...anyone know where I can find a recipe?

Only change I made was that I cooked it for 50mins and then added the lemon juice in thirds following each addition with 5 mins back in oven so ended up in oven for 65 mins.
I also beat the eggs before adding to all the other ingredients. Stick with it it looks a bit different to traditional cake mixes but lookbs and more importantly tastes great when it’s cooked enjoy
 
The fat head pizza is really good isn’t it? I haven’t tried many recipes but am getting braver, this and the coconut porridge that @Rachox makes are becoming firm favourites as they are easy and I haven’t been let down yet. Some of my earlier attempts only made it as far as the bin I also make the cauliflower soup from the recipe on diet doctor, I do replace the cream cheese with regular cheese but it is amazing.
 

Mine took 65 mins to cook too!
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: Skinny Café pancake with bacon and maple syrup followed by Greek yoghurt and raspberries.
Mid-afternoon: Hartleys 10cal jelly and black coffee.
Dinner at local Hungry Horse: chicken skewers with stir fry veg and side salad followed by low carb lemon cake with cream at home.
 
Today has been lovely, good weather until late afternoon when we had a thunder storm. Went into town for some last minute additions for my holiday, enjoyable because I am buying smaller sizes, even my new shoes were a size down, and because we went in our new car.
Breakfast was cheese omelette and grilled bacon, cooked for me so that was nice
Had an iced tea when we were out as it was warm and I fancied something refreshing, huge shock when I checked the carb values when I got home
Fat head pizza for tea with ham, pulled pork and blue cheese topping followed by 3 strawberries and cream this evening
 
Hi all.

@DJC3 your balloon trip sounds great.

Lovely sunny day here today, at least until around 4pm when there were a couple of light showers. Went for a walk around Greenwich Park, which was in full bloom as well as almost ready for the Marathon.

Brunch - Lidl protein roll with bacon. 1 Hotel Chocolat 100% button.

Dinner - Waitrose lamb kleftico followed by 5 Hotel Chocolat 100% buttons.

@DJC3 -- The hot air balloon trip sounds wonderful. With the wonderful weather, it was probably a perfect day for it.
@maglil55 -- Great that you are doing a bit better and that your blood sugars are normalizing.

Yesterday ...

Breakfast: Two double decaffeinated espressos with cream and erythritol. Half a low-carb roll with butter.

Lunch: Nothing.

Snack: Four squares of 88 percent chocolate.

Dinner: (Out at our favorite tapas place) some manchego cheese, two small skewers of lamb and bellpepper and some aioli. Two classes of dry red wine.
 
Bed 6.4 FBG 5.7 and the DP is still AWOL and can stay away. Swimming with No 1 grandson this morning and he is also staying the night. He was supposed to stay with little brother at one of Mums friends house but he dug his heels in and insisted he only stays at home or with Nana. He's no problem to be fair so I've had an evening playing with loads of little Lego people.
B. Tassimo Americano grande with a dash of cream then off to swimming
L. 4 bits of Lidl's German sausage selection - hairdresser was coming
D. Wondered why I was hungry until it dawned on me I'd barely eaten as I'd never stopped today. Slice each of roast beef, smoked turkey, ox tongue, mortadella, 2 bits of the German sausage. A boiled beetroot, lettuce, 3 Santini tomatoes, coleslaw and waldorf salad. Didn't finish it all though - just a bit too much. 2 bits 90% later.

Been a beautiful day again.
 
Kind of felt hungry today, so kept snacking. Hope I'll remember everything.

Lunch: Two wiener sausages, five strawberries, half a glass of dry red wine, a DD keto roll with tartar and mayonnaise
Snack: About 50g of 88 percent chocolate.-

Dinner: Fried strips of steak, mushrooms, bellpepper with cream fraiche and cheddar in a low-carb tortilla and a coffee-caramel flan as dessert.
 
Glad you recovered for your balloon flight. Sounds like a lovely day.
 
Just taken a batch of keto rolls out of the oven. Not hollow!
I wish I could upload the photo. Nice crispy exterior.
As @ziggy_w suggested I doubled up the boiling water for the recipe but it was probably a little too much as I had to cook them for 1 hr 20 mins then give them another 5 mins at 200c. Also I whisked the egg whites before adding them to the mix. Just to soft peaks , not solid. They also rose like mad. Increased in size by between 3x and 4x.
Just had one with mortadella. Taste good.

Worked really well as hope you c@n see. I only made two thirds of the ingredients and made in to a loaf cake which as only two of us like coffee cake seemed sensible!
Also made following adaptations
Erythritol used as sweetner so changed quantities to same as butter as is a like for like sweetner
I added a few drops of stevia as think it makes taste work better erythritol can taste oddly cold! This takes that effect away.
I used @maglil55 s tip to beat up the egg whites and fold in and this worked a treat.
I worked out my two thirds cake is about same carb count as the lemon drizzle slightly less than 2 grams of carb per slice not the figure on recipe maybe it’s the sweetner as erythritol is zero carb.
Husband and I tried it after lunch and it tastes delicious would recommend.
Pleased your rolls worked @maglil55 and weren’t hollow like mine! Once I’ve emptied freezer a bit of low carb bread I must give these another go!
